MEXICAN BEEF STEW



Mexican Beef Stew image

This dish is a Chili con Carne made with stew meat rather than ground chuck. It is pretty enough to entertain with and made with top round rather than bottom, so it's lean enough to feel good about eating.

Number Of Ingredients 21

6 ancho chiles
2 cups beef stock
Vegetable or olive oil, for drizzling
4 ounces smoky good quality bacon, chopped
2 pounds beef top round, cut into bite-size chunks
Kosher salt and freshly ground black pepper
2 medium onions, finely chopped
4 large cloves garlic, finely chopped or grated
1 tablespoon ground cumin
1 tablespoon ground coriander
About 2 teaspoons unsweetened cocoa
About 1/2 teaspoon ground cinnamon
About 1/2 teaspoon ground cloves
One 12-ounce bottle Mexican-style lager beer (recommended: Negra Modelo)
One 14-ounce can whole, diced or crushed fire-roasted tomatoes
1 tablespoon honey
Juice of 1 lime
Sour cream
Fresh cilantro leaves
Warm or charred tortillas or rice
Black beans

Steps:

  • Preheat the oven to 275 degrees F.
  • Stem and seed the chiles and place in a pot with beef stock over high heat. Bring to a boil, then reduce the heat and simmer gently to reconstitute (see Cook's Note).
  • Heat a large Dutch oven with a drizzle of oil over medium-high heat, and add the bacon to the pan and stir until crisp. Remove with a slotted spoon. Pat the meat dry, season with a little salt and lots of black pepper, then add to the bacon drippings and brown evenly to caramelize the meat. Brown the meat in 2 batches if necessary in order not to crowd the pan. Remove the meat and add another drizzle of oil, if necessary. Add the onions, and garlic and soften a few minutes. Stir in the cumin, coriander, cocoa, cinnamon, and cloves, and stir to toast the spices and combine. Deglaze the pan with beer and evaporate.
  • In a food processor, puree the softened peppers and stock with tomatoes. Pour into the pot, slide the browned meat and bacon back in, and drizzle in the honey. Cover the pot and transfer to the oven for 2 1/2 hours or until the meat falls apart with a fork. Cool and store for a make-ahead meal. Reheat over medium heat and add the lime juice just before serving.
  • Garnish with sour cream and fresh cilantro leaves, and serve with tortillas or rice and warm black beans.

1 lb beef round steak
1/2 cup chopped onion
2 garlic cloves, smashed
1 (16 ounce) can tomatoes, cut up
1 (10 1/2 ounce) can condensed fat-free reduced-sodium beef broth
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried basil, crushed
4 large carrots
1 (10 ounce) package frozen chopped broccoli (or fresh)
1 tablespoon cornstarch

Steps:

  • Trim fat from meat.
  • Cut meat into 3/4 inch cubes.
  • Spray a large saucepan with veggie spray.
  • Heat saucepan, add meat, onion and garlic, cook over medium high heat 'til meat is brown and onion is tender.
  • Drain off fat.
  • Stir in undrained tomatoes, broth, chili powder, cumin, basil and 2 cups water.
  • Bring to boil, reduce heat, cover and simmer for 1 1/2 hours or'til meat is tender.
  • Cut carrots into thin match like strips.
  • Stir carrots and broccoli into meat mixture.
  • Cover and simmer 8 to 10 minutes more or 'til tender crisp.
  • Stir together cornstarch and 2 tablespoon cold water.
  • Stir into stew, cook and stir until bubbly, cook and stir for 2 minutes more.

1 cup dried pinto bean, sorted, rinsed, and drained
1 (3 lb) boneless chuck roast, well trimmed and cut into 1 1/2in pieces
3 squash, cut into 1-inch thick rounds (zucchini)
salt
fresh coarse ground black pepper
3 tablespoons all-purpose flour
6 tablespoons vegetable oil, divided
2 large onions, cut into 1/2in pieces
8 garlic cloves, minced
1 jalapeno pepper, minced with seeds
3 tablespoons tomato paste
1 1/2 cups red wine
2 cups beef stock
2 cups chicken stock
1 (28 ounce) can Italian plum tomatoes, undrained
1 smoked ham hock
1/2 teaspoon red pepper (cayenne)
11 ounces smoked kielbasa, cut into 1-inch pieces
minced fresh cilantro
1 tablespoon ground cumin
1/2 teaspoon ground cumin
2 1/2 teaspoons ground coriander
2 1/2 teaspoons chili powder
2 teaspoons dried oregano, crushed
2 teaspoons dried thyme, crushed
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon

Steps:

