½ cup shortening
¾ cup white sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup quick cooking oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
  • In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

1 cup dark brown sugar
2 eggs
1 teaspoon vanilla
1/2 cup banana, mashed with a fork
1 1/2 cups plain flour

2 cups old-fashioned oatmeal
3/4 cup walnuts, roughly chopped

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter and brown sugar until creamed.
  • Add the eggs, vanilla and mashed banana and beat again until well combined.
  • Combine the flour, baking soda, cinnamon and salt in a separate bowl.
  • Add flour mixture to the beaten mixture and mix well.
  • Stir in oats and chopped walnuts.
  • Drop by rounded tablespoons onto cookie sheet.
  • Bake for about about ten minutes or until golden brown.
  • Allow to cool for a couple minutes before moving to a wire rack.

1 cup old fashioned oats
1 1/4 cups all purpose flour
1/2 cup light brown sugar, packed
1/2 tsp. kosher salt
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. ground cinnamon
3 large, ripe bananas, cut into chunks
2 large eggs
1 tsp. pure vanilla extract
3 TBSP cooking oil (corn, canola, etc)
1/3 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F. Spray 9" nonstick loaf pan with cooking spray. Set aside.
  • In a food processor or blender, add the 1 cup of old fashioned oats. Process until the oats are half their size or less. Add in brown sugar, flour, salt, baking soda, baking powder, and cinnamon. Pulse to combine. Dump dry mixture into a large bowl.
  • In a food processor or blender, add the bananas. Process until smooth. Add eggs, vanilla, and oil. Pulse to combine. Pour the wet mixture into the dry mixture. Fold in until just combined. Fold in the walnuts, if using.
  • Pour into prepared pan and bake for 45 - 50 minutes, or until a tester comes out clean. Cool in pan, on rack, for 10 minutes, then cool on rack. Wrap tightly with foil or plastic wrap and store in cool, dry place or in refrigerator. The flavor tends to get better the next day.

1 1/2 teaspoons baking powder

1 cup mashed ripe banana (about 2-3 large)
2/3 cup honey
1/3 cup goat milk yogurt
1/3 cup rice milk (can substitute low fat milk)

  • Preheat oven to 340°F.

1 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder

1/4 teaspoon kosher salt
1 1/2 cups mashed very ripe bananas (about 4 medium bananas)
2/3 cup honey or pure maple syrup
4 tablespoons unsalted butter (melted)

  • Preheat the oven to 350 degrees F. Spread 1 1/2 cups oats in a single layer on a rimmed baking sheet. If you don't have ripe bananas, roast them skin on in a 300°F oven for 40 minutes until blackened and soft. As for the oats, don't even think about using the instant kind.   • Add oats, cinnamon, vanilla, sea salt and half of the banana slices to a medium pot. Add water and stir to combine.
  • Heat over medium-high heat for 8-10 minutes. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the oats don't stick to the pot. You'll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.
  • While oats are cooking, heat a skillet over medium and add coconut oil and maple syrup. Add remaining banana slices and walnuts to the skillet. Cook banana slices 2 minutes on each side or until they start to get a golden crust. Heat walnuts until just toasted. Remove from heat.
  • Place cooked oats into a bowl and top with caramelized bananas and walnuts. For sweeter oats, drizzle with extra maple syrup.

The oats and nuts in this banana bread make it different and give it a great flavor and texture. It's one of my favorite quick breads, and I probably make it more frequently than any other! Don't forget to sprinkle the oats on top for a great crunch! This recipe came from Shanna at the IBS message boards at www.helpforibs.com, although I modified it slightly.

1 1/2 cups all-purpose flour (original recipe called for whole wheat- I usually use a combination)
1 cup quick oats (the recipe recommends a heaping cup, which worked well for me)
6 tablespoons brown sugar
6 tablespoons white sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
2 large bananas or 3 medium bananas, well mashed
1/4 cup vegetable oil (or canola oil)
1/2 cup unsweetened applesauce
2 large eggs or 1/2 cup Egg Beaters egg substitute
1 tablespoon vanilla
1/2-1 cup chopped pecans or 1/2-1 cup walnuts
additional quick oats, for sprinkling

Steps:

  • Combine flour, oats, sugars, baking soda, baking powder, cinnamon, and salt; mix well.
  • In another bowl, combine mashed bananas, oil, applesauce, eggs, and vanilla; mix well.
  • Add wet ingredients to dry ingredients until well combined.
  • Mix in chopped nuts.
  • Pour into 9 x 5 loaf pan thinly coated with cooking spray.
  • Sprinkle a thin layer of quick oats on top of the batter.
  • Cook at 350 degrees for 1 hour or until a cooking skewer or knife inserted in center comes out clean.
  • Allow to cool for at least an hour before cutting.

2 (1/4 ounce) packages quick-rising yeast
1/2 cup water (110 degrees)
1 1/4 cups boiling water
1 cup quick-cooking rolled oats
1/2 cup light molasses
1/3 cup butter
1 tablespoon salt
5 3/4-6 cups all-purpose flour
2 beaten eggs
quick-cooking rolled oats
1 beaten egg white
1 tablespoon water

Steps:

  • Soften yeast in the warm water.
  • Combine the boiling water, 1 cup oats, molasses, butter and salt.
  • Cool to lukewarm.
  • Stir in 2 cup of the flour, beat well.
  • Add the softened yeast and 2 beaten eggs, beat well.
  • Stir in enough of the remaining flour to make a soft dough.
  • Turn out onto a lightly floured surface and knead until smooth and elastic about 8-10 minutes.
  • Shape into a ball.
  • Place in a lightly oiled bowl, turning once to grease the surface of the dough.
  • Cover and let rise in a warm place until double (about 1 hour).
  • Punch dough down, turn out onto a lightly floured surface.
  • Divide dough in half and cover with the bowl.
  • Let rest 10 minutes.
  • Coat 2 well greased loaf pans with about 2 Tbsp of rolled oats per pan.
  • Shape dough into loaves.
  • Place the loaves into the pans.
  • Cover and let rise in a warm place until double (about 30- 45 minutes).
  • Mix the beaten egg white with the tablespoon of water.
  • Brush the tops of the loaves with this mixture.
  • Sprinkle the tops of the loaves with a few more rolled oats.
  • Bake at 375°F till done, about 40 minutes.
  • Cover loosely with foil during the last 15 minutes if the tops are browning too quickly.
  • Remove from pans and cool on a rack.

  • In medium saucepan, bring milk (or soy milk), brown sugar, spices and salt to a gentle boil (watch carefully); stir in oats.
  • Return to a boil; reduce heat to medium.
  • Cook 1 minute for quick oats, 5 minutes for old fashioned oats, or until most of liquid is absorbed, stirring occasionally.
  • Remove oatmeal from heat.
  • Stir in mashed bananas and pecans.
  • Spoon oatmeal into six cereal bowls.
  • Top with yogurt (or soy yogurt), sliced bananas and pecan halves, if desired.
  • Tip: To toast pecans, spread evenly in shallow baking pan.
  • Bake at 350°F 5 to 7 minutes or until light golden brown.
  • Or, spread nuts evenly on microwave-safe plate.
  • Microwave on HIGH 1 minute; stir.
  • Continue to microwave on HIGH, checking every 30 seconds, until nuts are fragrant and brown.
