The Best Oatmeal Chocolate Chip Pumpkin Bars made with gluten free oats and flour, pumpkin puree, maple syrup and chocolate for the ultimate touch. These pumpkin bars are the perfect breakfast, a snack or dessert recipe for the fall - loaded with pumpkin and gooey chocolate flavor!

1 1/2 cups gluten free regular oats (not quick oats)
1 1/2 cups 1:1 gluten free baking flour
1½ teaspoons pumpkin pie spice
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup pumpkin puree
⅓ cup maple syrup
2 teaspoons vanilla extract
⅓ cup unsweetened applesauce
½ cup chocolate chunks

Steps:

  • Preheat oven to 350° F.
  • Spray a 9″ x 9″ baking dish with cooking spray and cover with parchment paper. (this will help you remove the bars more easily later)
  • To a medium bowl add oats, 1:1 baking flour, baking powder, baking soda, salt, and pumpkin pie spice.
  • To a large bowl, add pumpkin puree, maple syrup, vanilla extract and apple sauce. Whisk together until combined.
  • Slowly add the wet ingredients to dry ingredients. Fold in the chocolate chunks.
  • Add oatmeal mixture to prepared 9″ x 9″ baking dish.
  • Bake for 20-25 minutes or until top is golden brown and toothpick test comes out clean.
  • Serve!

1/2 cup melted butter (1stick)
1/2 cup brown sugar
1/2 cup white sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg, beaten
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 cup flour
3/4 cup semi-sweet chocolate chips (I use Ghiradelli)
3/4 cup rolled oats (uncooked oatmeal)

Steps:

  • Preheat oven to 350 degrees with the rack in the middle position.
  • Melt the butter in a large microwave safe bowl.
  • Add the brown and white sugars and let cool a bit.
  • Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
  • Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
  • With a spatula spread dough evenly into a greased 8x8 baking pan.
  • Bake at 350 for 25- 30 minutes.
  • Cut into bars when cool.

4 cups gluten-free oats
1 cup dark brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 (15 ounce) can pumpkin puree (not pumpkin pie mix)
2 teaspoons pure vanilla extract
1 cup unsweetened applesauce
2 tablespoons olive oil or 2 tablespoons coconut oil
1/2 cup chocolate chips
1/2 cup pecans, chopped
1/2 cup golden raisin (optional)
4 tablespoons maple syrup (optional)

Steps:

  • Preheat oven to 350 degrees F. Spray an 8x11, or two 9 inch round, baking pan with nonstick cooking spray.
  • Make oat flour: Place oatmeal in blender or food processor and blend for 1-2 minutes until oatmeal resembles coarse flour. You may need to stop blender and stir oats a couple of times to ensure that all oats have been blended. NOTE: oats are measured before you processes them.
  • In a large bowl mix oats, brown sugar, salt, spices, baking powder, and baking soda. Make a well in the dry ingredients and add the pumpkin, apple sauce, oil, and vanilla. Combine until mixed well. NOTE: the batter should be looser than cookie dough but thicker than cake batter. If your batter is too thick add a little water 1/4 cup at a time until it looks right.
  • Gently fold in chocolate chips, raisins, and/or nuts.
  • Pour batter into prepared pans and gently smooth top. Bake for 35-45 minutes, or until knife inserted into center comes out clean. Timing will depend on what size pan you use, but definitely check around 30 minutes.
  • Once out of the oven drizzle the top with maple syrup (optional). It soaks in so they wont be super sticky.
  • NOTES:.
  • You can use "old fashioned" or "quick" rolled oats. Use Gluten-free oats only if you want to avoid gluten.
  • Try white chocolate chips, milk chocolate chips, cinnamon chips, or even butterscotch chips.
  • On occasion I've substituted part of the oats with granola cereal (processed into flour) with good results.
  • Next I want to experiment with using pureed butternut or zucchini squash in place of the pumpkin because pumpkin is more difficult to find outside the holidays.

I was restless and bored one night and couldn't sleep so I decided to bake something. After raiding the kitchen this is what I threw together. I love that it has a mild sweetness and isn't over powering. So, if you prefer really sweet things I suggest you add more sugar. I also love how light these are.

2 cups baking mix
1 cup quick oats
1 teaspoon baking powder
1 cup chocolate chips
1 tablespoon and 1 teaspoon pumpkin pie spice (Separated)
1 (15 ounce) can packed pumpkin
1 egg
1 cup milk
3/4 cup sugar
1 cup toasted chopped pecans
powdered sugar, for dusting

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl add baking mix, oats, baking powder, chocolate chips, and the tablesppon of pumpkin pie spice. Stir until combined.
  • In a medium bowl whisk together pumpkin, teaspoon of pumpkin pie spice, egg, milk, and sugar until smooth.
  • Stir in pecans.
  • Add wet ingredients to dry and stir until combined.
  • Spoon minture into greased 9 X 13inch pan and bake for 25 mins or until toothpick inserted in the middle comes out clean.
  • Allow "cake" to cool slightly and transfer from pan to wire rack to continue cooling.
  • When cool slice width wise into 1/2 inch strips and then in half length wise.
  • Place evenly on cookie sheet(s) and bake for an additonal 10-15 minutes
  • Remove from oven and let cool slightly. Dust with powdered sugar.
  • Allow the cookies to cool completely and enjoy!

  • Pulse the oats in a food processor or blender until they’re slightly broken up. (For whole oats, about 10 pulses. For quick oats, about 5-6 pulses.) Pour into a large bowl and add the remaining ingredients. With a rubber spatula or large spoon, stir together until combined. Mixture/dough will be very heavy and thick.
  • Spoon mixture into prepared pan. Using the back of a flat spatula or a spoon, spread and press it tightly down into the pan. Make sure it’s flat and very compact, which helps guarantee the bars hold their shape. Dot a few chocolate chips into the top– this is optional and only for looks! I usually use about 1-2 Tablespoons on top.
  • Bake for 25-28 minutes or until the edges are very lightly browned and the center appears set. Avoid over-baking, which dries the bars out.
