- In a medium bowl, combine the oats and milk. Cover and let soak in the refrigerator overnight. Transfer the oat mixture to a heavy-bottomed medium saucepan. Add the salt and cinnamon sticks and bring to a boil over high heat. Lower the heat to maintain a gentle simmer and cook, uncovered, stirring frequently, until softened, about 10 minutes. Stir in the vanilla, currants, and sugar; and simmer for 5 minutes more. Remove the cinnamon sticks and serve plain or with your topping of choice.

OATMEAL CREAM PIES
Steps:
- For the oatmeal pies: Preheat the oven to 325 degrees F and line 2 sheet pans with silicone mats or parchment paper.
- Combine the oats, flour, salt and baking soda in a medium bowl and set aside. In the bowl of a stand mixer fitted with the paddle, cream together the butter and brown sugar until creamy and light, 2 to 3 minutes. Add the egg, molasses and vanilla extract and whip together until fully combined, about 30 seconds. Add the dry ingredients and mix until just incorporated. Mix in the chocolate chips. Portion the dough into 16 balls that are about 3 heaping tablespoons each and space an inch apart on the sheet pans. Bake until the edges are golden but the centers are still soft and slightly underset, begin checking at 12 minutes. Allow to cool on the pans, about 15 minutes, then cool completely on a rack.
- For the filling: Cream together the cream cheese, butter and coconut oil in a stand mixer fitted with the paddle attachment until smooth and light, 30 seconds to 1 minute. Add the powdered sugar, salt and vanilla extract and whip until light and fluffy, 2 to 3 minutes.
- Place a heaping tablespoon-size blob of filling on the underside of a cookie, then sandwich with another. Eat immediately or refrigerate for 20 to 30 minutes for the filling to firm up. Keep in an airtight container in the fridge.
CREAM OF OATMEAL
I often make this for my husband, who loves his hot cereal in the morning! One morning I was out of cream of wheat cereal, so came up with this! I hope you enjoy it! This is also good added to cream of wheat. You may also add chopped or sliced fruit(banana, peaches, apples, etc.), dried fruit(raisins, craisins, figs, dates, etc.) or other spices(nutmeg, cardamom, mace, etc.). I add a teaspoonful of ground flaxseed to mine sometimes.

Steps:
- Place oatmeal in the food processor.
- Process until finely shredded.
- Place in a small saucepan along with the wheat germ, wheat bran, salt, water and milk.
- Bring to a boil, then reduce heat and simmer till liquid is almost all absorbed, about 3-5 minutes.
- Stir often so it won't stick to the bottom.
- Pour into a bowl and place a little pat of butter on top, if desired.
- Pour a little milk on(depending how moist you like it), then brown sugar to taste.
- Sprinkle with cinnamon, stir it all up and serve!
- Add whatever optional ingredients you like. :).
OATMEAL CREAM'WICH
The combination of the chewy cookie and the caramel-cream cheese filling has made this cookie many fans . . . so many, in fact, that though the cookie was originally introduced as a short-term special, our guests wouldn't permit us to remove it from the menu. But to enjoy it at home, please note that unlike the other two cream'wiches, this cookie does not last long once it has been filled with the cream. It will begin to grow soggy after about four hours.

- Preheat the oven to 350°F.
- To make the cookie, combine the butter, sugars, lemon zest, and vanilla in the bowl of a stand mixer with the paddle attachment. Mix on medium speed until all ingredients come together and are light and fluffy. Add the egg. Sift together the flour, baking soda, nutmeg, and salt, and add to the butter mixture in three parts, waiting until each is well mixed before adding the next. Add the oats last, mixing just until combined. Chill the dough in the freezer for 5 minutes.
- Transfer the dough to a large surface covered with a layer of parchment paper. Top with another layer of parchment and gently roll the dough into a 1/4-inch-thick sheet. To prevent the cookies from sticking as you cut them, carefully remove the top layer of parchment and drizzle some flour over the sheet of dough. Replace the parchment, flip the dough, and release the parchment on the other side. Cut the dough into 2 1/2-inch round cookies and space about 1/2 inch apart on an ungreased cookie sheet. Gather any leftover scraps of dough and roll and cut as described above. Repeat until you have no dough left. Bake the cookies for 15 to 20 minutes, turning the pan 90 degrees halfway through baking, until golden brown in color but still soft in the center. Transfer the cookies to a cooling rack. Let cool completely before filling.
- To make the filling, bring the water and 3 tablespoons of the sugar to a boil in a small heavy-bottomed saucepan. Once a dark brown color is achieved and the sugar looks like caramel, remove from the heat and very carefully whisk in the cream. Allow to cool.
- In the mixer with the paddle attachment, combine the butter with the remaining 4 tablespoons sugar and mix until the sugar is completely dissolved. Add the salt and vanilla, and once they are incorporated, turn the mixer down to a low speed and add the cream cheese and the caramel. Mix until fully incorporated.
- Place half of the cookies with the top side (the most attractive) down. Using a piping bag or a spoon, evenly distribute the filling among those cookies, and close into sandwiches with the remaining cookies. Gently press down. Serve immediately or store the cookies in a cool place.
OATMEAL SANDWICH COOKIES
Forget all the bad, soggy oatmeal cookies you've ever had in your life. Picture instead a moist-centered, butterscotch-imbued, crisp-edged cookie flecked with nubby oats. Add to this the fragrant nuttiness of toasted coconut. Then subtract any chewy raisins that may have accidentally wandered into the picture, and substitute sweet, soft dates, guaranteed not to stick in your teeth. Now mentally sandwich two of these cookies with a mascarpone-cream cheese filling. And that's what you'll find here. An oatmeal cookie with a little something extra, a recipe made for keeping. You can bake the cookies a few days ahead, but they are best filled within a few hours of serving.

- Heat oven to 350 degrees. Spread coconut flakes on a rimmed baking sheet. Toast, stirring occasionally, until lightly colored and fragrant, 7 to 10 minutes. Cool. Raise oven temperature to 375 degrees.
- In the bowl of a mixer fitted with the paddle attachment, cream the butter until light. Beat in brown sugar and honey, then beat until very fluffy, about 5 minutes. Beat in eggs, one at a time. Beat in vanilla.
- In another large bowl, whisk together flour, salt, baking powder and 1 teaspoon (2 grams) cinnamon. With the mixer set on low, beat flour mixture into butter mixture until combined. Beat in oats, dates and toasted coconut.
- Line three baking sheets with parchment paper. In a small bowl, stir together granulated sugar and remaining 3 teaspoons (6 grams) cinnamon. Roll heaping tablespoonsful of dough into balls, then roll balls in cinnamon sugar; transfer to baking sheet, leaving about 1 1/2 inches of space between dough balls. Bake until cookies are golden brown, about 15 minutes. Let cool in the pan for 2 minutes, then transfer to a wire rack to cool completely.
- Make the filling: Using the electric mixer fitted with the paddle attachment, beat cream cheese until smooth. Beat in mascarpone, confectioner's sugar and vanilla. Scrape down sides of bowl. Sandwich about 1 tablespoon of filling between two cookies; repeat with the remaining filling and cookies.
