NO-BAKE EASY ENERGY BARS
Designed for hiking and backpacking trips, these bars are high in protein and clean carbs, do not require refrigeration, and travel very well in the pack. I recommend using non-pasteurized (living) honey, natural peanut butter with as little additives as possible, and quick oats.

Steps:
- Combine the peanut butter and honey in a large nonstick pot and warm over low heat until runny and mixed.
- Mix in the oatmeal and protein powder.
- Do not bake, but heat enough to mix nicely.
- Press into a 9x9 inch pan and let cool (to make cutting them easier, you could stick the covered pan into the refrigerator for a few hours).
- Slice into 16 bars and package in sandwich baggies.

This is my healthy version of peanut butter balls. This is super easy! Make substitutions and use whatever you have available in your kitchen. Just be careful to watch your ratios. Enjoy!

- Mix peanut butter, oatmeal, sunflower seeds, raisins, and honey.
- Roll mixture into balls.
- Mix equal amounts of flax seeds and wheat germ in a bowl and roll the balls in this mixture (optional).
- Let balls sit in the refrigerator for at least 30 minutes.
- Additional Notes:
- You can make some substitutions with the ingredients. For example, substitute the raisins for chocolate chips or chopped nuts instead of sunflower seeds. There are many possibilities, just be careful and keep the ratios consistent.
- Also, I used natural peanut butter which caused my mixture to be more dry. If this is the case add a little milk; about 1/2 tablespoon at a time.

- For optional ingredients, separate mixture into equal portions and add desired ingredient.

- If desired, with 8 to 10 minutes left to go, remove bar from the freezer, and prepare the coffee crunch. Stir in the honey and dissolved coffee into a small nonstick pan. Let cook, stirring occasionally with a wooden spoon, over medium-low heat for about 6 to 8 minutes. Remove from heat and stir in the vanilla if desired. Let cool for 1 to 2 minutes (being careful not to let mixture harden at this point).
- Cut into 12 bars and serve! OR drizzle with the coffee mixture if desired. In the latter case, place energy bar pan back into the freezer for another 5 to 10 minutes or until coffee mixture has solidified (it should become like a hard coffee "toffee"). Serve and enjoy!
- Energy bars can also be wrapped individually in plastic wrap for storage in the refrigerator (best) or at room temperature.
