BOUDIN EGG ROLLS

Steps:
- For the boudin: Cut the pork into 1-inch cubes and place in a large bowl. Add the chicken livers.
- Mix the cayenne, thyme, paprika, kosher salt, black pepper, pink salt if using and white pepper together in a separate small bowl, and then add to the pork and chicken livers.
- Cut the celery, jalapeno peppers, poblano pepper and onion into 1-inch cubes. Add to the meat and spice mixture. Use your hands to mix everything together. Let sit for a minimum of 12 hours in the refrigerator.
- Once the meat has marinated, place into a large pot and cover with 6 cups of water. Let simmer until the pork is tender and easy to shred, about 2 1/2 hours.
- Bring 3 cups water, the butter and a pinch of salt to a boil in a medium pot over high heat. Add the rice, stir, cover with foil or a lid, turn all the way to low and cook until the rice is done, about 20 minutes.
- Remove the pork and vegetables from the braising liquid, saving the liquid. Add to a large mixing bowl (or a large standing mixer with the paddle attachment) and mix until it is mostly shredded and sticking together. This process must be done while the meat is still fairly hot (see Cook's Note). Add the green onions and rice to the meat mixture. Slowly add in the reserved liquid; you may not need all of it. It should be moist but not wet. Once mixed together, spread out on a sheet tray and let cool.
- For the sriracha mayo: Mix the mayo and sriracha in a small bowl until combined.
- For the boudin egg rolls: Make a 2- to 3-ounce patty out of the boudin. Place a stick of cheese on the patty and roll it around the cheese to form a cigar-like shape. Place on a corner of a wonton wrapper. Roll and fold the wrapper like you would any egg roll, using the beaten egg to seal it. Repeat with the remaining boudin, cheese and wrappers.
- In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F. (If you don't have a thermometer, a cube of bread will brown in about 3 minutes.) Fry the egg rolls in batches until golden, 5 to 8 minutes per batch. Let cool and enjoy! Serve with sriracha mayo for dipping.

- Preheat oven to 325 degrees F (165 degrees C).
- Heat oil in a large pot over low heat. Saute onion, celery and chopped green pepper for 5 minutes. Stir in garlic, and saute for 2 minutes. Season with parsley, Creole seasoning, file powder, salt and pepper.
- Increase heat to medium high, and add ground beef. Cook until beef is evenly browned. Stir in ham, and cook for 5 minutes. Add shrimp, and cook for 2 minutes. Remove from heat, and stir in stuffing mix.
- Stuff each bell pepper half, and lightly sprinkle with breadcrumbs. Place stuffed bell pepper halves in ungreased baking dish. Bake in preheated oven for 1 hour.

Steps:
- Soak buns in milk and egg mixture.
- Saute celery, onions (not green), garlic and bell pepper in a heavy pot in the butter until wilted.
- Add worcestershire sauce, crabmeat and season to taste with salt, pepper and cayenne.
- Cook over medium heat about 15 minutes, stirring constantly.
- Add green onions.
- Then add buns.
- Mix well.
- Stuff crab shells (artificial).
- Sprinkle tops with bread crumbs and bake at 375 for 10 minutes or until brown.
STUFFED CRAB
Steps:
- In a skillet over low heat melt the butter, add the onion, yellow pepper, fennel, and garlic.
- Season with salt and pepper. Cook slowly for about 6 minutes until all are tender, transfer mixture to a bowl, add bread crumbs, and allow to cool.
- Preheat oven to 375 degrees F.
- When cooled add crab meat, mayonnaise, lemon zest, lemon juice, tarragon, parsley, scallions, and season with salt and pepper, to taste. Mix the ingredients well and stuff the shells. Bake for 25 minutes until warmed through.
- Note: the crabs should be poached in a court boullion made with 2 quarts water, 1 chopped carrot, 1 chopped yellow onion, and 1 chopped celery stalk boiled with 1/2 teaspoon each black peppercorns and coriander seeds. Bring the mixture to a boil and after 10 minutes, add 1 lemon, thinly sliced. Let boil for 10 more minutes, salt the water, and poach the crabs.
CRAB-FILLED EGG ROLLS WITH GINGER-LIME DIPPING SAUCE
Assemble these days ahead. Final frying takes just 2 minutes, producing a crisp hors d'oeuvre.

