Nasi goreng, which translates to "fried rice," is one of Indonesia's best-known dishes, and it's prepared in numerous ways around the world. Like many other fried rice recipes, this version, from the chef Lara Lee's "Coconut & Sambal," blends crunchy vegetables with piquant rice, but the addition of ginger and white pepper offer spice and aroma, while kecap manis, a velvety sauce, adds a slightly sweet balance to the dish. Don't skimp on the fried egg or the fried shallots; both add essential crunch and texture. This is an ideal for a dinner for two.

2 boneless, skinless chicken thighs (about 7 ounces total), cut into bite-size cubes
1/4 teaspoon sea salt and a scant 1/8 teaspoon white pepper, plus more as needed
3 tablespoons coconut oil or sunflower oil
2 shallots, preferably Thai, or 1 small banana shallot, peeled and thinly sliced
1 (3-inch) piece fresh galangal (or ginger), peeled and woody stem removed, finely chopped
2 garlic cloves, peeled and thinly sliced
1 cup green beans, chopped
2 scallions, chopped into large chunks
1/4 teaspoon ground turmeric
3 1/2 ounces uncooked jasmine or basmati rice, cooked and cooled (about 3 cups)
2 tablespoons store-bought or homemade kecap manis (see Note for recipe)
2 teaspoons light soy sauce
1 1/2 teaspoons fish sauce
2 large eggs, or duck eggs
1 tablespoon store-bought or homemade crisp fried shallots
1/2 long red chile, such as cayenne, thinly sliced
Prawn crackers, for serving

Steps:

  • In a medium bowl, season the chicken pieces with the salt and white pepper.
  • In a large wok or skillet, heat 1 tablespoon oil over high heat until it melts or shimmers. Fry the chicken, stirring frequently, until cooked through, about 5 minutes. Remove and set aside.
  • Add another 1 tablespoon oil to the pan, then add the shallot, galangal and garlic, and cook over medium-high until fragrant. Add the green beans, scallions and turmeric and cook for 1 minute.
  • Add the cooked rice to the pan, breaking up any clumps with a wooden spoon and stirring until combined and warmed.
  • Return the chicken to the pan. Stir in the kecap manis, light soy sauce, fish sauce, a large pinch of white pepper, and extra salt if needed.
  • Meanwhile, fry the eggs: Place a large nonstick skillet over medium-high heat and add the remaining 1 tablespoon oil. Once shimmering, crack the eggs directly into the oil. Cook for 2 to 3 minutes until the whites are partially cooked. Tilt the pan and spoon the hot oil over the egg whites until they are fully cooked. Season with salt.
  • Divide the fried rice between two serving plates and top with the fried shallots, sliced chile and fried eggs; serve with crackers.

300g long-grain rice
3 tbsp vegetable oil
4 large eggs, beaten
100g fine green beans, cut in half
2 chicken breasts, cut into small even chunks
180g pack large raw peeled prawns, cut in half
200g shallots, thinly sliced
20g garlic, finely chopped
2 medium-hot red chillies, deseeded and finely chopped
1 red bird's-eye chilli, sliced
1 medium carrot, thinly sliced
1 quantity Balinese spice paste (see recipe in 'goes well with'
1 tbsp tomato purée
1 tbsp kecap manis (Indonesian sweet soy sauce)
1 tbsp light soy sauce
8 spring onions, thinly sliced
½ cucumber , sliced
2 medium tomatoes , sliced
4 tbsp crispy fried onions
prawn cracker

Steps:

