- Preheat oven to 350 degrees F (175 degrees C). Butter a casserole dish.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
- Drain potatoes; reserve water for mashing, if necessary. Add sour cream, cream cheese, onion salt, garlic powder, and pepper; beat until creamy. Pour into the prepared dish. Cover with Cheddar cheese, parsley, and paprika.
- Bake, uncovered, until cheese is bubbly, about 35 minutes.

GARLIC MASHED POTATOES
Steps:
- Combine the potatoes, garlic and a pinch of salt in a pot. Add cold water to cover. Bring to a boil, reduce heat and simmer until the potatoes are tender when pierced with a fork, 15 to 20 minutes. Drain in a colander.
- To the same pot, add the butter, milk, and some salt and pepper. Heat over medium heat until the milk is steaming and the butter melted. Add the potatoes and garlic back to the pot and mash until smooth. Fold in the sour cream. Taste for seasoning and add salt and pepper as needed.

Steps:
- Boil potatoes in water to cover by 1 inch until tender. About 20 minutes.
- Heat half-and-half, butter, garlic, mustard, and salt over medium low heat until smooth. About 5 minutes. Remove from heat and keep warm.
- Drain potatoes and transfer to mixing bowl. Mix using an electric mixer on medium-low and slowly add half-and-half mixture until potatoes are smooth and creamy, about 2 minutes.
- Add eggs 1 at a time until mixed well, about another minute.
- Fold in chives.
- Transfer to greased 2-quart baking dish. Make a nice little design in the top of the potatoes with a fork.
- The dish may be covered and refrigerated for up to 24 hours - If so,let it sit at room temp for an hour before continuing.
- Bake at 375 degrees until potatoes begin to brown.
- Cool 10 minutes and serve.

This is a favorite mashed potato casserole recipe handed down through the family. These cheesy mashed potatoes are the best you'll ever taste! Everyone is sure to love it. Mama usually just throws together whatever amounts she thinks taste good. But I did get her to give me a recipe with measurements.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
- While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).
- Drain potatoes and return to the pot. Mash while hot. Add sour cream, butter, Parmesan cheese, cream cheese, Cheddar cheese, green onions, salt, and pepper; beat until well blended. Transfer to a 3-quart casserole.
- Bake in the preheated oven for 45 minutes. Serve piping hot.

- Peel and cook potatoes until tender.
- Mash potatoes with onion salt and sour cream.
- Add butter.

Simple easy, do ahead casserole. Not bad on the pocket book either.If you like a little more zing to it add 1 teaspoon of your favorite hot sauce or 1 tsp chili flakes I took some shortcuts today when I made this casserole - I used precooked hamburger, a can of French cut beans, leftover celeric Mashed potatoes & bottled chopped garlic. It was In the oven in 5 minutes. It definitely needs some chili flakes or other spicy condiment

- Spray a casserole dish with oil and heat oven to 350°F.
- Fry the hamburger, onions & garlic until the meat is just cooked.
- Put the hamburger in the bottom of the casserole.
- Top with the steamed french green beans.
- Next the mashed potatoes.
- Cover and bake for 30 minutes.
- Remove cover top with cheese and bake a further 10 minutes or until the cheese is bubbly and browned.
