Steps:
- Heat a 10-inch saute pan over medium heat. Add the oats and cook, stirring occasionally, until toasted, about 3 minutes. Cool the oats in the pan for 2 to 3 minutes. Grind the toasted oats in a food processor until the consistency of whole-wheat flour, about 3 minutes.
- Heat a waffle iron according to manufacturer's directions.
- Whisk together the toasted oat flour, all-purpose flour, sugar, baking powder, salt, and baking soda in a medium bowl. Whisk the eggs and melted butter together in another bowl, then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Rest the batter for 5 minutes. Ladle the recommended amount of waffle batter into the hot iron. Close the iron top and cook until the waffle is golden on both sides and is easily removed from the iron. Repeat with remaining batter. Serve immediately or keep warm in a preheated 200 degree F oven until ready to serve.

- Combine the oat bran, whole wheat flour, all-purpose flour baking powder and salt.
- Combine the milk, oil, and egg yolk; add to the dry ingredients, stirring just until moistened.
- Beat egg whites at high speed with an electric mixer until stiff peaks form; gently fold into the batter.
- Coat a waffle iron with cooking spray, and allow waffle iron to preheat. Spoon 1 1/3 cups batter onto hot waffle iron, spreading batter to edges. Bake until lightly browned. Repeat with remaining batter.

- Combine the oat bran or oats and milk in a medium bowl and let it stand for about 3-5 minutes.
- Stir in the rest of the ingredients and mix it evenly. If the batter is too runny then add more oat bran, oats, or whole wheat flour until the batter becomes thicker. (If you're making pancakes then the batter does not need to be as thick.).
- Be sure to spray the waffle iron and keep in there for about a minute, adding about 5-10 seconds longer for each waffle.
- Top with applesauce, berries, whip cream and/or pure maple syrup, honey or berry/fruit flavored apple sauce would be good, too.

OAT BRAN AND RAISIN MUFFINS
A hearty, dense muffin that is healthier than most. Be sure to run the oat bran thru the blender before measuring; it makes it more like flour. Grind the nuts in a nut grinder. Do NOT use white, unbleached flour. It is hard to tell from looking at them if they are done, as they do not turn golden brown. They are similar to the color of milk chocolate both baked and unbaked.

- Preheat oven too 375 degrees.
- Grease and flour 12 holes of a large muffin tin.
- Mix the first six ingredients in a bowl; set aside and work on the wet items.
- In a second bowl beat the eggs, add the vanilla.
- Mix in the oil and then honey and molasses. Stir until well mixed. Add buttermilk. Mix.
- Pour wet ingredients into the bowl containing the dry ingredients. Mix until combined, but don't over stir it.
- Blend in walnuts that have been chopped small and raisins.
- Spoon into the tins about 3/4 full.
- Bake 15 minutes. If unsure of the exact temperature of your oven, try 13 minutes. They get 'dry' if you over bake them.
- Serve warm with butter.

- In a large bowl, stir together the oat bran, flours, baking powder, salt, and cinnamon.
- In a small sauce pan, warm the honey and butter over low heat until the butter melts.
