BARILLA NO-BOIL LASAGNA

This is the best lasagna ever!! The noodles are so nice and thin and there is NO PREBOILING!! I will never purchase any other lasagna other than Barilla. I've been making this now for 3 years and everyone agrees--the recipe makes the very best! The instructions are right on the back of the lasagna box. I usually make multiple batches and freeze them. Its a great housewarming or "new baby" meal for a friend!

1 (9 ounce) box barilla no-boil lasagna noodles
2 eggs
1 (15 ounce) container ricotta cheese
4 cups shredded mozzarella cheese
1/2 cup parmesan cheese (optional)
1 lb ground beef or 1 lb sausage, browned
2 (24 ounce) jars spaghetti sauce or 2 (24 ounce) jars pasta sauce
parsley (to garnish)

Steps:

  • Preheat oven to 375.
  • In bowl, combine beaten eggs, ricotta cheese and TWO cups of the mozzarella cheese and parmesan.
  • If you choose not to use the parmesan, just add more mozzarella.
  • Set aside.
  • In a 13X9X3 pan, spread 1 cup of sauce on bottom of pan.
  • Layer in the order, 4 uncooked lasagna noodles (they will overlap), then 1/3 part of the ricotta cheese mixture, half the browned meat, 1 cup mozzarella cheese, and 1 cup of spaghetti sauce.
  • Next layer, 4 uncooked lasagna noodles, 1/3 part of the ricotta cheese mixture, and 1 1/2 Cups sauce.
  • Next layer, 4 uncooked lasagna noodles, remaining ricotta mixture and remained meat, 1 cup of sauce.
  • For top layer, 4 uncooked lasagna noodles, remaining sauce, and remaining 1 cup mozzarella.
  • Bake covered with foil for 50-60 minutes.
  • Uncover and continue cooking until all the cheese is melted on the top (about 5 minutes).
  • Let stand 15 minutes before serving.
  • If you are using a 13X9X2 pan---just make 3 layers to avoid boiling over.

This is a really good basic lasagna recipe. It's based on one I found somewhere, but I've tweaked it quite a bit to suit my own tastes. I like it as written with italian sausage, but you can substitute ground beef if you must.

1 1/4 lbs Italian sausage, casings removed (I use spicy)
1 (28 ounce) jar spaghetti sauce, of your choice
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups water
1 garlic clove, chopped
1 teaspoon italian seasoning
12 ounces ricotta cheese (about 3/4 small container)
3 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
1 tablespoon parsley
1/2 teaspoon ground black pepper
1 (8 ounce) package lasagna noodles, uncooked

Steps:

  • Heat oven to 350.
  • In large pan, brown italian sausage; drain.
  • Add spaghetti sauce, diced tomatoes, water, garlic and italian seasoning. Cover and simmer for 10-15 minutes.
  • In medium bowl, combine ricotta, 2 cups of the mozzarella, parmesan, eggs, parsley and pepper. Mix well.
  • Pour about 1 cup of the sauce on bottom of 9x13 pan.
  • Arrange 3 uncooked lasagna noodles over sauce; cover with about 1 cup sauce.
  • Spread 1/2 the cheese filling over sauce.
  • Repeat layers of lasagna, sauce and cheese filling.
  • Top with layer of lasagna and remaining sauce; sprinkle with remaining 1 cup mozzarella cheese.
  • Cover with foil and bake at 350 for 45 minutes.
  • Remove foil; bake an additional 15 minutes.
  • Let stand 10 minutes before cutting.

No pre-cooking needed but your guests will never know! My adjustments to this recipe add more sauce and more cheese since I always seemed to run short when assembling this dish. This is a tried and true winner on Bridge night. For the best flavor I recommend Prego sauce flavored with Italian sausage - or brown some Italian sausage along with the ground beef for the sauce.

