NUTTY BANANA CHOCOLATE CHIP BARS

1 very ripe banana
1 cup Bisquick™ Complete pancake & waffle mix
1/2 cup vanilla protein powder
1 egg
2 tablespoons brown rice syrup or real maple syrup
1/2 cup miniature semisweet chocolate chips
1 bag (2 oz) pecan chips
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 1-lb container)
18 dried banana chips, if desired

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In medium bowl, beat banana with electric mixer on medium speed until pureed. Add Bisquick mix, protein powder, egg and syrup; beat until well combined. Stir in chocolate chips and half of the pecan chips. Spread in pan. Sprinkle with remaining pecan chips.
  • Bake 18 to 25 minutes or just until center is set. Cool completely in pan on cooling rack, at least 30 minutes. Cut into 3 rows by 3 rows. Remove bars to cooling rack or plate.
  • Spoon frosting into small resealable freezer plastic bag; microwave on High 10 to 15 seconds. Cut off tiny corner of bag; squeeze bag to drizzle frosting over bars. Gently press 2 dried banana chips on top of each bar.

5 very ripe bananas
3/4 cup brown sugar
1/4 cup butter, softened
1/4 cup milk
2 eggs
1 3/4 cup flour
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1 tsp cinnamon
1 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Grease a casserole dish or deep rimmed baking sheet with shortening, butter, or nonstick baking spray.
  • Mash peeled ripe bananas in a large bowl.
  • Add in butter, eggs, and brown sugar and cream together.
  • Stir in milk.
  • Add in vanilla, cinnamon, baking soda, salt, and mix well.
  • Fold in flour and mix until there are no lumps - but to not overwork.
  • Add chocolate chips in right at the end, mixing through thoroughly.
  • Pour batter into prepared baking dish, and bake for 25 minutes or until toothpick inserted into the middle comes out clean (you might get melted chocolate on the toothpick, disregard that.)
  • Let cool completely before cutting.
  • Enjoy!

My family loves these - they are very cake like!

2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 c butter, softened
2/3 c sugar
2/3 c brown sugar
1 tsp vanilla extract
1 c banana, ripe and mashed (about 2 bananas)
1 egg
2 c chocolate chip morsels

Steps:

  • 1. Preheat oven to 350 degrees. Combine flour, baking powder and salt in a medium bowl. Beat butter, sugar, brown sugar and vanilla in a large bowl until creamy. Add bananas and egg to butter mixture and beat until combined. Gradually add flour mixture, beating until well combined. Stir in chocolate chips. Spread batter into a greased 9x13 (or 10x15) pan. Bake for 20-30 minutes or until wooden toothpick inserted in center comes out clean. Cool completely. If desired, sprinkle with powdered sugar (I put a litte in a sifter and shake it over the cake, just lightly dusting it). Cut into bars. Enjoy!!

A recipe (originally by Ann Tremont) my mother put in a cookbook that I have modified quite a bit. Every time I bring this to work, everyone wants a piece (and there's not enough to go around).

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup sugar
2/3 cup diced walnuts
2/3 cup mini chocolate chip
1 teaspoon vanilla extract
3 large ripened bananas
1/2 cup butter
2 whole eggs

Steps:

  • Hand mix flour, baking powder, baking soda, sugar, walnuts, chocolate chips, and vanilla extract in mixing bowl until chocolate chips and walnuts are evenly spread out throughout mixture.
  • In another bowl, mash bananas and add to the main mixing bowl.
  • Soften the butter (I microwave for 20 seconds) and add to the main mixing bowl.
  • Add two whole eggs to main mixing bowl.
  • Mix all ingredients together by hand until it has a batter-like consistency.
  • Pour into greased loaf pan.
  • Let mixture set for at least 20 minutes before baking (Preheat the oven to 325°F).
  • Bake at 325°F for 65 minutes (may take longer depending on the oven and altitude).
  • When finished baking, it is best to let it set overnight before serving.

