New Mexican Green Chile Cornbread Muffins

Steps:
- Preheat oven to 400 degrees. Use butter to grease a mini muffin or regular muffin pan.
- Combine all dry ingredients in a large bowl. Add in milk, eggs and butter, and stir well to combine. Add in chopped green chile and stir until the chile is mixed throughout the batter.
- Pour batter into muffin cups, leaving 1/4" space for them to rise. Bake in preheated oven until golden brown and cooked through. Mini muffins take 10 - 12 minutes to cook, regular muffins take 15 - 20 minutes.

Steps:
- Preheat oven to 350*F.
- Heat the oil in a 9-10 inch cast iron skillet or baking pan in oven.
- In a large bowl, sift cornmeal, flour, baking powder, sugar and salt. Add remaining ingredients to the bowl; stir mixture together.
- Remove the hot pan from the oven; pour in batter.
- Bake 25 minutes or until the cornbread is golden brown and the edges begin to pull away from the sides of the pan.
- Cool 5 minutes before cutting.
- Enjoy!

- Mix dry and wet ingredients in separate bowls except the corn and chile.
- Clean the chile, remove the seeds and dice them.
- Stir the two bowls of wet and dry ingredients together and add the vegetables last.
- Pour into a round cake pan and bake for 30-35 minutes. If using mini muffin pans, bake for 15-18 minutes.

- 1. Beat together sour cream, milk, egg whites and oil.
- 2. Combine in separate bowl, brown sugar, flour, cornmeal, baking powder and salt.
- 3. Drain corn and green chiles.
- 4. Combine wet ingredients with the dry ingredients and fold in corn and green chiles.
- 5. Transfer into a greased 8 X 8 baking pan.
- 6. Bake for 30-35 minutes at 350 degree. Make sure you let the cornbread rest for 10 minutes before enjoying.

- 1 Preheat oven to 400°F. Grease a 8x12 inch baking dish.
- 2 In a large bowl mix the cornmeal, flour, salt, baking powder and baking soda. In a separate bowl, beat the softened butter and sugar. Beat the sour cream and eggs to the butter sugar mixture. Add the milk and the dry ingredients, a third at a time and alternating wet/dry. Mix in the green chiles, corn, and shredded cheese. Pour mixture into prepared baking dish.
- 3 Bake for 35 minutes, or until top is browned, the center springs back when pressed down, and a skewer inserted into the center comes out clean. Let cool almost completely before serving.

- Cream butter and sugar.
- Add eggs slowly, one at a time.
- Add chiles, corn and cheese, mixing well to incorporate.
- Sift together dry ingredients, then add and mix until smooth.
- Pour into well-buttered, square 9 inch pan and bake about 1 hour.

- Preheat oven to 425°F.
- Coat an 8 inch square baking pan with nonstick cooking spray and dust with 2 tablespoons of cornmeal.
- Sift into a large bowl the remaining cornmeal, baking powder, baking soda, salt and flour.
- In another bowl, combine buttermilk, eggs, cheese and chilies, then stir into the dry ingredients.
- Pour batter into the prepared baking pan .