4 cups spaghetti sauce
1 1/2 cups water
1 (15 ounce) container ricotta cheese
3 cups shredded mozzarella cheese

1/8 cup dried parsley (or 1/4 c. fresh chopped parsley)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
6 ounces dry lasagna noodles

Steps:

  • Heat oven to 350°F.
  • In a 5 quart saucepan, brown the meat then drain the fat.
  • Add the spaghetti sauce and water.
  • Simmer about 10 minutes.
  • While the sauce simmers, mix ricotta cheese, 1 1/2 cups Mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper.
  • Pour a generous 1 cup of the sauce on the bottom of a 13x9x2-inch baking dish.
  • Arrange a single layer of uncooked lasagna noodles over sauce.
  • Cover with a generous 1 cup of sauce; spread half of cheese mixture over sauce.
  • Repeat layers of noodles, sauce, and cheese filling.
  • Top with a layer of lasagna noodles and the remaining sauce then sprinkle with remaining Mozzarella cheese.
  • Cover with aluminum foil and bake for 45 minutes.
  • Remove foil and bake an additional 15 minutes or until the cheese begins to turn golden on top.
  • Let stand 10 minutes before cutting.

1 tablespoon olive oil
1 pound mild Italian sausage, casings removed
2 cups Classic Marinara Sauce, recipe follows
12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls
3/4 cup ricotta
1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

1 onion, chopped
1 teaspoon salt
1 1/2 teaspoons oregano
14 ounces spaghetti sauce
1 (28 ounce) can whole tomatoes or 1 (28 ounce) can chopped tomatoes
1 (12 ounce) package low fat cottage cheese
1/3 cup parmesan cheese, grated
1 -2 cup mozzarella cheese, grated
1/2 package uncooked lasagna noodle

Steps:

  • Brown meat, drain all but 2 T.
  • fat.
  • Add onion, salt& oregano.
  • Cook 5 minutes.
  • Stir in spaghettii sauce and tomatoes& heat through.
  • Spoon 1/3 meat mixture into 9x13 pan.
  • Cover w/ a single layer of uncooked noodles.
  • Spread another 1/3 meat mixture onton the noodles.
  • Add cottage cheese, half mozzarella cheese& the Parmesan cheese.
  • Arrange a second layer of noodles on top.
  • Spoon remaining meat onto the noodles.
  • Top w/ remaining mozzarella cheese.
  • Bake covered at 375 for 1 hour.
  • Remove cover& bake an additional 10 minutes, or until cheese is melted& golden brown.
  • Let stand 10 minutes before serving.

Cheesy goodness! I adapted this from the recipe on the Barilla no-boil noodle box. I increased the amount of cheese, and used a homemade sauce because I think canned sauces are too sweet.

9 ounces no-boil lasagna noodles (1 box)
2 eggs
28 -32 ounces nonfat cottage cheese
4 cups shredded part-skim mozzarella cheese
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1 tablespoon olive oil
1 lb bulk Italian sausage
1 small diced onion
2 garlic cloves, minced
2 (14 ounce) cans stewed tomatoes or 2 (14 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
3/4 cup red wine
1/2 cup water
2 teaspoons dried oregano, divided
2 teaspoons dried basil, divided
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 375.
  • Lightly beat eggs in a medium bowl. Add cottage cheese, 2 cups of mozzarella, and the parmesan or romano cheese. Add the pepper and 1 tsp each of dried basil and oregano and stir well.
  • Heat olive oil in a large skillet over medium heat - swirl to coat skillet. Add sausage and onion, and cook until sausage is no longer pink, then add garlic and cook briefly (one minute or so).
  • If there's extra oil in the pan at this point, drain and discard.
  • Stir tomato paste into sausage mixture and then slowly stir in red wine and water.
  • Process canned tomatoes in food processor until finely chopped. Add with ALL liquid to skillet and stir.
  • Add remaining 1 tsp each of oregano and basil and heat just until bubbling, then remove from heat.
  • Spread 1 cup of sauce in bottom of pan.
  • To layer lasagne:.
  • In 13 x 19 dish layer 1/4 of noodles, 1/3 of cheese mixture, and 1 1/4 c of sauce.
  • Repeat layers twice.
  • Then top with remaining 1/4 of noodles, remaining sauce, and 2 cups of mozzarella.
  • Cover tightly with foil and bake for 55 minutes. Uncover and bake another 5 minutes so top can brown slightly.
  • Let stand 15 minutes before cutting.
