MARITIME MOCK CHERRY PIE

This is a simple and easy pie to make and very tasty at that!! I Got the recipe from a regional magazine "Saltscapes".

Number Of Ingredients 7

1 (9 inch) pastry for double-crust pie
2 cups cranberries, chopped
1 cup raisins, chopped
1 1/2 cups granulated sugar
2 tablespoons flour
1 cup cold water
1 1/2 teaspoons vanilla

Steps:

  • Line a 9-inch pie pan with half the pastry. Make a lattice crust with remaining dough.
  • In a saucepan, combine cranberries, raisins, sugar, flour and water; bring to a boil, reduce heat and simmer 15 minutes, stirring occasionally. Remove from heat and let cool slightly . Stir in vanilla.
  • Turn filling into pastry-lined pie plate. Moisten edge with water and top with lattice crust.
  • Bake at 425F for 15 minutes. Reduce heat to 350F and bake another 20-30 minutes, or until crust is nicely browned and filling is bubbly.

1 Cup Fresh Canrberries
1/2 Cup Dark Raisins
1/2 Cup Sugar
1 TBSP. Flour
1/2 Cup Water
1/4 tsp. Vanilla
1 unbaked pie shell

Steps:

  • Place the first 7 ingredients in a pan mix well, and cook over low heat until just tender. (cranberries will pop) Add 1 TBSP. Vanilla and mix. Place in unbaked pie shell, and top with a round or with ribbons or pastry. Bake in moderate oven about 300 until pastry is golden brown. Approx. 30 minutes. Depending on your oven.

Here in New England, where cranberries are more plentiful (and less expensive) than cherries, my dear sister-in-law would make this pie every year. We lost her a few years ago, but will always remember her warm and loving personality through her recipes.

2 cups fresh cranberries
1 cup raisins
2 tablespoons flour
1 cup sugar
1 cup water
1 tablespoon vanilla
2 unbaked pie crusts

Steps:

  • Put cranberries and raisins into a blender and chop up together.
  • Sift flour and sugar together and add to fruit mixture.
  • Add water and vanilla.
  • Pour into an unbaked pie crust.
  • Top with crust and cut slits for steam to escape.
  • Bake at 425 degrees for 30 to 40 minutes.
  • 5 minutes before it is done, brush with milk and sprinkle with sugar.
  • Chill.
  • (The taste is better when it is cold).

Mock Cherry Pie is a New England tradition. My father and I attended a dinner party on Cape Cod one year and this pie was served. We have been looking for the recipe ever since and just found it. Now I am giving it to you!

1 ½ cups cranberries
1 ½ cups raisins
1 ½ cups white sugar
1 cup water
1 tablespoon all-purpose flour
1 tablespoon butter
1 ½ teaspoons vanilla extract
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a saucepan over medium heat, combine the cranberries, raisins, sugar, water and flour. Cook until cranberries open and mixture thickens. Allow to cool and stir in butter and vanilla.
  • Pour into prepared pie crust and cover with top crust.
  • Cut slits in top crust and bake for 10 minutes. Lower heat to 350 degrees F (175 degrees C) and bake for 35 minutes longer or until crust is golden brown.

¼ cup raisins
¾ cup water
2 cups cranberries
¾ cup white sugar
1 (15 ounce) package double crust ready-to-use pie crust

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place raisins and water in a saucepan, and allow to soak for 20 minutes. Stir in the cranberries and sugar; bring to a simmer. Cook until the cranberries are soft, about 10 minutes Pour into prepared pie shell, and cover with top piece of pastry. Seal the edges and flute if desired. Cut a few small holes in the top to vent steam.
  • Bake in preheated oven until golden brown, about 35 to 45 minutes. Allow to cool completely before serving.
