Steps:
- Place ribs in a large pot, cover them with water and bring to a boil. Reduce heat and simmer for 15 minutes. Drain the water and cool the ribs until you can touch them. Cut them into 1 or 2 rib portions. Sprinkle with salt and pepper and set them aside.
- In a large Dutch oven sauté the onion in shortening until glassy. Add the ribs, reduce the heat and cook for 15 minutes, stirring occasionally.
- Drain sauerkraut and add it to the ribs. Pour water and wine over the ribs. Add the apple, bay leaf and cloves, turn up the heat and bring to a boil. Turn down heat to low, cover the pot and simmer for 1 1/2 hours.
- Peel, wash and grate the potato and place into the sauerkraut mixture. Add a little water if needed. Stir and simmer another 1/2 hour. Season with salt and pepper and a dash of sugar.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Coat a 9x13 inch baking dish with cooking spray. Season the ribs with salt and pepper, and arrange them in the greased baking dish.
- Roast for 20 to 25 minutes in the preheated oven. Remove from the oven, and reduce the temperature to 350 degrees F (175 degrees C).
- Set the ribs on a plate, and drain excess grease from the baking dish. Spread the sauerkraut evenly in the bottom of the dish. Place the ribs on top with the meat side up. Tuck the potato wedges in amongst the ribs. Cover tightly with heavy aluminum foil.
- Bake for 30 minutes in the preheated oven. Carefully remove the foil to avoid hot steam, and serve.

- Place meat in 9 x 13 baking dish or roaster pan.

SAUERKRAUT MY GRANDMA'S WAY
When we were first married my husband wanted me to make sauerkraut like his mother. She did hers on top of the stove and made dumplings on top. It was good, but nothing like what my grandmother made. Now 40 plus years later he never asks for sauerkraut his mother's way.

- 1. Preheat oven to 350-degrees.
- 2. Layer slightly drained sauerkraut, sliced onions and apples in a large roasting pan. Sprinkle with brown sugar.
- 3. Sprinkle salt, pepper and garlic over pork. Lay on top of sauerkraut. Cover roaster. Bake for 1 3/4 hours.
- 4. Add kielbasa, cut into 2-3 inch pieces to roaster and continue baking for another 30 minutes.
- 5. I serve this dish just like my grandma did. Mashed potatoes, homemade applesauce and a good dark rye along with a good beer. Not the prettiest dish color wise with everything being the same color, but delicious never the less.

- Heat oven to 450°F. Cut ribs into serving-sized pieces. Place in ungreased 13x9-inch pan; sprinkle with salt and pepper. Bake at 450°F. for 20 minutes.

GRANDMA'S POLISH KAPUSTA WITH PORK SPARE RIBS

- Step 1 1. Cut spare ribs into individual portions.
- Step 2 2. Place pork in a large pot, top with water, and bring to a boil.
- Step 3 3. Lower the heat to medium, and skim until there is nothing left to skim.
- Step 4 4. Add two bay leaves and simmer on low for about 2 hours until fork tender.
- Step 5 5. Cut cabbage into 1/4 inch slices.
- Step 6 6. Add cabbage and sauerkraut to pot (note I had to remove half of the pork, add half of the cabbage and sauerkraut, add the pork back in, and top off with the remaining cabbage and sauerkraut in order to fit it in my pot).
- Step 7 7. Simmer for 35-45 minutes more (think low and slow). Don't forget to fish out the bay leaves which was my dad's job when he was a kid. Serve the kapusta with some boiled potatoes for a hearty meal.

- Clean and dice the potatoes into small pieces. Shred the cabbage and carrots.
- Rinse the meat under cold water. In a large soup pot, bring 4 quarts of water to boil. Add in the meat and the Better Than Bouillon Beef Base and cook for 30 minutes.
- Add in the potatoes and cabbage and simmer the soup for 10 minutes.
- Dice the onions and shred the carrots. In a skillet over medium heat, sauté the onions with a little bit of oil until golden brown. Add in the shredded carrots and cook for another 5 minutes. Add in the diced tomatoes and cook for another 5 minutes.
- Remove the meat pieces from the soup and remove the bone. Add the meat back into the soup and toss the bones in the trash.
- Season to taste with salt. Serve immediately and enjoy!

- Cut ribs in pieces and place in slow cooker. Cover with water and season with salt, pepper, and garlic powder. Cook on low until meat comes off the bone, 4 to 6 hours. Remove meat from pot, reserving stock. Take rest of meat off bones, discarding bones, and return meat to slow cooker. Rinse sauerkraut in strainer and squeeze out extra moisture. Add to meat and season to taste. Sprinkle in pearl barley. Add additional water if needed and cook until barley is soft. Enjoy!

- 1. In a large skillet over medium high heat, add ½ of the olive oil and let oil warm for about a minute. 2. Add half of the pork chops to the pan and season with a pinch of salt and a pinch of black pepper. Sear the chops for 2-3 minutes or until chops are golden brown on the bottom. 3. Turn pork chops over, season with a pinch of salt and a pinch of pepper and continue to cook another 2-3 minutes. 4. Remove pork chops and set aside on a plate. Repeat process with the remaining pork chops using the remainder of the olive oil, salt, and pepper. 5. Remove the second set of pork chops from the pan and place on the plate with the first set of pork chops. 6. GRANDMA'S FALL OFF THE BONE BBQ COUNTRY STYLE PORK RIBS
My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

- Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
- Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
- Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
- While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
- Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
- Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
- Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

- 1. Meatballs: Mix together all ingredients and make into small walnut sized balls;pressing tightly together. Drop into boiling salted water. Cook in the water for about 15 minutes. Remove and set aside.Reserve water.

- Drain sauerkraut and pour in a large pot with bay leaves and peppercorns. Add just enough water to cover. Boil over low heat for half an hour.
- Add the dried mushrooms to a half cup of water in a small saucepan, bring it to a boil, cover with lid, turn off heat, and let them soak until ready to add to the sauerkraut.
- In a pan, fry up your bacon til crisp, not burnt. Pour bacon and its grease into a container and set aside. Saute onions in the same pan with the remaining grease. Place onions in a container and set aside. Saute sausage in the same pan til a bit browned.
- When sauerkraut has finished boiling, drain and remove the peppercorns and bay leaves. Add the bacon, onions, sausage, and soaked mushrooms at this time. Add all of the mushroom liquid or half of it to the pot. Mix well and simmer all ingredients for another half an hour to forty five minutes, until all the liquid cooks out. Make sure you stir occasionally to prevent sticking. Serve right away. Sauerkraut will last three days in an air-tight container in the refrigerator.
