- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
- In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
- Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

- Preheat oven to 350 degrees F. Spray 9" nonstick loaf pan with cooking spray. Set aside.
- In a food processor or blender, add the 1 cup of old fashioned oats. Process until the oats are half their size or less. Add in brown sugar, flour, salt, baking soda, baking powder, and cinnamon. Pulse to combine. Dump dry mixture into a large bowl.
- In a food processor or blender, add the bananas. Process until smooth. Add eggs, vanilla, and oil. Pulse to combine. Pour the wet mixture into the dry mixture. Fold in until just combined. Fold in the walnuts, if using.
- Pour into prepared pan and bake for 45 - 50 minutes, or until a tester comes out clean. Cool in pan, on rack, for 10 minutes, then cool on rack. Wrap tightly with foil or plastic wrap and store in cool, dry place or in refrigerator. The flavor tends to get better the next day.

- Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, potato flour salt in a large bowl; stir well with a whisk to combine. Stir in oats.

- Preheat the oven to 350 degrees F. Spread 1 1/2 cups oats in a single layer on a rimmed baking sheet. Place in the oven and toast for 8 to 10 minutes, until very light golden and fragrant, stirring once halfway through. Set aside to cool. Line a 9 x 5-inch loaf pan with parchment paper so that two sides overhang like handles. Lightly mist with nonstick spray.
- In a medium mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir in the toasted oats. Set aside.
- Mash the banana in the bottom of a large mixing bowl and double check to make sure you have 1 1/2 cups. Whisk in the honey, melted butter, milk, and Greek yogurt. - Add oats, cinnamon, vanilla, sea salt and half of the banana slices to a medium pot. Add water and stir to combine.
- Heat over medium-high heat for 8-10 minutes. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the oats don't stick to the pot. You'll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.

- Soften yeast in the warm water.
- Combine the boiling water, 1 cup oats, molasses, butter and salt.
- Cool to lukewarm.
- Stir in 2 cup of the flour, beat well.
- Add the softened yeast and 2 beaten eggs, beat well.
- Stir in enough of the remaining flour to make a soft dough.
- Turn out onto a lightly floured surface and knead until smooth and elastic about 8-10 minutes.
- Shape into a ball.
- Place in a lightly oiled bowl, turning once to grease the surface of the dough.
- Cover and let rise in a warm place until double (about 1 hour).
- Punch dough down, turn out onto a lightly floured surface.

- Shape dough into loaves.
- Place the loaves into the pans.
- Cover and let rise in a warm place until double (about 30- 45 minutes).
- Mix the beaten egg white with the tablespoon of water.
- Brush the tops of the loaves with this mixture.
- Sprinkle the tops of the loaves with a few more rolled oats.
- Bake at 375°F till done, about 40 minutes.
- Cover loosely with foil during the last 15 minutes if the tops are browning too quickly.
- Remove from pans and cool on a rack.

- Blend the oats in a high powered blender for about 30 seconds, or until they form a fine flour. (Alternately, you can use 2 1/4 cups oat flour). Add the baking powder, baking soda, and salt and process briefly. Transfer the dry ingredients to a bowl.
