1/4 cup cocoa
2 cups sugar
1/2 cup milk
1/2-1 cup margarine
1/2 cup peanut butter
3 cups quick-cooking oatmeal
1 teaspoon vanilla
1/8 teaspoon salt

Steps:

  • Bring first 4 ingredients to a boil.
  • Cook for 1 minute.
  • Remove from heat.
  • Add remaining ingredients.
  • Mix well and drop by teaspoon onto wax paper.
  • Let cool.
  • Note: After I have let them cool, I put them in the fridge.
  • They seem to harden better, plus they taste good that way.

  • Combine all the ingredients except the coconut and stir well. Chill the mixture for 1 to 24 hours. Form the chilled mixture into tiny balls and then roll the balls in the coconut.
  • Refrigerate the cookies until ready to serve them. Makes about 3 dozen cookies, obviously depending on how large you make the balls.

Steps:

  • Line two baking sheets with parchment paper and set aside.
  • In a large bowl, mix the oats and coconut flakes well and set aside.

  • Remove from heat and add in the vanilla extract, stirring until well combined.

Steps:

  • Place the oats and 1 cup of shredded coconut in a large bowl. Set aside.
  • Combine the butter, sugar, milk, cocoa, and salt together in a large saucepan over medium heat. Whisk until the butter melts, then bring to a boil. Allow to boil for 1 minute without whisking.

3 Tbsp Natural creamy almond butter, (divided)
2 Tbsp Coconut oil, (at room temperature (should be the consistency of soft butter))
2 Tbsp Honey
1 Tbsp Dairy-free mini chocolate chips (+ more for drizzling, if desired)

Steps:

  • In a large bowl, stir together the coconut, turmeric and sea salt.
  • In a medium, microwave-safe bowl, combine 2 Tbsp of the almond butter, along with the coconut oil and microwave until smooth and melted. Whisk together.
  • Pour the oil mixture, along with the honey onto the coconut flakes and mix well, it will be quite moist.
  • Microwave the additional Tbsp of almond butter until it JUST begins to melt - you want it to still be thick and not liquid - only 5-10 seconds or so. Stir it into the coconut flakes until well mixed and the flakes begin to stick together. Stir in the chocolate chips.
  • Scrape the sides of the bowl down so the mixture is all packed together at the bottom of the bowl and refrigerate until the coconut oil begins to firm up, about 15-20 minutes.

10 oz semi-sweet chocolate chips (can use milk chocolate or dark chocolate if you prefer)
1 tbsp + 1 tsp coconut oil
3/4 cup rolled oats (old fashioned or quick oats both work well)
1/2 cup coconut flakes (can use sweetened or unsweetened depending on how sweet you want your cookies)

Steps:

  • Line a 9x13 sheet pan or baking dish with parchment paper. Set aside.
  • Add chocolate chips and coconut oil to a small saucepan or pot on low heat. Melt, stirring frequently, until smooth. Then remove from heat so it doesn't continue to cook. (Don't use a higher heat and be sure to watch the chocolate carefully. We don't want it to burn and get thick.)
  • Stir in oats and coconut flakes until well combined.

  • Put all ingredients in a food processor or blender.
  • Combine until the mixture is blended and sticks together. (Note: if you are using a high-powered blender like a Vitamix, do not turn your machine on high. You will likely end up with Coconut Butter. While it will be delicious, it won't be these no-bake cookies :-)!)
  • Remove the mixture from the blender / food processor and form into desired shape. I really like the cute little shapes I was able to make with this little cookie scoop. I had a little trouble with the "balls" falling apart but just gently press them back into the desired shape.
  • Decorate with shredded coconut, cocoa or carob powder, crushed nuts, or melted chocolate (I used my Homemade Chocolate or Carob Chips piped from a plastic baggie with a tiny hole cut in the corner) as desired. Or leave them plain. They are great just as is (but I do think a little coconut sprinkled on top adds a nice touch.
  • Leave to firm up on a plate. They will firm up at room temperature.
  • You really don't need to store these in the fridge but I think they taste a tad bit better cold.

No Bake Cookies with Coconut image

Gluten-free, Dairy-free delicus no-bake cookies with coconut! Health snack filled with comfort.

1/4 cup Coconut Oil
1/4 cup Maple Syrup
3 Tbsp Honey
1/4 cup Coconut Milk
1/3 cup Creamy Peanut Butter
1 tsp Vanilla
2 Tbsp Cocoa Powder
1+1/2 cup Gluten-free Rolled Oats
1/3 cup Unsweetened Shredded Coconut

Steps:

  • Get all your ingredients out and ready to go. This goes kind of quickly!
  • Size a sheet of parchment paper or wax paper over a cookie sheet.
  • With a food processor or handheld pulser, process the oats with a few good pluses. This makes the oats easier to chew and digest. If you like the oats whole, skip this step.
  • In a saucepan, turn heat to medium and add the coconut oil.
  • Slowly add the maple syrup, honey, coconut milk, and peanut butter. Using a whisk, stir the mixture.
  • Add the peanut butter and continue to whisk. Then add the cocoa. Keep whisking!
  • Bring to a slow boil for 3 minutes, then remove from heat.
  • Stir in the oats.
  • Add the shredded coconut.
  • Using a spoon, scoop mixture onto the cookie sheet to desired size, cover with plastic wrap and put in the refrigerator.
  • After at least 60 minutes, remove and put cookies in a baggie for storage in the frig. Or, simply enjoy your amazing no-bake cookies!
