Creamy Cheesy Spinach Dip image

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese
½ cup shredded mozzarella cheese
¼ cup shredded Cheddar cheese
2 dashes Worcestershire sauce
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.

1 (16 ounce) jar Alfredo sauce
1 ½ (8 ounce) packages cream cheese, softened
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 red bell pepper, chopped
½ red onion, chopped
1 cup shredded mozzarella cheese
½ cup grated Romano cheese
1 cup shredded Cheddar cheese
5 (6 inch) pita breads, cut into wedges
1 tablespoon vegetable oil
salt to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the Alfredo sauce, cream cheese, spinach, red bell pepper, red onion, mozzarella cheese, and Romano cheese into a blender. Cover the blender and blend until well-mixed.
  • Pour dip into a baking dish; sprinkle the Cheddar cheese on top.
  • Bake in the preheated oven until bubbly and the cheese is melted, about 30 minutes. The dip will be runny but will thicken as it cools.
  • Meanwhile, arrange the pita wedges on a baking sheet.
  • Drizzle with vegetable oil, and season with salt.
  • Bake in the preheated oven until pita wedges are toasted, about 10 minutes. Serve with dip.

3 Ingredient Spinach Dip (No Mayo) image

I got this recipe from my sister-in-law, not sure where she got it from. It's very easy to throw together. It not too rich like other spinach dips. I made the mistake once of using fat free sour cream and it made the dip very loose & watery so I don't recommend it. You can serve this with french bread, hawaiian bread, and/or veggies. Oh, and make sure you use the Knorr brand vegetable recipe mix. I use another brand once and it ruined my batch of dip so I had to toss it out. I recommend chilling at least 20 minutes in order to rehydrate the veggies in the soup mix, otherwise, you'll have a crunchy dip until they do rehydrate. My SIL serves it right away so it's up to you. I had to guess at the servings and the yield size so the nutritional stats are probably off, sorry.

6 tablespoons butter
1/2 teaspoon garlic powder

1 tablespoon butter
1 cup chopped fresh mushrooms
2 garlic cloves, minced
1-1/2 cups mayonnaise
1 package (8 ounces) cream cheese, softened
1 cup shredded part-skim mozzarella cheese, divided
1/2 cup plus 2 tablespoons grated Parmesan cheese, divided
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 cup chopped sweet red pepper

Steps:

  • Place a 6-in. cake pan or small ovenproof saucepan in the center of a 10-in. cast-iron skillet. Cut each roll into thirds; roll each piece into a ball. Place along outer edge of skillet. Gently stack remaining balls on top of bottom layer, leaving some space between them. Cover and let rise until almost doubled, about 30 minutes., Preheat oven to 400°. Microwave butter, garlic powder and red pepper flakes, covered, until butter is melted. Brush half of butter mixture over dough. I have a mayo phobia and was ecstatic to find an artichoke cheese dip that is completely mayo-free... This is a great recipe for parties. If making for an appetizer for a smaller gathering for 4-6 people, I would recommend scaling back the recipe and making 2/3 unless you want leftovers (which are still delicious by the way!). Serve with sliced baguette, tortilla chips, or crudites.

3 (14 ounce) cans water-packed artichoke hearts
6 tablespoons unsalted butter, room temperature
1/4 cup all-purpose flour
2 cups whole milk, warmed
2 teaspoons coarse salt

1 cup parmesan cheese, grated
1 cup gruyere cheese, grated
1 large onion, finely chopped

Steps:

  • Thinly slice remaining artichokes; pat dry.

2 (10 ounce) packages spinach, defrosted and squeezed dry in kitchen towel (chopped)
1 1/2 cups shredded Italian cheese blend (provolone, Parmesan, mozzarella and asiago, available in 10 ounce pouches on the dairy aisle of your)
salt & freshly ground black pepper
1 round loaf crusty bread, top removed and cubed, bottom hollowed out to use as serving bowl
1 loaf baguette (sliced at bakery or bread counter in market)

Steps:

  • To a medium saucepot, preheated over moderate heat, add about 2 tablespoons extra virgin olive oil, 2 turns of the pan in a slow stream. Add butter to oil. When butter melts, add garlic and onions to the pot. Sprinkle in thyme leaves.
  • Saute 2 minutes, add chopped red pepper. Saute mixture a minute more. Sprinkle in flour, stir to coat vegetables. Cook flour a minute. Whisk in wine and reduce by half. Whisk in stock and thicken sauce 1 minute. Stir in half-and-half or cream. When sauce returns to a bubble, add artichokes, spinach and cheeses. Keep stirring until cheeses melt and sauce is well combined. Add salt and pepper and adjust seasonings to your taste.
  • Pour dip into hollow bread bowl on serving platter and surround with sliced multi or whole grain bread for dipping. Reserve extra dip to warm and refill as necessary. Cut up bread bowl when baguette slices are gone. The bowl is the best part as it absorbs juices from the dip.
