This is just the best tasting chili. My family prefers it over beef chili. I like to put out toppings such as chopped onion, cilantro, chopped bell pepper, cheese, and sour cream and let everyone serve themselves.

2 pounds ground turkey
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
1 (15.5 ounce) can kidney beans, rinsed and drained
1 (15.5 ounce) can pinto beans, rinsed and drained
1 (15.5 ounce) can black beans, rinsed and drained
½ cup chopped onion
1 clove garlic, minced
¼ cup red wine
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried parsley
1 teaspoon dried oregano
½ teaspoon black pepper
¼ teaspoon crushed red pepper flakes
2 bay leaves

Steps:

  • Cook and stir the ground turkey in a large pot over medium heat until crumbly and no longer pink, about 5 minutes. Stir in the crushed tomatoes, tomato sauce, kidney beans, pinto beans, black beans, onion, garlic, and red wine. Season with chili powder, cumin, parsley, oregano, black pepper, red pepper flakes, and bay leaves. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 2 hours. Stir the chili occasionally as it simmers. Remove and discard bay leaves before serving.

You might not think of chili as an easy weeknight dish, but this turkey version from Pierre Franey will change your mind. It's fabulous, it's healthy and it can be ready in about a half hour. A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

1 tablespoon olive oil
2 pounds ground turkey, white and dark combined
2 cups coarsely chopped onions
2 tablespoons chopped garlic
1 large sweet red pepper, cored, deveined and coarsely chopped
1 cup chopped celery
1 jalapeno pepper, cored, deveined and finely chopped
1 tablespoon fresh oregano, chopped, or 1 tablespoon, dried
2 bay leaves
3 tablespoons chili powder
2 teaspoons ground cumin
3 cups canned diced tomatoes
2 cups chicken broth, fresh or canned
Salt and freshly ground pepper to taste
2 15-ounce cans of red kidney beans, drained
2 cups shredded cheddar cheese
1 cup sour cream (optional)
Sliced lime for garnish (optional)

Steps:

  • Heat the oil over high heat in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
  • Add the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.
  • Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
  • Add the drained beans and cook, stirring occasionally, for 10 minutes longer. Serve in bowls with cheddar cheese, and sour cream and lime wedges, if desired.

1 medium yellow onion, chopped
3 cloves garlic, minced (from jar is ok)
1 1/2 lbs ground turkey
1 (10 ounce) can diced tomatoes with mild green chilies
1 teaspoon ground cumin
1/2 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cinnamon
1/2 tablespoon light brown sugar
1/4 teaspoon ground cayenne pepper
1/4 teaspoon fresh ground black pepper
1 (15 ounce) can black beans (rinsed and drained)
1 (15 ounce) can whole kernel corn (rinsed and drained)
1 (19 ounce) can cannellini beans
1 (15 ounce) can fat-free low-sodium chicken broth
1 teaspoon hot sauce

Steps:

  • In a large pot over medium heat saute the onion, garlic and ground turkey until turkey is browned.
  • Add tomatoes, pepper, cumin, chili powder, oregano, cinnamon, brown sugar and cayenne pepper.
  • Saute for 5 more minutes.
  • Add black beans, corn and chicken broth to the pot.
  • Puree cannellini beans in a blender or food processor.
  • Add puree to the pot.
  • Stir well and simmer for 10 minutes.
  • If the turkey mixture seems dry when browning, add a splash of olive oil.
  • The spice measurements are approximate.
  • If you want more or less heat, adjust the cayenne and the hot sauce.
  • If desired, garnish with sour cream, shredded cheese or green onions.

I served mine with some beautifully ripe slices of avocado that gives the final bowl another layer of silky richness. By the way, don't let the cocoa powder in our chili spice mixture throw you off! Stir in the ground turkey and garlic. Cook and stir until turkey is no longer pink, breaking up any large chunks, 7 to 8 minutes. Stir in the spice mixture. Cook until fragrant, 3 to 4 minutes.

More like a Greek-spiced meat sauce than American chili, what sets this dish apart is that it is ladled over spaghetti and diners choose the various toppings. A simple 2-way is just chili and spaghetti and the full 5-way adds cheese, raw onion and beans. This take on a classic swaps turkey for beef and stops at 4-ways.

1 onion, finely chopped
2 cloves garlic, finely chopped

This is not a traditional chili and has no connection with any Mexican or Texas recipe. It was devised simply as an experiment and turned out to be delicious.

Number Of Ingredients 15

5-6 pound turkey, cut in quarters
1 onion stuck with cloves
2 stalks celery
2-3 sprigs parsley
2 small dried hot peppers
Salt
2 tablespoons chili powder
4-ounce can peeled green chiles, finely chopped
1 cup almonds, ground or blended
1/2 cup peanuts, ground or blended
1 large onion, finely chopped
3 cloves garlic, finely chopped
4 tablespoons olive oil
1 cup small green olives
1.2 cup blanched almonds

Steps:

  • Cover the turkey pieces with water and add the onion stuck with cloves, the celery, parsley, and peppers. Bring to a boil. Reduce the heat, skim off any scum which may rise to the top, and cover the pot. Simmer until the turkey is tender but not falling from the bones. Remove the turkey pieces and cool until they can be handled. Remove the meat from the bones in good-size pieces.
  • Reduce the broth by half over a brisk flame. You should have about 4 cups broth. Strain and adjust the salt. Add the chili powder, the green chiles,and the ground nuts and simmer until the mixture is thickened, smooth and well blended in flavor. You may find you may wish to add additional chili powder. Sauté the onion, garlic, and green peppers in the olive oil. Add to the sauce and cook for 5 minutes. Add the turkey meat and cook thoroughly. Add the olives and blanched almonds and reheat for 3 minutes.
  • Serve with rice or polenta and crisp French bread. A radish and cucumber salad with a vinaigrette sauce is good with this. Tortillas are excellent with the chili if you don't serve polenta and French bread. Drink beer.
