This oat flour banana bread is a moist and hearty quick bread with a tender crumb! Made in just one bowl, it uses simple ingredients and tastes delicious!

2 cups oat flour (gluten free, if needed)
2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup oil (any neutral flavored oil)
2 large eggs (or flax eggs * See notes)
1/2 cup sugar (brown, coconut, or white)
3 large bananas (mashed)
1 teaspoon vanilla extract
1/2 cup walnuts (chopped)

Steps:

  • Preheat the oven to 180C/350F. Grease and line a loaf pan and set aside.
  • In a small bowl, add your oat flour, baking powder, and salt, and mix well. In a mixing bowl, add your oil, eggs, sugar, mashed bananas, and vanilla extract, and whisk until combined. Add the dry ingredients and mix until just combined. Fold through the walnuts.
  • Transfer the batter into the lined loaf pan. Bake the banana bread for 35-40 minutes, or until a skewer comes out clean.
  • Remove the bread from the oven and let it cool completely, before removing it from the pan and slicing it up.

Oat flour banana bread is a hearty, delicious healthy banana bread made with just a few simple ingredients! No refined flour or sugar, butter, or dairy!

3 cups rolled oats ((2.75 cups oat flour))
3 large bananas
.25 cup Unsweetened Vanilla Almond Milk
1/3 cup maple syrup
2 eggs
2 tsp cinnamon
1/8 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • Preheat oven to 350F.
  • Using a food processor grind 3 cups of old fashioned rolled oats into fine oat flour. You want 2.75 cups of oat flour so if you end up short, grind more oats into flour. You want to grind so that your oat flour is very fine. (or you can purchase fine oat flour.)
  • In a large bowl, mash bananas with a fork. Then, whisk together maple syrup, eggs, mashed bananas, and unsweetened vanilla almond milk.
  • Add cinnamon, salt, baking soda, and baking powder to oat flour. Mix to combine evenly.
  • Next, add the wet mixture to the flour mixture and mix until totally combined. The batter will be a little sticky, that's okay.
  • Let the mixture sit for five minutes.
  • Spray parchment paper with cooking spray and line a loaf pan with parchment paper. The paper will wrinkle, this is the price we pay for easier cleanup!
  • Add mixture to your parchment paper lined bread pan and place it on the top rack of the oven.
  • Bake for 50-55 minutes until inserted toothpick comes out clean.
  • Let cool COMPLETELY. Ideally, let cool for a few hours on the counter, then let cool completely in the fridge overnight. This is so it doesn't crumble, but if you can't wait that long it will still be delicious!

½ cup shortening
1 cup white sugar
2 eggs, beaten
½ teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
½ teaspoon salt
¼ cup milk
½ teaspoon ground cinnamon
1 ½ cups mashed bananas
½ cup chopped raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
  • Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
  • Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
  • Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.

Steps:

  • In a bowl, combine wet ingredients, eggs, honey, Greek yogurt, vanilla and melted butter.
  • In a separate bowl, mash the bananas and incorporate into the egg mixture.
  • In another bowl, combine together the dry ingredients, ground oats, old-fashioned oats, baking powder, baking soda and cinnamon. Pour dry ingredients into the wet ingredients, mixing together to combine. Do not over mix the batter.
  • Pour into prepared baking dish, smooth the top and bake at 350F (180C) degrees for 50 minutes.
  • Let it sit for 15 minutes, then remove from the baking pan and set aside to cool completely.

1 cup oatmeal
1/2 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup egg substitute or 1 egg
1/2 cup non-fat vanilla yogurt
1 cup fat-free buttermilk
1 1/2 cups bananas (smashed about 3)
1 teaspoon vanilla

Steps:

  • Sift first 6 ingredients (flour through cinnamon) together in a large bowl.
  • Mix remaining ingredients in a small bowl.
  • Mix wet ingredients into dry ingredients.
  • Spray a loaf pan with cooking spray. Pour mixture into pan.
  • Bake at 350 for 40 to 45 minutes or till tests done with a cake tester or toothpick. This will rise very high. If necessary, cover the top slightly with foil if top starts to brown too fast.
  • Allow to cook in pan 10 minutes. Remove from pan and cool completely before slicing. Slices can be toasted in toaster oven or microwaved for about 20 seconds.

Very gooey and yummy, this is my favorite Banana bread recipe. TIPS: Buy whole wheat flour that has NOT been bleached. Use only PURE honey. Use Almond, Rice or Soy milk (try not to use cow milk). Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.

  • Preheat oven to 350.
  • Oil bread pan.

  • Put honey, olive oil, egg, milk, vanilla extract and bananas in blender and mix completely.
  • Add to dry ingredients and mix well.
  • Pour into pan.
  • Bake for 30 minutes.
  • Cool completely.
  • Enjoy.

  • Blend the oats in a high powered blender for about 30 seconds, or until they form a fine flour. (Alternately, you can use 2 1/4 cups oat flour). Add the baking powder, baking soda, and salt and process briefly. Transfer the dry ingredients to a bowl.
  • Using the same blender, add the bananas, eggs, coconut milk, melted coconut oil, and pure maple syrup. Blend for about 10 seconds to combine the liquid ingredients. (Alternately, you can mash the bananas by hand, then stir together the wet ingredients in a large bowl.)
