1 tablespoon olive oil
¼ pound beef skirt steak, cubed
1 medium yellow onion, diced
1 medium green bell pepper, diced
1 tablespoon salted butter
1 teaspoon minced garlic
4 cups diced fresh tomatoes
3 cups sliced okra
1 cup water
1 tablespoon chicken bouillon base
½ teaspoon seasoned salt
¼ teaspoon garlic powder
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Heat oil in a large, deep skillet or pot over medium heat. Add beef, onion, bell pepper, butter, and garlic. Saute until vegetables are soft, onion is translucent, and beef is browned, 5 to 7 minutes. Add tomatoes, okra, water, chicken base, seasoned salt, and garlic powder.
  • Bring to a boil. Reduce heat and let simmer, stirring occasionally, about 30 minutes. Season with salt and pepper.

Number Of Ingredients 12

1/3 cup canola oil
1 pound beef top sirloin, cut into 1-inch cubes
Kosher salt and freshly ground pepper
1 large white onion, chopped
6 cloves garlic, minced
1 beef bouillon cube
1 cup beef stock, plus more as needed
2 8-ounce cans tomato sauce
2 tablespoons tomato paste
1 1/2 tablespoons ground ginger
1 to 2 tablespoons sugar
1 10-ounce package frozen okra

Steps:

  • Heat the canola oil in a large pot over high heat. Sprinkle the beef with 1/2 teaspoon each salt and pepper. Add the beef to the hot oil and cook, turning, about 5 minutes. Reduce the heat to medium and continue to cook, stirring occasionally, until the beef is browned, about 3 minutes more. Transfer the beef to a plate and set aside.
  • Add the onion, garlic and bouillon cube to the pot and cook until the onion is soft and translucent, about 5 minutes. Stir in the beef stock, tomato sauce, tomato paste, ginger, sugar, 1 teaspoon pepper and 1 cup water and bring to a boil; season with salt. Return the beef to the pot, reduce to a simmer and cook until the meat is fork-tender, about 25 minutes.
  • Add the okra and cook until tender, about 20 minutes; the okra will thicken the stew as it cooks. Add additional stock or water if the stew becomes too thick.

Adapted from an old cookbook. I have never knowingly had Egyptian food, so can make not guarantee as to its authenticity. But if you like an easy one-dish meal and okra, this if for you.

1 lb ground beef
1/2 cup onion, minced
1 large garlic clove, minced
2 large tomatoes, chopped
1/8 teaspoon pepper
1 egg, lightly beaten
2 tablespoons dry breadcrumbs
10 ounces okra, cooked and drained
butter
lemon slice (for garnish)

Steps:

  • Preheat oven to 375 degrees F.
  • In a large skillet, brown beef over medium heat. Add onion and garlic and cook until wilted. Pour off fat. Add tomatoes and cook until softened. Add pepper, egg, and bread crumbs, stir; reduce heat and simmer 5 minutes, stirring occasionally.
  • Meanwhile, butter a 1 quart casserole. Arrange okra along the outside with the tips toward the inside and the ends along the outside. Spoon meat mixture into the center.
  • Bake at 375 degrees F for 30 minutes,or until set. Let stand 10 minutes. Invert onto serving platter; garnish with lemon slices.

1 (15-ounce) can corn, with liquid
1 (16-ounce) package frozen cut okra, thawed
1 cup grated Mexican blend cheese

Steps:

  • In a large frying pan, brown ground beef until no longer pink. Drain if necessary. Stir in tomato sauce, seasoning, corn, and okra. Bring to a boil. Cover and reduce heat. Simmer for 10 minutes, stirring occasionally. Sprinkle cheese over top and serve.

1 quart vegetable oil
2 pounds okra
2 large eggs
1/4 cup milk
2 cups yellow cornmeal
1 cup all-purpose flour
1 tablespoon coarse salt, plus more for seasoning
1 teaspoon freshly ground black pepper
1/2 teaspoon ground cayenne pepper
Hot-pepper sauce (optional), for serving

Steps:

  • Heat oil in a cast-iron or heavy skillet until a frying thermometer registers 375 degrees.
  • Wash okra under cold water; pat dry with a paper towel. Trim stem ends; cut each pod crosswise into 3/4-inch pieces.
  • Whisk together the eggs and milk in a medium bowl; set aside. Place cornmeal, flour, salt, black pepper, and cayenne in another bowl; whisk to combine.
  • Add okra to egg mixture; stir until evenly coated. Add cornmeal mixture; toss with hands or a spatula until evenly coated.
  • Fry okra in batches until golden brown, turning as necessary, 1 to 2 minutes per batch. Drain on paper towels, and season with salt. Serve warm with hot-pepper sauce, if desired.

  • Melt butter in a large skillet over medium heat. Add the onion, and cook until tender. Stir in the okra, and season with cumin, ginger, coriander, pepper and salt. Cook and stir for a few minutes, then reduce the heat to medium-low, and cover the pan. Cook for 20 minutes, stirring occasionally until okra is tender.

1 lb fresh okra
1 small onion, sliced
1 tablespoon canola oil
soul food seasoning salt

Steps:

  • Turn your skillet on medium heat and get it nice and hot.
  • While you're waiting for the skillet to heat up, wash and slice your okra into 1 inch long sections.
  • When the skillet is hot, add cooking oil (I use canola since olive oil can become bitter at higher heat) and toss in the okra. It should sizzle! This helps seal the juices in the okra and gives it a crispy outside.
  • Stir the okra around until it starts to brown, then drop in your sliced onion and season with soul food seasoning (I love Sylvia's). Continue cooking and stirring until the onion is transparent.
  • Remove from heat and serve.