  • In a large soup pot or cast-iron Dutch Oven over medium-high heat, place beans and over with water. Bring just to a boil; remove from heat, cover, and let stand 1 hour. Drain and rinse beans; set aside. Place beef pieces in a large bowl; season with salt and pepper. Add 2 teaspoons Santa F Seasoning; toss well. Add flour and toss to coat.
  • In a large pot or a Dutch oven over medium-high heat, heat 4 tablespoons vegetable oil. Add beef piecs in batches and brown well; using a slotted spoon, transfer to a bowl. Add 2 tablespoons vegetable oil; reduce heat to medium. Add onions and tomato paste; stir 2 minute. Add red wine and bring to a boil, scraping up browned bits. Add beef and chicken stocks, tomatoes, ham hock, and cayenne pepper; reduce heat to low and bring to simmer. Add beef pieces; cover partially and simmer 30 minutes, stirring occasionally.
  • Add beans, cover partially, and simmer another 1 hour. Uncover, add remaining Santa Fe Seasoning, and simmer an additional 45 minutes or until beef pieces and beans are tender. Stirring occasionally. Degrease stew if necessary. Remove ham hock; trim off fat. Cut ham into 1/2-inch pieces and add back into stew.
  • In a large frying pan over medium heat, add kielbasa sausage and cook 2 minutes per side. Transfer to a plate. Add bell peppers, poblano chilies, and zucchini; saute another 5 minutes or until crisp-tender. Mix sausage and vegetables into stew; simmer 5 minutes longer or until just tender. Sprinkle with cilantro. Ladle into soup bowls and serve with bread.
  • For The Santa Fe Seasoning:.
  • In a small bowl, combine cumin, coriander, chili powder, oregano, thyme, allspice, cloves, and cinnamon.

4 pounds beef chuck roast, trimmed of fat and meat cut into chunks
1 (24 ounce) jar salsa
1 onion, chopped
1 (7 ounce) can chopped mild green chiles
2 cloves garlic, minced
2 teaspoons chili powder
1 ½ teaspoons ground cumin
½ teaspoon dried oregano

Steps:

  • Mix chuck roast, salsa, onion, green chile peppers, garlic, chili powder, cumin, and oregano in a slow cooker.
  • Cook on Low for 10 to 12 hours. Remove lid and cook on High for 1 more hour.
  • Remove chuck roast from slow cooker using a slotted spoon to a serving platter; shred meat with a fork. Add liquid from slow cooker, 1 tablespoon at a time, to the chuck roast until desired consistency is reached.

1 lb beef chuck (cubed)
4 small red potatoes (cubed)
1 onion (sliced)
6 garlic cloves (whole)
1/2 cup baby carrots
1 jalapeno (sliced)
1/2 cup frozen peas
1/2 cup red wine
1/2 cup beef broth
4 ounces tomato paste
1/4 cup water
1 teaspoon paprika
1 teaspoon cayenne pepper
1/2 teaspoon allspice
salt and pepper

Steps:

  • Mix the wine, beef broth, tomato paste water, paprika, cayenne pepper salt, pepper and allspice together in a large bowl. Stir in the uncooked beef chunks. Cover and let marinate in the refrigerator overnight.
  • Put potatoes, onion, garlic, baby carrots and jalepeno into the crock pot.
  • Pour beef mixture over the vegetables and stir well with a wooden spoon.
  • Set on low heat. Let cook for at least 8 hours. The meat should be tender and falling apart.
  • Stir in frozen peas approximately 30 minutes before you plan on serving the stew.
  • Serve over yellow rice.

Number Of Ingredients 12

3 ½ tbsp vegetable oil
1kg stewing beef , cut into chunks
1 onion , sliced
2 garlic cloves , sliced
1 tbsp plain flour
1 tbsp black treacle
1 tsp cumin
400g can chopped tomato
600ml beef stock (from a cube is fine)
2 red peppers , deseeded and sliced
400g can cannellini bean , drained and rinsed
soured cream and coriander, to serve

Steps:

  • Heat 1 tbsp of oil in a large saucepan with a lid. Season meat, then cook about one-third over a high heat for 10 mins until browned. Tip onto a plate and repeat with 2 tbsp of oil and rest of the meat.
  • Add a splash of water and scrape pan to remove bits. Add ½ tbsp oil. Turn heat down, fry onion and garlic until softened. Return meat to the pan, add flour and stir for 1 min. Add treacle, cumin, tomatoes and stock. Bring to boil, reduce heat, cover and simmer for 1 hr 45 mins. Stir occasionally and check that the meat is covered with liquid.
  • Add peppers and beans, and cook for a further 15 mins. The stew can now be cooled and kept in the fridge for 2 days, or frozen for 1 month. Serve in bowls, with sour cream, coriander and cornbread.
