NO KETCHUP BROWN GRAVY MEATLOAF RECIPE
Steps:
- preheat oven to 350F
- In a medium-sized skillet, heat one tbsp olive oil, and brown diced onions, about 7 minutes. When brown, add chopped garlic and cook for two more minutes. Add tomato paste, fresh thyme, and Worcestershire sauce
- Mix in the chicken broth and cook the mixture for 3-4 minutes or until reduced to half the liquid. Remove from heat and set aside to cool.
- In a mixing bowl, add ground beef, eggs, and breadcrumbs
- When cooled, add tomato-onion mixture to the bowl
- Mix everything very well. Line a baking sheet with parchment paper and form the meat mixture into a loaf. (you can use a loaf pan too)
- Bake the meatloaf for 45-50 minutes, or until fully cooked. Make brown gravy while meatloaf is baking. (I used Mccormick brown gravy mix)

- Preheat oven to 350.
- Mix ground beef, onion, salt, pepper and garlic powder in a bowl.
- Mix in bread, milk, egg, 1 tbsp mustard, and 1/4 cup ketchup.
- Press mixture into a loaf and put in baking dish.
- In a small bowl, stir together 1 tbsp mustard, 1/4 cup ketchup and 2 tbsp brown sugar. Pour on top of the meat loaf within the last 20-30 minutes of cooking.
- Bake for about an hour until it's cooked through.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix onion, bell pepper, bread crumbs, hot pepper sauce, egg, salt, and pepper together in a large bowl. Add ground beef; mix.
- Press beef mixture into a loaf pan. Sprinkle brown gravy mix over meat.
- Bake in preheated oven until cooked through and browned, 1 hour. Remove from oven and let rest for 10 minutes before serving.

TURKEY MEATLOAF (NO KETCHUP OR TOMATO)
I LOVE this meatloaf!!! I finally found a turkey meatloaf that has great flavor and isn't dry! Love it in sandwiches too! I know it sounds strange to add stuffing and beef gravy to a turkey meatloaf, but it sure does work well for me. This came from somewhere on the web - can't remember where.

Steps:
- Heat oven to 350.
- Pour 1/4 cup gravy in a large bowl.
- Add meat, stuffing and eggs- mix lightly.
- Shape mixture into a loaf and place in a baking pan.
- Pour 2/3 of the remaining gravy over the meatloaf.
- Bake for about 50 minutes under a loose foil cap, then remove and cook about another 50 minutes until top is browned-
- If desired, potatoes and carrots could be added to the pan around the meatloaf.
- If I do add them, I mix some water with the remaining gravy and pour it over the potatoes.
HOMESTYLE MEATLOAF WITHOUT THE KETCHUP!
This is a meatloaf recipe I came up with because I don't like to put ketchup in my meatloaf (though you certainly could). This recipe got rave reviews from my family. It is great served with garlic mashed potatoes and salad!

Steps:
- Preheat oven to 350°F.
- In a large bowl, combine ground beef, onion, garlic, and crackers.
- Add 10 oz. V8 vegetable juice (1/2 a can), eggs, salt, pepper, and canned diced tomatoes.
- Knead all ingredients until they are thoroughly dispersed.
- Put mixture into a loaf pan.
- Spoon tomato sauce evenly over the top. I also add a bit more V8 vegetable juice to the top.
- Bake for 1 hour or until the middle is thoroughly cooked.
- Cut into slices and serve.