  • Put the rice in a medium heavy-based saucepan and add 520ml water. Quickly bring to the boil, stir once and cover with a tight-fitting lid. Reduce the heat to low and cook for 10 mins. Uncover, fluff up with a fork and spread over a tray. Set aside to cool.
  • Meanwhile, heat 1 tbsp oil in a large frying pan over a medium heat. Pour in the beaten egg and, as it begins to cook, use a spatula to bring large flakes of cooked egg into the middle of the omelette. Continue to cook like this for a couple of mins, then leave the rest of the egg to set completely. Flip the omelette over and transfer to a plate to cool before cutting it into long, thin shreds.
  • Drop the beans into a pan of boiling salted water and cook for 3 mins. Drain, refresh under cold water and set aside.
  • Heat the remaining oil in a wok or large, deep frying pan until almost smoking. Add the chicken and prawns, and stir-fry for 1 min. Tip in the shallots, garlic, chillies and carrots, and stir-fry for a further 2 mins until the carrot is just tender. Add the spice paste and stir-fry for 1 min more. Add the tomato purée, kecap manis, cooked rice and green beans, and stir-fry over a high heat for 2 mins. Add the soy sauce, spring onions and shredded omelette, and toss together.
  • Spoon the nasi goreng onto warmed plates. Overlap the cucumber and tomato on the side of each plate, sprinkle over the crispy fried onions and serve with prawn crackers.

1 cup uncooked white rice
2 cups water
cooking spray
3 eggs, beaten
1 tablespoon vegetable oil
1 onion, chopped
1 leek, chopped
1 clove garlic, minced
2 green chile peppers, chopped
½ pound skinless, boneless chicken breasts, cut into thin strips
½ pound peeled and deveined prawns
1 teaspoon ground coriander
1 teaspoon ground cumin
3 tablespoons sweet soy sauce (Indonesian kecap manis)

Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Spread onto a baking sheet, and refrigerate 2 hours until cold.
  • Heat a large nonstick skillet over medium heat. Spray with nonstick cooking spray. Pour eggs into hot skillet. Cook until the eggs begin to set, lifting up the edges of the set eggs to allow the uncooked egg to contact the hot pan, about 1 minute. Flip omelet in one piece and cook until fully set, about 30 seconds. Slice omelet into 1/2 inch strips.
  • Heat the vegetable oil in a wok or large frying pan over high heat. Stir in the onion, leek, garlic, and chile peppers. Cook, stirring, until onion is soft, 3 to 5 minutes. Stir in the chicken, prawns, coriander, and cumin, mixing well. Cook and stir for approximately 5 minutes.
  • Mix in the cold rice, sweet soy sauce, and omelet strips; cook until shrimp are bright pink and chicken is no longer pink in the center, 3 to 5 minutes.

If you love fried rice, you should try this Indonesian Fried Rice with chicken (Nasi Goreng Ayam). It's is a huge hit with my 5 year old and takes less than 30 minutes to make from start to finish!

Number Of Ingredients 12

2 Tablespoons cooking oil of choice
4 medium shallots, sliced
3 stalks green onions, sliced diagonally
1 long red chili or red Fresno pepper, sliced diagonally
1 1/2 cups cooked chicken (or turkey) chopped
1 teaspoon soy sauce
4 cups cooked cold rice (Jasmine or Basmati work great!)
3 Tablespoons Kecap Manis or sweet soy sauce
salt & pepper to taste
Fried Egg for garnish
Cucumbers, sliced for serving
Tomatoes, quartered for serving

Steps:

  • Heat the oil in a wok or large skillet over medium heat.
  • Fry the shallots for a minute or two until cooked and tender.
  • Add green onions and sliced chili. If you don't want spice, don't add the chili or remove seeds from chili before adding to the skillet. Otherwise the seeds will add a spicy kick to this dish. Mix well.
  • Add chicken and soy sauce. Mix well.
  • Add rice and stir well. Press down any clumps to separate them. Cook for a few minutes until rice is warm.
  • Add Kecap Manis and stir well, ensuring all rice is covered well.
  • Once rice is hot, remove from stove and serve immediately.
  • Taste and add salt and pepper as needed.
  • This dish is traditionally served with a fried egg (or scrambled omelet style egg), sliced cucumbers and quartered tomatoes.

