NORTHERN THAI BRAISED BEEF CURRY WITH NOODLES
Steps:
- 1. For the braised ribs Place all ingredients in a slow cooker. Let cook 8 hours. Remove ribs and shred. Strain the broth through a fine mesh strainer and reserve 1 cup for curry.
- 2. For the curry Spoon 3 tbsp. cream of the top of coconut milk Place in a wok or large pot. Mix in the curry pastes and cook until well incorporated. Add the lime juice. Stir in the reserved beef broth and the coconut milk.
- 3. Stir in the fish sauce tamarind paste and sugar. Let simmer about 10 minutes To serve Add noodles to bowl Ladle in the broth Top with scallions and beef Top with garnishes of cilantro and fried shallots

Steps:
- Clean and cut lettuce into bite size pieces. Keep refrigerated until ready to use.
- Separate noodles into strands and stir-fry in heated non-stick wok or skillet. Add 4 tbsp black soy sauce, and stir until noodles become brown and a little crispy on the bottom. Remove to a bowl, and set aside.
- Heat oil in the same wok, and sauté garlic until aromatic. Add ground beef and stir to break up meat and brown it. Add curry powder and ground pepper. Mix well until beef is done. Add chopped onion and tomatoes. Stir well and saute about 5 minutes with the beef mixture.
- Add chicken broth to beef mixture and add seasoning ingredients. Taste and adjust for proper balance of sweet/sour/salty.
- Mix cornstarch and water, and make a slurry. In a slow stream, add slurry to broth in pan, stirring constantly to keep it from getting lumpy. Boil until the sauce is thickened. Lower heat and simmer a few minutes.
- To serve, place lettuce on plates. Put noodles on the lettuce. Put a scoop of beef sauce on top of the noodles, sprinkle with ground pepper and a little bit of Sambal oelek.

- To Make Curry Pour the 200ml TCC Premium Coconut Cream in a large heavy-based saucepan over medium-low heat. Add Valcom Yellow Curry Paste, turmeric powder and black cardamom powder. Cook and stir for 2-3 mins until oil separates on the surface. Then, add the chicken and stir until it is coated with coconut and chilli paste. Add the remaining 200ml TCC Premium Coconut Cream with ½ cup water. Stir the chicken until the curry sauce is mixed through, then reduce heat to low and cook for 10 mins. Add chicken stock powder, brown sugar and Squid Brand Fish Sauce into the pot, then stir until mixed through. Simmer for 15 mins or until chicken is cooked through.
- To Make Crispy Noodles Topping Pour vegetable oil in a small pot over medium heat. When the oil is hot, add 100g egg noodles to deep fry until light golden and crispy. Remove and set aside to drain oil.
- To Serve Pour about 6 cups of water in a medium pot then cook egg noodles following the packet instructions. Drain and refresh under cold water. Divide noodles into individual serving bowls. Ladle chicken curry over noodles. Top with toppings and serve with lime/lemon wedges. Enjoy your creamy northern Thailand style curry noodles.
