CHEDDAR-DILL MASHED POTATOES



Cheddar-Dill Mashed Potatoes image

Banish boring spuds by stirring in Cheddar and fresh dill.

2 pounds Idaho or Yukon gold potatoes
Kosher salt and freshly ground black pepper
1 cup whole milk
8 tablespoons (1 stick) unsalted butter
1 cup grated Cheddar
1/4 cup chopped fresh dill

Steps:

  • Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring to a low simmer and cook the potatoes, uncovered, until tender, about 45 minutes. Drain.
  • Peel the potatoes and return them to the pot (for smoother mashed potatoes, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the Cheddar, dill, 2 teaspoons salt and a few grinds of pepper.

  • Microwave 1 1/2 pounds small Yukon Gold potatoes, turning halfway through, until tender, 10 to 12 minutes; let cool slightly. Break into chunks. Toss with 2 tablespoons olive oil, 2 smashed garlic cloves, 3/4 teaspoon kosher salt and a few grinds of pepper. Roast on a baking sheet at 450 degrees F, stirring once, until browned and crisp, about 30 minutes. Sprinkle with shredded sharp cheddar and chopped chives.

Salt to taste
1 tablespoon butter
1 tablespoon chopped fresh dill
Freshly ground pepper to taste
1/2 teaspoon ground cumin

Steps:

  • Place potatoes in a pot, cover with water; add dill and salt. Bring to a boil, and simmer for 15 minutes or until potatoes are tender.
  • Drain potatoes, and discard dill sprigs. Place potatoes in a saucepan; add butter, chopped dill, salt, pepper and cumin. Stir gently to coat potatoes. Serve immediately.

1/2 onion, chopped
4 tablespoons margarine
4 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
1/2 cup half-and-half
6 cups potatoes, peeled and sliced
2 cups cheddar cheese, shredded

Steps:

  • Use a big pot.
  • Saute chopped onions in margarine til soft but not browned.
  • In small bowl, combine flour, salt and pepper.
  • Stir flour mixture into onion mixture then add milk and half and half and stir and cook over medium heat until mixture begins to thicken (about 3 minutes).
  • Turn off heat.
  • Add 1 1/2 cups shredded cheddar to the sauce and stir til melted and smooth.
  • Add sliced potatoes and stir well to combine.
  • Pour mixture into a 9 by 13 casserole dish that you have sprayed with Pam.
  • Cover with foil and bake at 350 for 35 minutes.
  • Remove from oven, take foil off and sprinkle reserved 1/2 cup cheese over top (or more as desired).
  • Return to oven to bake another 30 minutes or so or until potatoes are soft, cheese is melted and edges begin to lightly brown.
  • Let stand a few minutes before serving to allow sauce to thicken.

1/4 cup butter
1 small onion, chopped
1/4 cup flour
2-1/2 cups milk
1-3/4 cups KRAFT Shredded Cheddar Cheese, divided
2 Tbsp. GREY POUPON Dijon Mustard
1/4 cup KRAFT Grated Parmesan Cheese
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
  • Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour; cook 1 min. Gradually add milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups cheddar; cook and stir 1 min. or until melted. Stir in mustard.
  • Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.
  • Bake 25 to 30 min. or until heated through. Top with remaining cheeses and bacon; bake 5 min. or until cheddar is melted.

This is a really great tater recipe, it's one I have been making for a long time, not only is it easy to make it's so good! You really don't have to have the exact amounts for this recipe, throw in another potato if desired, use as much cheese as as you like!

4 large russet potatoes (peeled or unpeeled)
1/4 cup butter
1 small onion, finely chopped
salt and pepper (I use seasoned salt for this)
1/2 teaspoon dried thyme (or to taste)
1/2-1 teaspoon garlic powder (optional) or 1 tablespoon minced fresh garlic (optional)
1 1/2 cups shredded cheddar cheese (or to taste)
2 tablespoons chopped fresh parsley

Steps:

  • Set oven to 425 degrees.
  • Butter a shallow baking sish.
  • Thinly slice the potatoes, and place in the baking dish.
  • In a small saucepan, heat butter, onion, salt, pepper, garlic powder and thyme until the butter is melted.
  • Drizzle over potatoes.
  • Cover, and bake for 45 minutes, or until potatoes tender.
  • Remove from oven, sprinkle with cheese and parsley.
  • Return to oven and bake for another 10-15 minutes longer, or until cheese is melted.
