No-Cream Alfredo Sauce image

Traditional Roman fettucine Alfredo doesn't contain a drop of cream or milk, so whether you have none in your refrigerator or you are a traditionalist, this is the recipe for you. Just because there's no cream, however, doesn't mean it isn't over the top with richness and flavor.

Yield 4 to 6 servings

Kosher salt
12 tablespoons (1 1/2 sticks) unsalted butter, cut into small cubes
6 ounces Parmesan, freshly grated (about 2 cups)
1 pound dried fettuccine
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to boil. Put the butter and cheese in a large bowl and set aside.
  • Add the fettuccine to the boiling water and cook, stirring occasionally, according to the package instructions for al dente. Reserve 1 cup of the pasta water, then drain the pasta and add it to the large bowl. Using tongs, gently toss the pasta with the butter and cheese, adding pasta water as necessary to create a creamy looking sauce. Top with a few grinds of pepper.

1 t minced garlic
1 t minced onion
3 T fresh basil, finally chopped
1/2 t salt
pepper if tolerated

Steps:

  • Heat oil in saucepan over med heat. Add flour, whisking until smooth. Add remaining ingredients, whisking until sauce has thickened. Use as a topping for pasta, baked potato or chicken. Variation, add cooked chicken, broccoli florets or red bell pepper.

SUPER EASY AND CREAMY! You can substitute low-fat ingredients with success. I found this recipe somewhere (???) online, YEARS ago and am posting it here for safe keeping! The key is the FRESH Parmesan and parsley. I add Johnny's Garlic Spread and Seasoning and omit the garlic powder, salt and pepper, but am posting the original recipe for you to tweak to your liking!

1 cup ricotta cheese, at room temperature
3 tablespoons milk
1/4 cup parmesan cheese (freshly grated)
2 tablespoons unsalted butter
1/4 cup fresh parsley (minced)
1/2 teaspoon garlic powder
salt and pepper
1/2 lb fettuccine

Steps:

  • Cook fettuccine per package directions.
  • Put ricotta, milk, parmesan, and seasoning in blender and blend until creamy.
  • When pasta is done, drain and add butter to it.
  • Add ricotta mixture to the hot, buttered pasta and toss with fresh parsley.
  • Serve with additional grated parmesan.

3 minced garlic cloves
2 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
3/4 cup mozzarella cheese
1/2 cup grated asiago cheese
1/2 cup grated romano cheese
2 teaspoons dried basil

Steps:

  • On medium low, heat the butter in a pot.
  • Add the garlic and pepper. Cook until garlic is golden brown.
  • Reduce the heat to low.
  • Slowly add the cream, stirring continuously until all the cream is in the pot.
  • Simmer the cream for five minutes. Then stir in the parmesan, asiago, romano and the spices.
  • Add the mozzarella and stir until smooth. Simmer for five more minutes then turn off the heat. serve as soon as possible.
