Steps:
- Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Melt the butter with the sugar in a saucepan over low heat, stirring, until the mixture thickens and the sugar is almost dissolved, about 5 minutes. Transfer to a large bowl and stir in the oats, flour, vanilla and salt. Let cool 10 minutes, then stir in the egg white.
- Drop 6 rounded tablespoonfuls of batter onto each prepared baking sheet, about 3 1/2 inches apart. Spread each mound into a 3-inch circle. Bake, switching the position of the pans halfway through, until golden brown, 12 to 15 minutes. Let cool on the baking sheets until firm, about 3 minutes, then carefully remove using a thin metal spatula and transfer to a rack to cool completely.
- Put the chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted. Drizzle on the cookies and let set, about 30 minutes.
OATMEAL LACE COOKIES RECIPE
Super-easy to make and even more delicious to eat are these oatmeal lace cookies. They take 10 minutes to prepare and 10 to bake-it doesn't get any easier.

- Gather the ingredients. Preheat the oven to 350 F and cover a baking sheet with non-stick baking paper or a silicone mat.
- Add the butter and sugar to a medium mixing bowl. Cream together until light and fluffy using a whisk, or, to speed things up, with an electric hand or stand mixer. Add the beaten egg to this mixture a little at a time. Add the vanilla and beat again.
- In a small mixing bowl, combine the oats, flour, baking powder, and salt. Using a large tablespoon or a spatula, lightly fold the dry ingredients into the creamed butter until both are combined.
- Scoop even spoonfuls of the mixture onto the prepared baking sheet at least one inch apart. The size of the spoon will determine the finished size; teaspoons make dainty biscuits, tablespoons make large, thin biscuits.
- Bake in the center of the preheated oven for 10 to 12 minutes. Keep an eye on them as they turn golden quickly, and from there can burn. Remove the tray from the oven and let the cookies sit for a minute before lifting them carefully onto a cooling rack. Repeat until all of the cookie dough is baked.
- Let the cookies cool completely since they will crisp up as they cool. Avoid touching them during this time as they break easily. Once cooled, lay them between layers of waxed or parchment paper and store them in a tin.

OATMEAL-LACE COOKIES (HAVREKNIPLEKAKER)
I found this delicious recipe late one evening when my daughter informed she needed to bring a Norwegian food item for a heritage day pot-luck at her school the NEXT day! I had all the ingredients and the cooking time is so short so this is the one I made for her. I'm so glad I did, these turned out to be very delicious and quite different from 'normal' cookies. The recipe is from Authentic Norwegian Cooking by Astrid Karlsen Scott.

Steps:
- Heat oven to 375°.
- Melt butter in saucepan; stir in remaining ingredients, mixing well.
- Drop by 1/2 teaspoonful about 3 inches apart on a greased and floured cookie sheet.
- Spread thinly.
- Bake for 5-7 minutes and WATCH CAREFULLY!
- Let stand a few minutes before removing from pan.
OATMEAL LACE COOKIES

- In a mixer with a paddle combine dry ingredients. In a separate bowl stir together wet ingredients then blend them into dry ingredients. Drop spoonfuls of batter, spaced far apart, onto nonstick sheet pans and bake at 350 degrees for 5 to 8 minutes or until golden brown.
OATMEAL LACE COOKIES
These are a favorite at our house. They are delicate and beautiful. Try dipping just the edge of one side in some melted chocolate and sprinkle with coconut or chopped nuts, perhaps pistachios or crushed peppermint would be pretty. Mostly, we like them unadulterated. They make wonderful gifts. For a nice dessert, try mixing 1 quart of softened vanilla ice cream with ground cinnamon to taste. Freeze to set. Serve a scoop with a lace cookie atop. Note: The parchment paper is very important. Also, the batter will appear pretty runny. It's fine. After I place a spoonful on the parchment paper, I quickly run my finger across it to even them out or round them some. Unsure yield.

- Preheat oven to 350 degrees.
- In a large saucepan, melt the butter. Remove from heat and stir in oats, sugar, egg, and vanilla. Add flour, salt, and baking powder. Drop 3" apart by rounded teaspoonful on cookie sheet lined with parchment paper. Spread each dollop slightly to distribute the oats. Bake at 350 degrees for 9-11 minutes or until golden. Remove from oven and let cool completely on cookie sheet. Carefully remove from the parchment with a spatula to a wire rack.

- Set oven rack in the center; preheat to 400°F .
- Lightly oil 3 baking sheets or coat with nonstick cooking spray, and dust them with flour, shaking off excess.
- Combine oats, corn syrup and oil in a medium bowl.
- Melt butter in a small saucepan over low heat and cook until it begins to turn a light, nutty brown, 1 1/2 to 2 minutes. (Be careful not to burn the butter.)
- Pour into the oat mixture and stir to combine. Set aside.
- Beat egg and sugar in a mixing bowl with an electric mixer until thickened and pale, about 5 minutes. Blend in vanilla.
- Stir together flour, baking powder and salt in a small bowl; fold into the egg mixture.
- Add the oat mixture and dried cherries; stir gently to combine.
- Spoon the batter by teaspoonfuls, about 2 inches apart, onto the prepared baking sheets.
- Bake, one sheet at a time, for about 4 minutes, or until the cookies are golden and lacy.
- Let cool on the baking sheet for 2 minutes, then carefully remove cookies from the baking sheet and cool on a flat surface (not a rack).
OATMEAL LACE COOKIES
My mom used to make these - they were our favorites! They are very crisp, and tend to shatter when you bite into them. Watch them carefully while baking since they do tend to burn quickly.

- Sift together flour, baking powder and sugar. Add oatmeal, light corn syrup, melted butter, cream and vanilla. Blend well.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the butter and sugar until light and fluffy. Stir in the vanilla and almond extracts. Sift together the flour, baking soda, and salt; stir into the butter mixture. Finally, mix in the rolled oats.
- Roll dough into balls about 1 inch in diameter. Place the dough balls about 3 inches apart onto the prepared cookie sheet. Dip the bottom of a glass in water and then in sugar, use this to flatten down the cookies. Sugar the glass as needed. Bake for 8 to 10 minutes, cookies should be slightly browned. - Heat oven to 325 degrees. Cover a baking sheet with parchment paper.
- In a large saucepan over low heat, melt the butter. Let cool a bit and add all remaining ingredients except the eggs. Stir well to combine, then add the eggs. Mix thoroughly.

- Preheat oven to 375.
- Beat sugar and butter until well blended.
- Beat in flour, vanilla and salt.
- Stir in oats.
- Form into a ball. (See photo).
- Cover and refrigerate cookie dough 1 hour.
- Line 2 baking sheets with parchment paper.
- Roll dough by tbsp full between palms into one inch balls. (I cut the dough ball into 24 equal portions, and then roll each portion into a ball.).
- Place dough balls on baking sheets, spacing 1 1/2 inches apart (cookies will spread during baking).
- Using bottom of drinking glass as aid, flatten cookies to 1 1/2-inch rounds. (See photo).
- Bake until cookies are golden brown, about 12 - 13 minutes, turning the cookie sheet once mid-way through baking.
- Let cookies rest on sheets 1 minute.
- Using spatula, transfer cookies to a rack and cool completely.
LACY OATMEAL COOKIES
This dough spreads to make thin, lacy, oatmeal cookies that you peel off the cookie sheet. Great served with ice cream, or rolled into tubes while still warm and dipped in chocolate.

- Preheat oven to 325 degrees F (165 degrees C). Cover baking sheets with foil, then coat the foil with a non-stick cooking spray.