I've been eating chicken fried rice for as long as I can recall and it's a dish of which I never tire. This version of nasi goreng is my absolute favourite. The galangal and white pepper give it a good amount of heat, which is balanced by the sweetness of the kecap manis and the saltiness of the soy and fish sauce. The fried duck egg with a runny yolk on top is sheer luxury. With the added crunch of green beans, fried shallots and kerupuk or prawn crackers, this dish hits all the right spots and is my favourite choice for a Friday night in. Chilli heat Mild

Number Of Ingredients 16

2 skinless boneless chicken thighs, cut into small, bite-sized cubes
2 garlic cloves, peeled and thinly sliced
8 cm piece of galangal or ginger (about 40 g), peeled and woody stem removed, finely chopped
1 small banana shallot or 2 Thai shallots, peeled and thinly sliced
Handful of green beans, chopped into small chunks 2 spring onions, chopped into large chunks
¼ tsp ground turmeric
95 g jasmine or basmati rice, cooked and cooled (240 g cooked weight)
2 tbsp kecap manis
1½ tsp fish sauce
2 tsp light soy sauce
Sea salt and white pepper to taste
Coconut oil or sunflower oil, for frying
2 duck or hen eggs
1 tbsp Fried shallots (recipe in book)
½ long red chilli thinly sliced
Kerupuk (recipe in book) or prawn crackers

Steps:

  • Season the chicken pieces with salt and white pepper. Heat 1 tablespoon of oil in a large frying pan or wok over a high heat and fry the chicken until cooked through, about 3 minutes. Remove and set aside.
  • Add another tablespoon of oil to the pan, add the garlic, galangal or ginger and shallots and cook over a medium-high heat until fragrant. Add the green beans, spring onions and turmeric and cook for 1 minute.
  • Add the rice to the pan, breaking up any clumps with a wooden spoon. Ensure all the ingredients are well combined and the rice is warmed through. Return the chicken to the pan. Season with the kecap manis, fish sauce, light soy sauce and a large pinch of white pepper, and extra salt if needed.
  • Meanwhile, fry the eggs. Place a large non-stick frying pan over a medium-high heat and add 1 tablespoon of oil. Once shimmering, crack the eggs directly into the oil. Cook for 2-3 minutes until the whites are partially cooked. Tilt the pan and spoon the hot oil over the egg whites until they are fully cooked (I like my yolk runny, but cook yours to your liking). Season with salt.
  • Divide the fried rice between two serving plates and garnish with the fried shallots, sliced chilli and fried eggs on top. Serve with crackers.

I love my chicken and I especially love the different ways the Indonesians cook it. When I was over there last time I asked for the recipe. Bear in mind they get the spices from the market and use a mortar & pestle to crush them, but I just use store bought and crushed! - I cook the chicken in a frypan with olive oil to seal the seasoned chicken and then pop it in the oven for about 20 - 30 minutes (depending on the thickness) to cook it through. However the quicker option would be to deep fry it (if you can afford the calories!!!). Chicken done this way is great served with Nasi Goreng (Indonesian Fried Rice). I hope you enjoy.

1 cup tamarind juice
2 tablespoons clear soya sauce
1/4 teaspoon chili powder

What you can include in the recipe which I personally don't is chicken and little prawns (cooked of course), to add to the actual rice mixture. Think I might whip up a batch tonight for hubby and I. 2 garlic cloves (crushed)
1 inch grated ginger
1 spring onions, finely chopped or 1 small onion
1 teaspoon sesame oil
1 teaspoon sambal oelek (Indonesian Hot Chili Sauce)
1 tablespoon fish oil
1 teaspoon shrimp paste
3 tablespoons ketjap manis (Sweet Soy Sauce)
1 1/2 cups frozen peas (mixed) or 1 1/2 cups carrots (mixed)

4 cups cooked rice
fried egg (to serve on top) (optional)
cooked chicken, shredded (optional)
cooked small shrimp (optional)

Steps:

  • Heat oil in wok or large fry pan.
  • Add garlic, ginger and spring onions and sauté for a minute.
  • Add sesame oil, sambal oelek, fish oil, shrimp paste and ketjap manis and stir through for a few seconds.
  • Add the veggie mix and toss through for a minute.
  • Add the cooked rice and keep stirring through until well coated but not sticky.
  • Add the chicken and prawns and fold into the rice mixture.
  • Taste mixture and if necessary add some more of the spices.
  • If you want to top the dish with a fried egg, fry the eggs in a separate fry pan.
  • Serve out rice and top with the fried egg.