- Place an egg-roll wrapper on a work surface. Center 3 Tbs. crabmeat on the wrapper, forming it into a log. Fold the corner closest to you tightly over the filling, then overlap right and left corners. Then, as if forming a cigarette, roll wrapper tightly, moistening the end with wet fingertips. Press to seal. Repeat with remaining wrappers and crab.
- Heat oil in a Dutch oven to 300 degrees. Cook rolls, 5 at a time, turning once, until blond, about 2 minutes. Drain, cool and refrigerate in a zipper-lock bag. (Can be prepared to this point up to 3 days ahead.) Reserve oil.
- Several hours before serving, mix dipping sauce ingredients together. Heat oven to 200 degrees. Reheat oil to 375 degrees in Dutch oven. Cook rolls again, 5 at a time, turning once, until crisp and golden brown, about 2 minutes. Drain on a rack set over a lipped cookie sheet and place in warm oven; can be held up to 20 minutes.
- Cut each roll into thirds, sprinkle with cilantro and serve with dipping sauce.

This is such a good dish. I would order this every time we went to Don's Seafood Hut in Lafayette....still do when I go home to visit. I have tried many recipes, and this is the closest I can come to theirs. This is a collaboration of many different recipes I have tried.

- Preheat oven to 375ºF.
- In a medium heavy bottomed saucepan, melt the butter over medium heat.
- Add the onions and garlic; sauté for 3-5 min or until vegetables are wilted. Be careful not to brown.
- Sprinkle in the flour, blending well into the mixture.
- Using a wire whisk, add the hot cream into the saucepan, stirring constantly until thick cream sauce is achieved.
- Reduce heat to a simmer.
- Add the white wine, lemon juice, nutmeg, and hot sauce, stir to combine.
- Sprinkle in half of the Cheddar cheese, stirring the mixture constantly.
- Season with salt and pepper to taste. If mixture becomes too thick, add a small amount of hot water or whipping cream.
- Place equal parts of the crabmeat in the bottom of 6 au gratin dishes, top with sauce-enough to cover and sprinkle with remaining cheese.
- Bake for 10 min or until cheese is bubbly.
- OR.
- Spread crabmeat on the bottom of an 8-inch baking dish, top with sauce, and sprinkle remaining cheese on top.
- Bake for 30 min or until cheese is bubbly and melted.

SHRIMP AND CRAB CANNELLONI
Steps:
- For sauce:
- Heat oil in large pot over medium-high heat. Add onions and garlic and sauté until translucent, about 5 minutes. Mix in fresh tomatoes, canned tomatoes with their juices, basil, thyme, oregano, bay leaves and crushed red pepper and bring to boil. Reduce heat and simmer until sauce is reduced to scant 5 cups, stirring occasionally, about 45 minutes. Discard bay leaves. Working in batches, puree sauce in blender; return to same pot. Add cream and vinegar and simmer 15 minutes. Season to taste with salt and pepper. Refrigerate.
- For Cannelloni:
- Cook noodles in pot of boiling salted water until almost tender. Drain. Cool in bowl of cold water.
- Heat olive oil in large skillet over medium-high heat. Add onion and garlic; sauté until onion is tender, about 6 minutes. Add shrimp; sauté just until opaque, about 3 minutes. Stir in basil, oregano and crushed red pepper. Cool.
- Mix ricotta, provolone, Parmesan, crabmeat and shrimp mixture in bowl. Season with salt and pepper. Mix in egg.
- Butter 13 x 9 x 2-inch glass baking dish. Spread generous 1 cup tomato cream sauce in bottom of dish. Drain lasagna noodles; trim to 8-inch lengths. Spread scant 1/3 cup shrimp filling over each noodle, leaving 1/2-inch border on all sides. Staring at 1 short end, roll up each noodle jelly roll style. Place in prepared pan, seam side down. Pour remaining sauce over cannelloni. Cover with foil. (Can be made 1 day ahead; refrigerate.)
- Preheat oven to 350°F. Bake foil-covered cannelloni until heated through, about 45 minutes.
