Here's what you need: large eggs, milk, applesauce, sunflower butter, maple syrup, vanilla extract, old fashion oat, baking powder, ground cinnamon, fine salt, topping of your choice

2 large eggs
1 ½ cups milk
½ cup applesauce
¼ cup sunflower butter, or nut butter of choice
¼ cup maple syrup
2 teaspoons vanilla extract
3 cups old fashion oat
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon fine salt
topping of your choice

Steps:

  • Preheat oven to 350°F (180°C).
  • Place milk, applesauce, nut butter, maple syrup, vanilla, and eggs in a medium-sized bowl. Whisk until combined.
  • Add oats, baking powder, cinnamon, and salt. Stir quickly to make sure everything is well-hydrated.
  • Pour batter into a greased muffin tin, and add toppings of your choice. Bake for 20-25 minutes or until the middle springs back when gently pressed.
  • Oatmeal cups can be enjoyed immediately and/or frozen in an airtight container (once completely cool) to be enjoyed later by microwaving for 2 minutes.
  • Enjoy!

2 ripe bananas, sliced
2 tablespoons honey
1 teaspoon almond extract
1 ¼ cups rolled oats
1 teaspoon cinnamon
2 cups full-fat yogurt, as needed
raspberry, as desired
blueberry, as desired
strawberry, as desired
sliced almond, as desired

Steps:

  • Preheat oven to 350°F (175°C.)
  • In a medium bowl, mash the bananas into a paste.
  • Pour in the honey and almond extract, and mix until well combined.
  • Sprinkle on the rolled oats and cinnamon and mix until incorporated.
  • Evenly divide the oats into a greased 12-cup muffin tin.
  • Use your fingers to mold the oats into a cup shape in each of the muffin cups.
  • Bake for 15 minutes, until the oatmeal cups have set.
  • Remove the oatmeal cups from the muffin tin and place them on a serving plate.
  • Place a spoonful of yogurt in each cup and top with your choice of toppings.
  • Enjoy!

Nonstick cooking spray, for spraying the muffin tin
1 1/2 cups old-fashioned rolled oats
1/2 cup pecans, coarsely chopped
1/2 cup hulled raw sunflower seeds
2 tablespoons honey
1 tablespoon extra-virgin olive oil
4 tablespoons maple syrup
Kosher salt
2 cups Greek yogurt
4 cups blueberries
12 to 18 sprigs fresh mint

Steps:

  • Preheat the oven to 350 degrees F. Spray the wells of a 12-cup shallow muffin tin with nonstick spray; set aside.
  • In a large bowl, stir the oats, pecans, sunflower seeds, honey, olive oil, 2 tablespoons of the maple syrup and a pinch of salt until completely combined. Press 2 heaping tablespoons in each well of the prepared muffin tin, pressing to go up the sides (if you have additional granola, use an additional muffin tin). Bake until golden and crisp, 15 to 18 minutes. Let cool completely, then remove the granola cups from the muffin tin.
  • In a medium bowl, whisk to combine the yogurt and remaining 2 tablespoons maple syrup. Fill each granola cup with about 2 tablespoons yogurt and top with the blueberries and a sprig of mint to serve.

CHOCOLATE-OATMEAL PARFAITS

Haven't tried this particular parfait but have tasted them separately. The prep time is 15 minutes but the cook time is 8 minutes so it is actually quick! To save time, use instant chocolate pudding and store-bought granola. The pudding isn't as rich, but it is quick! They are packed with beneficial whole grains and dairy for a satisfying snack. Southern Living Magazine, September 2007 edition. Chill time 2 hours. Also, if preparing the granola, use old fashioned regular oats, not instant. You will have about 1-1/2 cups of Granola left over.

3 tablespoons cornstarch

1 1/2 cups quick oatmeal granola cereal
1/4 cup honey
2 tablespoons light butter or 2 tablespoons light margarine, melted
1/2 teaspoon vanilla extract
1 1/2 cups uncooked oats
1/2 cup whole wheat flour
1/3 cup almonds
1/4 teaspoon salt
3 cups thawed reduced-fat whipped topping

Steps:

  • PUDDING:.
  • Whisk together first 5 ingredients in a medium-size heavy saucepan over medium-high heat, and cook, whisking constantly, 5 minutes or until mixture is hot.
  • Gradually whisk 1/3 cup hot milk mixture into egg in a small bowl.
  • Whisk egg mixture into remaining hot milk mixture.
  • Cook, whisking constantly, 3 minutes or until mixture thickens.
  • Remove from heat; add chopped chocolate, stirring until chocolate melts and mixture is smooth.
  • Stir in vanilla.
  • Pour mixture into a glass bowl.
  • Place heavy-duty plastic wrap directly on warm mixture (to keep a film from forming), and chill 2 hours or until completely cool.
  • PREPARE GRANOLA: While pudding is chilling.
  • Stir together honey and next 2 ingredients in a small bowl.
  • Stir together oats, flour, sliced almonds, and salt in a large bowl.
  • Add honey mixture to oatmeal mixture, stirring until combined.
  • Spread oat mixture onto a lightly greased baking sheet.
  • Bake at 350°F for 20 minutes, stirring often.
  • ASSEMBLY:.
  • Layer 1 1/2 tablespoons Quick Oatmeal Granola, 3 tablespoons chocolate mixture, and 1/4 cup whipped topping into each of 6 (1 1/2-cup) parfait glasses.
  • Repeat layers once; sprinkle each parfait with 1 tablespoons granola.
