This is a nice and easy way to serve oatmeal. It's very moist and tasty, even my children love to eat this one. Use other dried fruits for a different taste. This recipe comes from a local Toronto paper, yeeeeears ago.

Steps:
- Preheat oven to 350°F.
- In a large bowl, combine oats, brown sugar, raisins, cinnamon and salt, mix well.
- In another bowl, combine milk, egg substitute, oil and vanilla and mix well.
- Add the dry and wet ingredients together and mix well.
- Pour into an 8"x8" greased baking dish and bake for 55-60 minutes or until centre is set and firm to the touch.
- Remove from oven and cool slightly.
- Serve with milk or yogurt and fruit.
- Enjoy!

BREAKFAST BREAD PUDDING
Steps:
- Preheat the oven to 350 degrees F.
- In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, honey, vanilla, orange zest, and salt. Set aside.
- Slice the brioche loaf into 6 (1-inch) thick pieces. Lay half brioche slices flat in a 9 by 14 by 2-inch oval baking dish. Spread the raisins on top of the brioche slices, and place the remaining slices on top. Make sure that the raisins are between the layers of brioche or they will burn while baking. Pour the egg mixture over the bread and allow to soak for 15 minutes, pressing down gently.
- Bake for 55 to 60 minutes or until the pudding puffs up and the custard is set. Remove from the oven and cool slightly before serving.

- Grease a 9-by-13-inch baking dish with butter or cooking spray. Preheat the oven to 400˚ F. Line a baking tray with parchment paper and lay the bacon side by side on the pan. Cook the bacon for 18 to 20 minutes, or until crispy.
- While the bacon cooks, prepare the other ingredients. Whisk together the eggs, half-and-half, salt and pepper in a large bowl. Grate the cheese, cube the bread and chop the chives, then add them all to the egg mixture. Crumble the bacon into the bowl with the other ingredients and gently fold to combine. Pour into the baking dish, cover with plastic wrap and refrigerate overnight.

- Fill 9" by 14" cooking dish 1/2 to 2/3 full with cubed day-old bread. Add oatmeal and combine with bread cubes. In a separate bowl, beat eggs and mix with milk, sugar, vanilla and nutmeg. Add to bread/oatmeal mixture until dry ingredients are moistened; add dried currants. Bake at 350 degrees F until pudding has risen high and is medium brown, about 1 hour plus. - For the crumble topping: Combine the oats, butter, brown sugar and cinnamon in a small bowl; set aside.
- For the bread: Preheat the oven to 350 degrees F. Cut out an 8-by-4-inch rectangle of parchment paper and put in the bottom of a 9-by-5-inch loaf pan. Spray the pan and paper with cooking spray.
- Put the oats in a blender and blend to a flour-like consistency. Combine the oat flour, wheat flour, cinnamon, baking powder, baking soda and salt in a large bowl.
- Combine the honey, oil, vanilla and eggs in a medium bowl; add the sugar, stirring until combined. Add the apples and stir until well combined. Add the flour mixture and stir just until combined. Gently stir in the walnuts.
- Pour the batter into the prepared loaf pan and sprinkle with the crumble topping. Bake until a wooden pick inserted in the center comes out clean, about 1 hour. Cool in the pan on a wire rack 10 minutes, then remove from the pan to the rack and cool completely.

- 1. In a large bowl, mix together sugar, beaten eggs, milk or almond milk, & vanilla.
- 2. Set crock pot on low. Put cubed bread & oatmeal in crock pot, pour egg & milk mixture over bread & mix together making sure all bread is moistened by egg/milk mixture. Fold in chopped bananas. (Can add raisins if you choose)
- 3. In a small bowl, mix together brown sugar, nutmeg, & flour, cut in butter until mixture is crumbly. Add walnuts and mix well. Crumble over bread mixture. Cook on low for 5-6 hours.
- 4. Makes a great breakfast dish, or a tasty dessert with ice cream! Your choice! My husband Is not a bread pudding fan, but he enjoys this dish for breakfast or dessert and looks forward to it for the holidays. It's everybody's favorite breakfast dish in one!

CHEATER'S OATMEAL PUDDING
This is sort of a mix between a rice pudding and oatmeal. I generally like just plain oatmeal, but this is what I eat when I want a real treat. I'd imagine it would be a good way to get kids to eat oatmeal, if they don't mind the texture of it. Also, I make it with many different combinations of pudding/extract. Vanilla and almond are my personal favorite, but it's also good with chocolate or caramel pudding and other extracts. Play around with it!

- Combine oats and water in a deep microwaveable bowl (very deep to prevent spilling over).
- Microwave on high for 5 minutes, or less if your microwave is strong. Let sit in microwave for about 2-3 minutes after it's done to let it thicken up (this is important).
- Remove oats from microwave. Stir in pudding, extract, and sweetener.
- Microwave for about 30 more seconds to re-warm.
- Sprinkle with almonds if desired.
- NOTE - I have NOT tried this using quick-cooking oats, I'm not sure how that would taste. Also, you can really cook the oats however you want, just make sure that they are thick before you add the pudding. I have a slow microwave, so 5 minutes is how long mine takes.
STORMY DAY BREAKFAST BREAD PUDDING
This is a recipe that I clipped from the newspaper. I modified it by changing the topping. The original recipe called for 1 cup of low-fat granola, but I switched it to a topping like you would find on an apple crisp. Use any type of bread. I used 2 wheat & 2 egg hamburger buns from the freezer.

- Preheat oven to 350 degrees.
- Spray an 8" x 8" glass baking dish with cooking spray.

- Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray. Any similar size or shape pan works, though 8×8 inch would be too small. See recipe note for 9×13 inch pan.
- Whisk all of the ingredients together in 1 large bowl. Pour into prepared baking pan. Top with nuts, if desired. (Or stir into the oatmeal.)
