1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/2 cup LAND O LAKES® Butter
1/2 cup packed brown sugar
3/4 cup corn syrup
1/8 teaspoon salt
1 teaspoon vanilla
3 LAND O LAKES® Eggs, lightly beaten
4 Nature Valley™ Oats 'n Honey crunchy granola bars (2 pouches from 8.9-oz. box), crushed (3/4 cup)*
1/2 cup Fisher® Chef's Naturals® chopped walnuts
1/4 cup quick-cooking or old-fashioned oats
1/4 cup Hershey's® semi-sweet or milk chocolate baking chips
Whipped cream or ice cream, if desired

Steps:

  • Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.
  • In large microwavable bowl, microwave butter on High 50 to 60 seconds or until melted. Stir in brown sugar and corn syrup until blended. Beat in salt, vanilla and eggs. Stir crushed granola bars, walnuts, oats and baking chips into brown sugar mixture. Pour into crust-lined pan.
  • Bake 40 to 50 minutes or until filling is set and crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool at least 30 minutes before serving. Serve warm, at room temperature or chilled with whipped cream or ice cream. Cover and refrigerate any remaining pie.

This oats and honey granola pie is simple to make, can be made gluten and nut free, and has no corn syrup. It is sweet from the honey, nutty from the granola, and will definitely satisfy your sweet tooth. It is a true competitor to the classic pecan pie-and in my opinion tastes WAY better!

For the Crust (Use gluten-free crust if making this recipe GF)
1¼ cups all purpose flour plus more for surface
1 tablespoon granulated sugar
Pinch of kosher salt
1 stick cold unsalted butter or margarine, cubed
3 to 4 tablespoons ice cold water
For the Filling
½ cup unsalted butter or margarine
½ cup packed brown sugar
¼-1/2 cup honey (depending on desired sweetness)
1 teaspoon vanilla bean paste, or pure vanilla extract
¼ teaspoon ground cinnamon
3 eggs
3 pouches Nature Valley Oats 'n Honey crunchy granola bars (6 bars), crushed into small pieces
¾ cup old-fashioned oats (use gluten-free oats if making this recipe GF)

Steps:

  • For the Crust:
  • In a food processor fitted with a metal blade, pulse together the flour, sugar and salt. Then add in the cold butter or margarine and pulse until the butter is the size of peas. Slowly add in the water, a little at a time. Stop adding water when the dough begins to form large clumps. I always use about 3 tablespoons of water and 1 more tablespoon in dry winter months.
  • Transfer the pie dough to a floured work surface. The dough should come together easily and should not feel overly sticky. Form it into a ball and gently flatten the top, forming a disc. Wrap in plastic wrap and chill in the refrigerator for 1 hour.
  • Once the dough has chilled, place it onto your floured work surface and roll the dough to fit a 9-inch pie dish. I roll the dough into a 12-inch circle so that there is enough crust to go up the edges of the dish and so I can trim and flute. When rolling out the chilled pie dough use gentle force with your rolling pin. Start from the center and work your way out in all directions, turning the dough with your hands as you go.
  • Transfer your dough to a greased pie dish by rolling the dough around your rolling pin and then unrolling it into your pie dish. Gently press the dough onto the bottom and up sides of the dish. Trim the edge of the dough and shape to your liking. Place in the freezer while you make the filling. Preheat your oven to 350 degrees F.
  • For the Filling
  • In a small microwavable bowl, melt the butter or margarine. Pour the melted margarine into a larger bowl and mix in the brown sugar and honey. Whisk in the vanilla, cinnamon and eggs until well combined. Stir the crushed granola bars and oats into the mixture. Pour the filling into the chilled pie crust.
  • Bake for 40-50 minutes or until the center is set. If your crust begins to brown too quickly, cover it with a pie saver or some foil.
  • Cool for at least 30 minutes before serving. Serve warm or at room temperature.

3 cups old-fashioned rolled oats (such as Bob's Red Mill® Gluten-Free Oats)
½ cup unsweetened coconut flakes
¼ cup honey
1 tablespoon coconut oil, melted
1 teaspoon vanilla extract
¾ teaspoon ground cinnamon

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread oats and coconut flakes onto a rimmed baking sheet.
  • Bake in the preheated oven for 8 minutes; stir oats and coconut and rotate baking sheet. Continue baking until oats and coconut are toasted, about 8 more minutes.
  • Whisk honey, coconut oil, vanilla extract, and cinnamon together in a bowl until smooth. Add oat mixture to honey mixture and stir until evenly coated.
  • Line the baking sheet with a silicone liner or parchment paper. Spread oat mixture evenly onto baking sheet.
  • Bake in the oven until granola is toasted, 8 to 15 minutes. Stir granola and transfer liner and granola to a wire rack to cool completely.

2 1/2 cups quick-cooking or old-fashioned oats
1/4 teaspoon baking soda
Slightly less than 1/4 teaspoon kosher salt
1/4 cup coconut oil
1/4 cup honey
1/4 cup sugar
1 teaspoon vanilla

Steps:

  • Heat oven to 350° F. Line 8-inch square pan with cooking parchment paper, leaving a few inches of overhang on 2 sides.
  • Place 2 cups of the oats in large bowl. Add remaining 1/2 cup oats to blender or food processor; pulse into a rough flour. Add oat flour to bowl of oats. Add baking soda and salt to bowl of oats; stir.
  • In microwavable bowl, microwave coconut oil uncovered on High just until melted. Stir in honey, sugar and vanilla; add to bowl of oats. Stir well to coat oats completely. Spread mixture evenly in pan; press down firmly and evenly.
  • Bake 20 minutes. Oats should be golden and smell of honey. Cool on rack 10 minutes. Remove from pan using parchment overhangs. Cut into 8 rectangles while still warm. Cool completely before wrapping. The bars will firm and crisp up as they cool.

I found this recipe on one of our monthly Brown County REA newsletters. My husband and I eat a few of these bars each day. It's a basic recipe to which you can add any of your favorite flavors...coconut, chocolate or different flavored chips, nuts or dried fruits.

4 cups quick-cooking oats
1 cup packed brown sugar
1 cup chopped salted peanuts
1 cup semisweet chocolate chips
1/2 cup sunflower kernels
3/4 cup butter, melted
2/3 cup honey
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, peanuts, chocolate chips and sunflower kernels. Stir in butter, honey and vanilla until combined (mixture will be crumbly). Press into a greased parchment-lined 15x10x1-in. baking pan., Bake 15-20 minutes or until browned and bubbly. Cool 15 minutes on a wire rack; cut into squares. Cool completely before removing from pan. Freeze option: Wrap each cooled bar in plastic; freeze until firm. To use, thaw bar at room temperature or, if desired, unwrap and place on a microwave-safe plate and microwave on high for 15-20 seconds or until heated through.
