PERFECT POTATO SALAD

Steps:
- Cut the potatoes in halves or thirds, then boil until fork tender. Drain. Mash the potatoes or run them through a ricer or food mill to make them extra fluffy.
- Fold the potatoes together with the mayonnaise, mustard, green onions, dill, salt, pepper, paprika and other seasonings you like. Fold in the pickles, pickle juice and eggs, and taste for seasoning. Add more salt, mustard or mayo as needed.

- Place the potatoes into a large pot of cold salted water. Bring to a boil and simmer for 10 minutes until tender.
- Meanwhile, whisk together 2 teaspoons whole-grain mustard, 2 tablespoons muscatel or white wine vinegar, 4 tablespoons olive oil, 1 finely chopped shallot, and a pinch of salt and a black pepper.
- Once the potatoes are cool enough to handle, peel, if you prefer, then halve, quarter, or cut them into bite-sized chunks.
- Toss the warm potatoes with the mustard dressing until well coated. Set aside to cool completely.
- In the meantime, mix together 3 tablespoons mayonnaise, 2 tablespoons sour cream, 1 tablespoon horseradish sauce, and lemon juice.
- Once the potatoes are cool, toss them with the prepared mayo dressing and finely sliced scallions until well coated.
- Turn the salad into a serving bowl and scatter with the crispy onions just before serving.
- Serve and enjoy!

- Set a steamer basket in a large pot with a lid. Fill with enough water to come just below basket; bring to a boil. Place potatoes in basket; reduce heat to a simmer. Cover pot; steam, tossing potatoes occasionally, until tender, 10 to 12 minutes.
- Meanwhile, in a medium bowl, place lemon zest and juice; season with salt and pepper. Using tongs or a slotted spoon, transfer potatoes to bowl. With a rubber spatula, gently toss potatoes with lemon juice. Refrigerate until cool, at least 1 hour.
- Toss herbs and oil with cooled potato mixture; season with salt and pepper. If storing, cover and refrigerate up to 1 day; bring to room temperature before serving.
