This ice cream has a crispy cinnamon coating just like the fried ice cream served at Mexican restaurants, but minus the oily mess. Make ahead of time and freeze until serving. -Tim White, Windsor, ON

1 quart vanilla ice cream
1/4 cup packed brown sugar
1 tablespoon butter, melted
1 teaspoon ground cinnamon
2 cups crushed cornflakes
Optional: Whipped cream and caramel ice cream topping

Steps:

  • Preheat oven to 350°. Using a 1/2-cup ice cream scoop, place 8 scoops of ice cream on a baking sheet. Freeze until firm, about 1 hour. Meanwhile, combine brown sugar, butter and cinnamon. Stir in cornflakes. Transfer to an ungreased 15x10x1-in. baking pan. Bake until lightly browned, 4-6 minutes. Cool completely., Roll ice cream balls in crumb mixture. Cover and freeze until firm, at least 1 hour. If desired, serve with toppings.

1 cup cornflake crumbs
1/3 cup sugar
1/3 cup butter, melted
3/4 teaspoon ground cinnamon
1/2 gallon butter pecan ice cream, softened, divided
4 tablespoons honey, divided

Steps:

  • In a small bowl, combine the cornflake crumbs, sugar, butter and cinnamon; set aside 1/2 cup. Press remaining crumb mixture into a greased 9-in. springform pan. Spoon half of the ice cream over crust. Sprinkle with reserved crumb mixture; drizzle with 2 tablespoons honey. Cover and freeze for 2 hours. , Top with remaining ice cream. Cover and freeze for 8 hours or overnight. , Remove from the freezer 5 minutes before serving. Remove sides of pan; drizzle with remaining honey.

Can't remember where I found this recipe, but it's great for Mexican night, or Cinco De Mayo!! (New Note: If you use the new Special K cereal with cinnamon and pecans, this is REAL delicious! Add the sugar and not as much cinnamon, no butter, and you don't have to bake it! Very crunchy and SO DELICIOUS!!! I used about 1 1/4 C Special K.)

1/2 quart vanilla ice cream
2 1/2 cups corn flakes cereal, crushed
1 tablespoon butter
2 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Make 8 vanilla ice cream balls and freeze on wax-lined cookie sheet for about an hour.
  • Mix remaining ingredients and spread on a cookie sheet to bake at 350°F until crisp and golden.
  • (Cooking times will vary according to taste and oven temps.) Let cool.
  • Roll ice cream balls in the cooled mixture and refreeze for 2 hours more.
  • Serve with honey drizzled over each and enjoy!

2 cups ice cream, any flavor
1 1/2 cups granola cereal, crushed
2 teaspoons butter, melted
2 tablespoons honey
1/8 teaspoon cinnamon

Steps:

  • Using ice cream scoop, make four 1/2 cup scoops of ice cream and freeze until very firm, about 2 hours.
  • Meanwhile, in medium bowl combine crushed cereal and melted butter until blended.
  • Remove ice cream balls from freezer and roll each in the cereal mixture, coating completely.
  • Return coated balls to freezer and freeze at least one hour longer.
  • When ready to serve, combine honey and cinnamon in small saucepan and heat over low heat until warm.
  • Place ice cream balls in serving dishes, drizzle with warm honey mixture, and serve immediately.

This recipe is definitely a special occasion recipe, but it is SO incredibly delicious you will thinking about it all year! A fun twist on traditional fried ice cream, with no deep frying!

2 cups Rice Krispies
1 cup finely chopped nuts
1 cup coconut
1 cup brown sugar
1/2 cup butter
1/2 gallon vanilla ice cream

Steps:

  • Mix first 4 ingredients in separate bowl.
  • Melt butter in medium pot. When melted, add above ingredients and stir until brown sugar is dissolved. (Do not leave on too long or brown sugar will burn).
  • Remove from heat and let mixture cool for several minutes.
  • Put half the mixture in a 9x13 pan and press down with fingers to make a solid crust on the bottom.
  • Add the ice cream evenly on top of the first layer of mixture.
  • Add the rest of the mixture on top of the ice cream.
  • Cover with tin foil and freeze for at least 1 hour. (2 hours is preferable).
  • Remove and drizzle with chocolate or caramel sauce if desired.
  • Enjoy!
