HEALTHY CHOCOLATE MUFFINS

These Healthy Chocolate Muffins are so moist, rich and fudgy, you'll never believe they are good for you! Made with whole grains, yogurt and no added sugar.

1 cup white whole wheat flour (plus 2 tablespoons)
1/3 cup unsweetened cocoa powder
3/4 teaspoon baking soda
3/4 teaspoon instant espresso powder (optional; will result in a more intensely chocolaty muffin)
1/4 teaspoon kosher salt
1/8 teaspoon ground cinnamon
1/2 cup semi-sweet chocolate chips (plus optional additional for sprinkling on top)
2 large eggs (at room temperature)
1/2 cup nonfat plain Greek yogurt (at room temperature)
1/2 cup honey ( or pure maple syrup)
1/3 cup unsweetened almond milk (or milk of choice)
1/4 cup canola oil (or melted, cooled coconut oil, light extra virgin olive oil, or melted, cooled unsalted butter)
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 325 degrees F. Lightly coat a standard 12 cup muffins tin with nonstick spray or line with paper liners.
  • In a large mixing bowl, whisk together the dry ingredients: white whole wheat flour, cocoa powder, baking soda, espresso powder, salt, and cinnamon. Stir in the chocolate chips.
  • In a medium bowl, briskly whisk together the eggs, yogurt, honey, milk, oil, and vanilla. Make a well in the center of the dry ingredients and add the wet ingredients. Gently stir by hand, just until the dry ingredients disappear.
  • With a muffin scoop or similar, fill the muffin cups 2/3 of the way to the top with batter. If desired, sprinkle on some extra chocolate chips. Bake for 18 to 22 minutes, or until a toothpick inserted in the center of a muffin comes out without any wet batter clinging to it. Place the pan on a wire rack. Let the muffins cool in the pan for 5 minutes, then gently remove them from the pan and place them on the rack to finish cooling completely (don't leave the muffins in the pan or they will start to steam and become a little soggy). 1 cup oats (I use old-fashioned oats)
1 cup skim milk (or soy or whatever you have)
1 cup white whole wheat flour (see notes)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup brown sugar
1 large egg
1/4 cup unsalted butter, softened (see notes)
2 teaspoons vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350. Line a muffin tin with muffin liners and spray with cooking spray.
  • Combine oats and milk and let those soak while you prepare the rest of the recipe, to soften the oats.
  • In a large bowl, whisk together the egg and brown sugar until smooth and caramel colored.
  • Add vanilla and butter and whisk to combine. You may have small pieces of butter in the mixture, which is totally fine. (See notes.)
  • Add flour, oat-milk mixture, baking soda, salt and cinnamon. Stir until well combined but don't over mix.
  • Fold in the chocolate chips.
  • Distribute the batter between the muffin tins - they will be about 2/3rds full.
  • Bake for 15-18 minutes, until a toothpick comes out clean.

Oat fiber muffins are the perfect morning snack. They can be made into any flavour! These chocolate chip ones are my favourite!

Number Of Ingredients 10

1/2 cup (60g) oat fibre
1/2 tsp xanthan gum
3/4 tsp baking powder
3 eggs
1 tbsp whey isolate (optional)
2 tbsp sugar substitute
2-3 tbsp heavy cream (or half'n'half / single cream)
1 tbsp vanilla
1/3 cup (85g) greek yogurt
1/4 cup (45g) sugar free chocolate chips

Steps:

  • Mix all the dry ingredients together in a bowl, except the chocolate chips.
  • Add in the wet ingredients and mix until the batter is smooth.
  • Stir in the chocolate chips.
  • Scoop into a lined muffin tin.
  • Bake at 350°F / 175°C for 20-25 minutes or until a toothpick comes out of the batter clean.
  • Enjoy!

1/2 cup butter, softened
3/4 cup packed brown sugar
1 large egg
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup applesauce
1 cup rolled oats
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream butter and sugar. Beat in egg. Combine dry ingredients; add alternately with applesauce to the creamed mixture. Stir in oats and chips. Fill paper-lined muffin cups three-fourths full. Bake at 350° for 25 minutes.

Steps:

  • Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 400 degrees F (205 degrees C). Grease each cup of one 12-cup muffin tin.
  • Stir egg, oil, 1/2 cup of the brown sugar, chocolate chips and 1/2 cup of the pecans into the oat and milk mixture.
  • Combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring until just moist. Fill each cup of one 12-cup muffin tin 2/3 full. Sprinkle tops with the remaining brown sugar and pecans.
  • Bake at 400 degrees F (205 degrees C) for 20 to 25 minutes.

½ cup granular sucralose sweetener (such as Splenda®)
¼ cup oat fiber
¼ cup golden flaxseed meal
2 teaspoons baking powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease the bottoms of 12 standard muffin cups.
