1 ½ pounds russet potatoes, cut into 1/2-inch wedges
1 ½ tablespoons vegetable oil
1 teaspoon Mexican-style seasoning blend
½ teaspoon garlic salt
1 cup shredded Mexican cheese blend
¼ cup rinsed and drained canned black beans
¼ cup diced tomatoes
¼ cup sliced black olives
¼ cup sliced green onions
3 tablespoons canned chopped green chiles

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine potatoes, oil, Mexican seasoning, and garlic salt together in a bowl; stir to coat potatoes completely. Spread potatoes in a single layer on a baking sheet.
  • Bake in the preheated oven, stirring occasionally, until potatoes are crisp and golden brown, 25 to 30 minutes.
  • Transfer potatoes to a plate and top with Mexican cheese blend, black beans, diced tomatoes, black olives, green onions, and green chiles.

1 package (5-1/4 ounces) au gratin potatoes
1 can (11 ounces) whole kernel corn, drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
2 cups water
2 cups 2% milk
2 cups cubed process American cheese (Velveeta)
Dash hot pepper sauce, optional
Minced fresh parsley, optional

Steps:

  • In a 3-qt. saucepan, combine the contents of potato package, corn, tomatoes and water. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender. Add the milk, cheese and hot pepper sauce if desired; cook and stir until the cheese is melted. Garnish with parsley if desired.

1 package taco seasoning
1 small onion (chopped)
1 clove garlic (minced)
1 can condensed nacho cheese soup (10 3/4 ounce (cheddar soup will also work))
1 can diced tomatoes and green chilis (10 oz, undrained)
1 1/2 cups milk
1 cup sharp cheddar cheese
Crushed tortilla chips

Steps:

  • In a medium sized skillet cook the ground beef, onion, and garlic until beef is no longer pink and the onion is clear. Drain the grease and add to slow cooker.
  • Add soup, taco seasoning, diced tomatoes and green chilis, and milk. Stir.
  • Cook on low 3-4 hours. Stir in 1/2 cup cheddar cheese and allow to melt. Can be kept on warm for an additional 4 hours. Top with crushed tortilla chips and additional cheese if desired.

2 lbs The Little Potato Company Dynamic Duo bagged Creamer potatoes, sliced into ¼-inch rounds
1 ½ tablespoons olive oil
½ teaspoon salt
½ teaspoon paprika
1 cup canned black beans, drained and rinsed
2 cups frozen spinach, defrosted
2/3 cup salsa
1 cup shredded cheddar cheese
1 cup shredded Monterey jack
Optional toppings: sliced jalapeno pepper, diced red onion, cilantro, sour cream or Greek yogurt, avocado or guacamole

Steps:

  • Preheat the oven to 400 degrees F and line two baking sheets with parchment paper.
  • In a large bowl, toss sliced potatoes with olive oil, salt and paprika until evenly coated.
  • Spread potatoes onto baking sheets in single layers.
  • Bake potatoes until fork-tender, about 20-25 minutes.
  • Combine potatoes onto one baking sheet so that there is little to no space between potatoes.
  • Top potatoes evenly with black beans, spinach, salsa, and cheeses. If you have a jalapeno pepper, add slices now.
  • Bake until the cheeses are melted, about 10 minutes.
  • Top with optional toppings like diced red onion, cilantro, sour cream or Greek yogurt, avocado or guacamole.

1 (5 1/4 ounce) box scalloped potatoes mix
1 (11 ounce) can whole kernel corn, drained
0.5 (10 ounce) can diced tomatoes and green chilies, undrained
5 cups water, divided
2 cups milk
2 cups cubed Velveeta cheese
shredded cheese (optional)
sour cream (optional)

Steps:

  • Empty potatoes only into a microwave safe bowl along with 3 cups of water.
  • On high, cook potatoes approximately 8 minutes.
  • Drain potatoes of most of the water.
  • Combine the potatoes, potato sauce mix (from the box), corn, diced tomatoes and green chilies, and 2 cups of water in a stove-top pan.
  • Mix well.
  • Bring to a boil.
  • Reduce heat; cover and simmer for about 15 minutes or until the potatoes are tender to your liking.
  • Add milk and cubed Velveeta.
  • Cook and stir until the Velveeta is melted into the soup.
  • Ladle into soup bowls.
  • Garnish with shredded cheese or sour cream, if you wish.
  • Serve.

4 tablespoons unsalted butter, melted
Kosher salt and freshly ground pepper
1 teaspoon extra-virgin olive oil
1 link fresh chorizo (3 to 4 ounces), casing removed
1/2 cup canned refried beans, gently warmed
1 cup shredded pepper Jack cheese (about 4 ounces)
3 tablespoons sliced black olives
2 scallions, thinly sliced
1/4 cup sour cream
Pico de gallo, chopped fresh cilantro, sliced radishes, diced avocado and chipotle hot sauce, for topping

Steps:

  • Preheat the oven to 425˚ F. Bake the potatoes and prepare the skins as directed.
  • Meanwhile, make the chorizo topping: Heat the olive oil in a small nonstick skillet over medium heat. Add the chorizo and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 5 to 7 minutes. Remove to a paper towel-lined plate to drain.
  • Assemble the potato skins: Brush the skins on both sides with the melted butter and season with salt and pepper. Arrange skin-side up on the baking sheet. Bake until crisp, 10 to 15 minutes. Flip the potato skins and top with a thin layer of the beans, then the cheese, chorizo, olives and scallions. Bake until the cheese is melted, about 5 more minutes. Thin the sour cream with 1 to 2 tablespoons water and drizzle on top, then top with pico de gallo, cilantro, radishes, avocado and hot sauce.

4 cups low-sodium chicken broth

1 1/2 pounds skinless, boneless chicken breasts, cut into 3/4-inch pieces
