1/4 cup(s) vegetable oil
3 - squares (1 ounce each) unsweetened chocolate
1 1/4 cup(s) sugar
1/2 cup(s) applesauce
4 - egg whites or 2 eggs, lightly beaten
1 teaspoon(s) vanilla
1 cup(s) quick or old fashioned oats, uncooked
1 cup(s) all purpose flour
1 teaspoon(s) baking powder
1/4 teaspoon(s) salt (optional)
1 tablespoon(s) powdered sugar

Steps:

  • Heat oven to 350. Spray bottom of 13x9 inch baking pan with nonstick cooking spray. Heat oil and chocolate over low heat in large saucepan until chocolate is melted, stirring frequently. Remove from heat. Stir in granulated sugar and applesauce until sugar is dissolved. Stir in egg whites and vanilla until completely blended. Add combined oats, flour, baking powder, and salt, if desired; mix well.
  • Spread evenly into pan. Bake 22-25 minutes or until edges begin to pull away from sides of pan. Cool completely in pan on wire rack. Cut into bars. Store tightly covered. Sprinkle with powdered sugar just before serving.

Seriously Sinful Chocolate Fudge Brownies image

I have never known a more popular chocolate brownie! I originally made these while working at a prestigious local hotel...We used to serve them just warmed enough to melt the fudge icing with a dollop of good vanilla ice cream or whipped cream...delicious. I also used to make these every year for a local charity bake sale. Every year we put the price up and every year people used to queue up for them and buy them by the handful. Over the years I have had more requests to make these than for any other kind of cake. Everybody seems to love them...I hope that you do too.

6 1/4 ounces butter
5 ounces milk chocolate
15 ounces soft dark brown sugar
6 1/4 ounces flour
5 eggs
1 drop vanilla essence
chopped walnuts (optional)
4 ounces butter
6 tablespoons milk
4 tablespoons cocoa powder
18 ounces icing sugar

Steps:

  • Melt the butter and chocolate in a large saucepan.
  • Add the sugar and remove from the heat. Allow to cool slightly.
  • Add the flour, eggs, vanilla essence and nuts if using them.
  • Beat until smooth. Pour into a lined tin. Cook in a moderate oven until an inserted skewer comes out clean.
  • For the icing:.
  • Melt the butter with the milk. Add the icing sugar and sifted cocoa powder.
  • Beat until smooth. Cool slightly then spread over the cooled brownie.
  • Allow icing to set and then cut into squares.
  • NB-These freeze very well.

2/3 cup butter or 2/3 cup margarine
1 1/2 cups sugar (reduce to 1-1/4 cups for a less sweeter taste)
1/4 cup water
4 cups semi-sweet chocolate chips, divided (32 ounces)
2 teaspoons vanilla
4 eggs
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Set oven to 325 degrees F.
  • Grease a 13 x 9-inch baking pan.
  • In a heavy saucepan, bring butter, sugar and water to a boil, stirring constantly until the butter is melted and sugar is dissolved (about 3 minutes).
  • Remove from the heat, with a wooden spoon, stir in 2 cups chocolate chips until melted; cool slightly, beat in vanilla.
  • In a mixing bowl,whisk eggs, gradually add in the chocolate mixture, beating with a wooden spoon until completely mixed.
  • Mix together flour, baking soda and salt; add to the egg/chocolate mixture; mix well to combine.
  • Stir in the remaining chocolate chips.
  • Spread into prepared baking pan.
  • Bake for 35-40 minutes (don't over bake).
  • Cut into squares.
  • Note: If desired, chopped walnuts may be added.

Candy topping of your choice

Steps:

  • Prepare brownie mix as directed. Place 1/2 of the batter in an 8X8 pan. Place the Symphony bars on top and cover with the remaining batter.
  • Bake according to directions.
  • When brownies have cooled, spread glaze on top and sprinkle candy bits on.
