INDIAN FRY BREAD
Many Native Americans have a recipe for Fry Bread. This one listed is not ours. We have perfected our own and we hold ingredients that make ours special. One of those is tinpsula. This is a food widely used by many Native Indian tribes, and was one of the primary foods used by the plains Indians. Although tinpsula makes our bread different, there is much more than that that goes into our processes of Fry Bread.

Steps:
- Put flour, baking powder, and salt in a large bowl. Mix well, add warm water and stir until dough begins to ball up. On a lightly floured surface knead dough. Do not over-work the dough. After working dough, place in a bowl and refrigerate for 1/2 to 1 hour.
- Heat oil to 350 degrees in a frying pan or kettle. Lightly flour surface and pat and roll out baseball size pieces of dough. Cut hole in middle with a knife (so the dough will fry flat) to 1/4-inch thickness and place in oil and cook until golden brown and flip over and cook opposite side until same golden brown. Dough is done in about 3 minutes depending on oil temperature and thickness of dough.
- After fry bread is done top with favorite topping or, chile and cheese first, then cover with lettuce and tomatoes, onions, green chile and you have an Indian Taco.
NAVAJO FRY BREAD II
As far as I know this is the original recipe for Navajo Bread. It's is great with honey and butter. The Navajo put chiles, cheese, onion, lettuce and beans on it, and call them Nava Tacos.

AUTHENTIC NAVAJO INDIAN FRY BREAD (TACO BREAD)
Step by easy step recipe for a Native American all-purpose flat bread dating back to the nineteenth century. Fry bread is considered a food of inter-tribal unity and is made at all Indian pow wows. It has a crispy outside and a chewy inside. Serve with butter & honey, powdered sugar, or cinnamon & sugar. Or add 'taco' ingredients to the top to make an Indian taco bread salad. You can also fill these with anything then fold them up to eat. Or simply serve plain with soup, stew, etc. *EDITED TO ADD: This is an old recipe and I know many of us no longer use so much salt - if that's the case for you then I suggest REDUCING THE SALT BY HALF.

Steps:
- In a heavy large frying pan heat the oil to 365 degrees; Oil is hot enough if a small test piece of dough dropped in the oil begins cooking almost immediately and rises to the top.
- Mix together dry ingredients in a large bowl; *see note about salt.
- Gradually add warm milk and mix to make a soft dough.
- When the dough has pulled together, cover and let sit in a warm place for 10 to 15 minutes.
- Break off a golf ball sized piece of dough and pat it out flat in your hand, no thicker than 1/4 inch.
- Place 2 or 3 flats at a time into the hot oil and when they begin to bubble flip them over and fry until they're a nice light golden brown.
- Remove and drain on paper towels then serve hot (keep them covered in a bowl until you're done frying).
- You can make larger flats; just make sure they're no thicker than 1/4" and fry one at a time.

NAVAJO FRY BREAD
Fry bread can be eaten alone or with various toppings such as honey, jam or cheese spread. It is a simple complement to meals in place of buns. My mom used to make this for breakfast on bread baking days.

Steps:
- 1. In the bowl of a food processor, mix the dry ingredients. Stir in 1 tablespoon of the oil and the water, and process until smooth. Turn out onto a lightly floured surface and gently knead until the dough is just elastic and comes together, being careful not to over work. Shape the dough into a ball, cover tightly with plastic wrap, and refrigerate for at least 1 hour. Divide the dough into 12 equal pieces. Flatten each piece and roll into a 7-inch circle, making as thin as possible. Poke a hole in the center with the handle of a wooden spoon or your finger. In a large saute pan or deep fryer, heat the 6 cups of oil to 360 degrees F. Slip the rounds 1 at a time into the hot oil and cook for 2 minutes, turning once with a long-handled spoon. Drain on paper towels and repeat with the remaining dough. Sprinkle the fried bread with powdered sugar and drizzle with honey, as desired and serve.
- 2. In all of these recipes dry ingredients are mixed together then liquid ingredients are added.Oil for frying is required for each recipe (I just stopped adding it as it was a given) Only the Navaho refrigerate before stretching the dough, Mom used to give each of us our own piece of dough to stretch before she fried it for us.

Similar to the Navajo Fry Bread featured on Emeril LaGassi's cooking show, but we used milk instead of water, which results in a softer bread with richer flavor.

Steps:
- In a large bowl, combine the flour, baking powder and salt. Add the warm water and mix using a fork until a dough forms. Turn the dough out onto a lightly floured surface and knead for 5 minutes, then transfer to a clean bowl and cover tightly in plastic wrap. Let the dough rest for 10 minutes.
- Divide the dough into 8 equal sections by pinching off golf-ball sized balls of dough, then pat and roll out the dough balls into roughly 6-inch discs on a lightly floured surface. Keep them covered with plastic wrap while you prepare to fry them.
- Heat 3 cups of oil in a large skillet or frying pan over medium heat for about 5 minutes until the oil temperature reaches between 350 and 360 degrees F. Working in batches, fry each disc in the hot oil until the dough is golden brown on one side, then carefully flip with tongs and fry on the other side. Set on a paper towel to drain oil and stick in a warm oven to stay hot while the other fry bread is cooked.
- In a large skillet, heat the oil over medium-high heat, then add the onions and cook for 2-3 minutes, just until they begin to soften. Add the meat and brown with the onions.
- When the meat is no longer pink, add all of the spices, kidney beans, tomatoes, and chilies, and decrease the heat to medium-low. Stir everything together, then cover and simmer for 10 minutes, then use to top Indian fry bread for Navajo tacos.
- Add any toppings you like to the base of fry bread and taco mixture, piling it high.