  • An optional recipe: Instead of the chocolate chips, use 1 1/2 tsp of cinnamon to make Cinnamon Banana Nut Bread.

1 cup quick-cooking oats

1 cup unsalted butter, room temperature

1 cup packed golden brown sugar
2 large eggs
3 large mashed ripe bananas
2 teaspoons vanilla extract
1 (11 1/2 ounce) bag semi-sweet chocolate chips
1 cup pecans, toasted, chopped (optional)

Steps:

  • Preheat oven to 350°F Butter and flour 15x10x1-inch baking sheet. Blend first 4 ingredients in medium bowl. Beat butter in large bowl until fluffy. Add both sugars and beat until well blended. Add eggs 1 at a time, beating well after each addition. Beat in bananas, then vanilla. Stir in flour mixture, then chocolate and pecans.
  • Spread batter in prepared pan. Bake until tester inserted into center comes out clean and top is golden, about 45 minutes. Cool in pan on rack. Cut into 3x2-inch bars and serve.

1 cup butter or 1 cup margarine, cubed
1/2 cup water
2 cups all-purpose flour
1 1/2 cups sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
2 eggs
1 cup mashed ripe banana
1/2 cup buttermilk
1 teaspoon vanilla extract
1/2 cup chopped pecans or 1/2 cup walnuts
1 (8 ounce) package cream cheese, softened
1/2 cup butter or 1/2 cup margarine, softened
1 teaspoon vanilla extract
3 1/2 cups confectioners' sugar

Steps:

  • In a saucepan, bring butter and water to a boil.
  • Remove from heat; set aside.
  • In a mixing bowl, combine the flour, sugars, baking soda, eggs, bananas, buttermilk, and vanilla.
  • Beat until blended.
  • Carefully add butter mixture; mix well.
  • Stir in nuts.
  • Pour into greased 15x10x1 inch baking pan.
  • Bake at 350 degrees for 18-22 minutes or until a toothpick inserted near the center comes out clean.
  • Cool on a wire rack.
  • For frosting, in a mixing bowl, beat cream cheese and butter until light and fluffy.
  • Beat in vanilla.

1 cup brown sugar, divided
1 tablespoon water
1 tablespoon maple extract
2 egg yolks
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon (optional or to taste)
2 egg whites, room temperature
1 cup chocolate chips
1 cup chopped walnuts (can use more or less) or 1 cup pecans (can use more or less)

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a bowl cream together butter with sugar and 1/2 cup brown sugar until light and fluffy (about 4 minutes).
  • Add in water, maple extract and 2 egg yolks (reserve the whites in another bowl) beat for 2-3 minutes.
  • Mix together the flour, salt, baking soda and baking powder and cinnamon (if using) then add to the creamed mixture; mix until combined.
  • Spread the batter into the prepared baking dish.
  • Sprinkle the chocolate chips on top of the batter.
  • Beat the egg whites until soft peaks form, then add in in 1/2 cup brown sugar; blend well.
  • Spread the egg white mixture over the top of the chocolate chips.
  • Sprinkle the top with chopped nuts.
  • Bake for about 35 minutes or until the meringue is light brown.
  • Cut the bars while still hot.

1/3 cup mini chocolate chip

Steps:

  • In a large bowl, whisk together flour, baking powder, sugar, and salt.
  • In a medium bowl, combine bananas, oil, egg and vanilla.
  • Pour banana mixture into dry mixture along with nuts and chocolate chips, stir together.
  • Flour a working area and turn dough out onto it. Flour hands as dough is sticky. Form two 7 inch loaves about 2 inches wide.
  • Put loaves on cookie sheet lined with parchment paper.
  • Bake at 350 degrees for 25 minutes. Remove from oven and turn temperature down to 250 degrees.
  • Remove loaves from cookie sheet and let cool 10 minutes.
  • Cut loaves into 3/4 inch slices, return slices to cookie sheet.
  • Bake for an additional 18-20 minutes.
