Quick and easy vegetarian main dish made from pantry items in just a few minutes. Perfect for summer picnics or fast weeknight meals. Serve on bread, buns, crackers, pita bread, or plain.

½ cup chopped dill pickles
2 stalks celery, chopped
3 tablespoons chopped onion
2 tablespoons dill pickle juice
1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed
½ cup rolled oats
3 tablespoons mayonnaise
1 teaspoon Dijon mustard

Steps:

  • Pulse pickles, celery, onion, and pickle juice together in a food processor until evenly chopped; add chickpeas and pulse until beans are roughly chopped. Transfer mixture to a bowl.
  • Stir oats into chickpeas mixture until well mixed. Add mayonnaise and mustard; stir well. Let sit for flavors to blend, about 10 minutes.

15 oz canned chickpeas (drained)
1/2 tsp salt (or to taste)
1/4 tsp pepper (or to taste)
1/4 cup vegan mayonnaise (or Greek yogurt)
1 tsp dijon mustard (grainy or smooth)
1/4 cup red onion (finely diced)
1/4 cup celery (sliced)
2 tbsp pickles (dill or sweet, finely diced)
1/2 tsp capers (finely chopped)
1 tbsp nori (finely chopped)
1 tbsp lemon juice
bread (any type you like)
cherry tomatoes (halved)
butter lettuce
fresh dill
cucumber (slices, about 1/4" thick)

Steps:

  • Mash the chickpeas with salt and pepper in a mixing bowl. You can mash it as smooth or textured as you prefer.
  • Add the rest of the no-tuna salad ingredients to the bowl and mix. Taste for seasoning, and add salt and/or pepper as needed. Build your sandwiches with your desired toppings.

While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice (optional)

Steps:

  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

Kosher salt and freshly ground black pepper to taste
Sliced sandwich bread of choice

Steps:

  • In a medium bowl, combine the tuna, mayonnaise, celery, onion, bell pepper, capers and lemon juice. Mix with a fork until thoroughly combined. Season to taste with salt and pepper. Serve on the sandwich bread of your choice.

I came up with this recipe while experimenting with different ingredients in tuna salad. It is pretty low-fat for the most part, and healthy. I say that it's low fat for the most part because you can use regular ingredients, or low-fat-whatever suits your tastes. I just like it because it has no mayo-I dislike it very much.

2 (5 ounce) cans tuna
1 teaspoon mustard
1 tablespoon sour cream (regular or low-fat)
1 dash salt
1 dash pepper
1 dash cayenne pepper
1 teaspoon pickle relish
1 leaf lettuce
1 slice tomatoes

Steps:

  • You can add different amounts of sour cream and mustard to adjust for however moist you like it, and the flavor. I would start out with the amounts above, and go from there.
  • Empty the tuna into a bowl for mixing.
  • Add the sour cream and mustard.
  • Adjust the amounts for your taste. Add more mustard for zest, more sour cream for moisture.
  • Add the salt and pepper, and relish and cayenne if you wish.
  • Put lettuce, tomatoes, etc. to your liking.
  • Once you have it just right, toss it on your bread of choice, and throw some potato chips on the side. :). This is also good on crackers for parties!