NAVAJO FRY BREAD - TRADITIONAL
This recipe for Navajo Fry bread is from the Rough Rock Demonstration School in Rough Rock AZ. The Navajo people developed this to use the commodities they received from the government. In some recipes you will find that dry milk is also used. Lard was the original fat used to fry the bread.

FRY BREAD WITH CORNMEAL AND COCONUT OIL
Ingenuity is behind Indigenous fry bread. When the United States government forcibly relocated Navajos (Diné) from ancestral lands in the 19th century, Native American women invented fry bread from government-issued commodities: flour, salt, yeast and water. Today, Native Americans have reclaimed this survival food as a tasty symbol of resilience. Cooks improvise on the basic formula using ingredients based on preference and geography: Styles, sizes and shapes differ by region, tribe and family. Fry bread is comfort food, and variations are shaped by memory and connection, leading to playful jests about the "right" kind. This particular recipe has Afro-Indigenous origins with its use of sugar and cornmeal, which add sweetness and density. But raw sugar replaces white sugar, and coconut oil steps in for lard. When used for frying, the oil's aroma announces the arrival of something special.

Steps:
- In a large pot, bring 2 cups water to a boil over medium-high. While whisking, add cornmeal to boiling water. Continue whisking slowly until smooth. Reduce heat to medium, add 1 1/2 cups cold water and cook, stirring continuously to prevent lumps, until thick, about 6 minutes. It should be the consistency of oatmeal. Remove from heat and let cool in pot.
- Add yeast, sugar and salt to the cooled cornmeal, along with 1 to 2 tablespoons of water to moisten the mixture. Gradually add flour, stirring with a metal whisk or potato masher to get rid of as many lumps as you can. Sprinkle with water as needed to keep dough moist but thick. Cover with a damp cloth and let rise for 3 hours.
- Once dough has risen, it should be springy and sticky. Heat 1 inch of coconut oil in a cast-iron skillet to about 350 degrees. Test the heat by dropping a small portion of dough into the oil. It should gently sizzle but not splatter. Use two large, oiled spoons to make golf-ball-size portions: Scoop the dough with one spoon and push the dough off into the hot oil with the other. Re-oil the spoons using the oil in the skillet as needed to make new balls of dough. Work in batches, leaving room in the skillet, as the balls will expand in the hot oil.
- Fry until bottoms are cooked to your desired color (light gold, golden or dark brown), about 3 minutes for golden. Using tongs, flip balls over to cook the other side to the same color, 1 to 3 minutes. Gently lift out of the oil, shaking off excess oil, and transfer to paper towel-lined plates to drain. Eat while hot.

- For the Navajo Fry Bread: Mix the dry ingredients in a large bowl. Heat the milk and water together. once hot, slowly add in the hot liquid a little at a time, mixing with fingers until it forms a ball that pulls away from sides of the bowl.
- Add more flour or water as needed to form a dough that is not too sticky. Cover and let the dough rest for 10 minutes. Pour 1 inch of oil in a large skillet. Set a thermometer on the edge of the skillet and heat to 375 degrees F.
- Meanwhile, cut the dough into 10 equal pieces. Flatten the balls and gentle stretch out the edges while turning to form a 6-7 inch disks. The thinner the better. (You could also roll them out on a lightly floured board, but pulling the dough is more fun.) Roll them out all at once, so they have a little time to rest before they go in the fry. Restretch them right before placing in the oil if needed.
- Make a tiny hole in the middle of each disk, so the dough doesn't balloon up as it fries. Lay them out in a single layer so they don't stick together.

- In a heatproof bowl, cover the ancho with 2 cups of the boiling water. Put the porcini in a small bowl and cover with the remaining 1 cup of boiling water. Let both soak until softened, about 20 minutes. Remove the ancho from the soaking liquid and discard the stem and seeds. Finely chop the chile; reserve the soaking liquid. Rub the porcini to remove any grit and finely chop them; reserve the soaking liquid.
- In a large enameled cast-iron casserole, heat 2 tablespoons of the olive oil until almost smoking. Add half of the ground buffalo in an even layer and season with salt and pepper. Sear the meat over high heat for 3 minutes without stirring; leave the meat in large pieces. Gently stir the meat and continue to brown it for 2 minutes more. Using a slotted spoon, transfer the meat to a plate; brown the remaining meat.
- Heat the remaining 1 tablespoon of olive oil in the casserole. Add the onions and cook over low heat until softened, about 10 minutes. Add the garlic and cook, stirring, until fragrant, about 2 minutes. Add the chile powder and cook, stirring, for 4 minutes. Add the tomato paste mixture, chicken stock, ancho and porcini. Add the ancho and porcini soaking liquids, stopping when you reach any grit at the bottom. Season with a large pinch of salt and simmer over moderately low heat until the sauce reduces by a third, about 10 minutes. Gently stir in the meat and any accumulated juices and season with salt and pepper. Rewarm just before serving.
- Sift together the flour, cornmeal, baking powder and salt. With a wooden spoon, stir in the water until just blended.
