CHOCOLATE NO BAKE OATMEAL COOKIES

This recipe for chocolate no bake cookies are the classic cookie you remember, made with or without peanut butter-even with or without oats.

Number Of Ingredients 7

3 cups 330 g certified gluten free quick-cooking oats ((See Recipe Notes))
1/4 cup unsweetened cocoa powder ((natural or Dutch-processed))
8 tablespoons unsalted butter ((or virgin coconut oil))
2/3 cup milk
2 cups granulated sugar
1/8 teaspoon kosher salt
4 ounces unsweetened chocolate (chopped)

Steps:

  • Line large baking sheets with unbleached parchment paper and set aside. In a large mixing bowl, place the oats and cocoa powder, and toss to combine. Set the bowl aside.
  • In a medium-size, heavy-bottom saucepan, place the butter or coconut oil, sugar, milk, and salt. Whisking frequently, bring the mixture to a rolling boil over medium-high heat.
  • The mixture will bubble quite a lot. Just continue to whisk. Allow the mixture to boil for a full 2 minutes, whisking frequently.
  • Remove the saucepan from the heat, add the chopped chocolate and mix until the chocolate is melted, and the mixture is smooth.
  • Create a well in the center of the oats in the large bowl and pour in the sugar mixture. Mix to combine well.
  • The mixture will be thick but soft. Allow it to sit at room temperature for 5 to 10 minutes to allow it to begin to firm up.
  • Using a large ice cream scoop or two spoons, scoop the cookie dough in 2 tablespoon portions onto the prepared baking sheets, about 1-inch apart from one another. Spread each gently into an approximately 2-inch round.
  • Allow the cookies to set at room temperature or in the refrigerator. After about 30 minutes, you should be able to peel them off the parchment paper.
  • Store the finished cookies in a sealed glass container at room temperature or in the refrigerator.

1 cup semisweet chocolate chips
1/4 to 1/2 cup peanut butter, optional
1 teaspoon vanilla extract
2 cups granulated sugar, or part brown sugar
1/2 cup (4 ounces) unsalted butter
1/2 cup evaporated milk , or regular milk

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, combine the oats, chocolate chips, peanut butter (if using), and vanilla; stir to blend the ingredients. Set aside.
  • In a saucepan, combine the sugar with the butter and milk. Place the pan over medium-high heat and stir to melt the sugar and butter. Bring to a full rolling boil and boil the mixture for exactly 1 full minute.
  • Immediately combine the hot butter and sugar mixture with the oatmeal and chocolate chip mixture. Stir until the chocolate has melted and the mixture is well blended.
  • Working quickly, drop by spoonfuls or use a cookie scoop to portion onto waxed paper or parchment paper .
  • Allow to cool to room temperature and firm up before serving.

This is a compilation of a few different no bake cookie recipes I found and tweaked. This recipe made 40 tablespoon-size cookies. It would be easy to halve everything for fewer cookies. Almond milk can be substituted for milk to make this dairy-free, agave nectar for honey to make it vegan, and almond butter or sunflower seed butter for peanut butter.

1 cup honey
1/2 cup unsweetened cocoa
1 dash salt
1/2 cup coconut oil
1/2 cup milk
1 cup peanut butter
6 cups gluten-free oats
1 teaspoon vanilla

Steps:

  • Combine the first 5 ingredients in a saucepan.
  • Bring to a boil and continue to cook over a gentle boil for 90 seconds.
  • Remove from heat.
  • Add peanut butter and stir to melt.
  • Add oats and vanilla and stir thoroughly to mix.
  • Drop by rounded tablespoon onto nonstick surface (Silpat, wax paper, nonstick cookie sheet).
  • Transfer to refrigerator and cool till set.

⅔ cup maple syrup
¼ cup vegetable oil
5 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
½ cup peanut butter
1 cup rolled oats
1 teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat combine the maple syrup, oil, cocoa and cinnamon. Boil for three minutes, stirring constantly. Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.
