2 heads romaine lettuce, thinly sliced
2 tomatoes, large diced
1 cucumber, large diced
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons sour cream
1 teaspoon fresh oregano, chopped
1 clove garlic, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Combine the romaine, tomatoes, cucumber and onions in a large bowl.
  • Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
  • Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

1/4 cup chopped red onion
1/2 teaspoon ground cumin
1 tablespoon hot sauce (recommended brand: Frank's Red Hot)
1 stalk celery, chopped
2 roasted red peppers, finely chopped
1/4 cup cilantro, leaves only
2 (15-ounce) cans black-eyed peas, drained
3 tablespoons canola oil
2 teaspoons grated fresh ginger
Salt and freshly ground black pepper

Steps:

  • In a large bowl combine all ingredients and season with salt and pepper. Toss together and serve.

"MILLION DOLLAR" CHINESE CABBAGE SALAD



This recipe is always a hit...with kids too! I used to call it my 'Million Dollar Salad' because buying the sesame seeds was so expensive. Now I buy the sesame seeds in bulk at a health food store and it's much more affordable.

½ cup vegetable oil
½ cup white sugar
¼ cup wine vinegar
1 tablespoon soy sauce
2 (3 ounce) packages ramen noodles (without flavor packets), lightly crushed
½ cup slivered almonds
1 cup sesame seeds
1 head napa cabbage, chopped
1 bunch green onions, chopped

Steps:

  • In a bowl, whisk together vegetable oil, sugar, wine vinegar, and soy sauce until the sugar has dissolved. Refrigerate the dressing while preparing the salad.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the broken ramen noodles, almonds, and sesame seeds onto a baking sheet.
  • Bake the ramen noodle mixture until lightly browned, about 15 minutes, stirring often. Watch carefully to prevent burning. Allow mixture to cool.
  • Just before serving, mix together the napa cabbage and green onions with toasted ramen mixture in a salad bowl until thoroughly combined; toss with the dressing.

1 pkg. vanilia pudding [3 5/8 oz.]cooked as directed
1 can mandarin oranges [drained]
1 can pineapple tbits [drained]
2 pound green or red grapes [cut in half]
1 package miniature marshmallows
2 cups coconut
1 cup chopped pecans
1/2 pint heavy whipping cream

Steps:

  • Prepare pudding according to instructions,add next six indgreints. Put cream in cold bowl and whip into whipping cream and fold whiped cream into other seven indregients. Put in refrigerator over night . Will keep up to four days in refrigerator. This is as near as I can remember like my mother made.

1 (16 ounce) package elbow macaroni
2 ½ cups mayonnaise
¼ cup white vinegar
1 ½ teaspoons seasoned salt, or to taste
1 teaspoon white sugar
1 teaspoon garlic powder
½ teaspoon ground black pepper, or to taste
2 (5 ounce) cans chunk light tuna in water, drained and flaked
2 (4 ounce) cans baby shrimp, drained
1 large cucumber, seeded and chopped
1 small sweet onion, chopped
4 hard-boiled eggs, chopped
2 hard-boiled eggs, sliced
1 pinch paprika

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until chilled; drain.
  • Mix mayonnaise, white vinegar, seasoned salt, sugar, garlic powder, and black pepper in a large bowl with a whisk until smooth. Stir tuna, baby shrimp, cucumber, and sweet onion into the mayonnaise mixture to coat ingredients completely; add chopped eggs and stir. Pour chilled macaroni into the bowl and stir; top with sliced eggs. Garnish salad with paprika.
  • Cover bowl with plastic wrap and refrigerate at least 1 hour to overnight before serving.

1 (13 ounce) can Eagle Brand Condensed Milk (I use low-fat)
1 (30 ounce) can fruit cocktail in light syrup, drained
1 (10 ounce) can unsweetened crushed canned pineapple
2 bananas, thinly chopped, rubbed with lemon juice
1/2 cup pecans, coarsely chopped

Steps:

  • Fold together condensed milk and Cool Whip.
  • Add drained fruit cocktail and crushed pineapple.
  • Stir in sliced bananas with lemon and mix well. Add pecans and stir.
  • Chill for one hour or overnight and serve cool.
  • FOR VARIATION: you can add 1/2 cup of small marshmallows and 1/2 cup shredded coconut if you like.

The measurements are approximations because I make it by sight, so whatever you think is correct..taste it as you go..if you put too much mustard just add a little more mayo & sugar

6 -7 potatoes, depending on how much salad you want to yield
2 cups mayonnaise
3 -4 hard-boiled eggs
1 onion, chopped or diced
1/2 cup mustard
1 teaspoon sugar
2 tablespoons pickles, cubes

Steps:

  • Boil potatoes until soft; drain water off and refridgerate potatoes to help them cool quicker. Once cool, you can either peel the skin off or leave it, then cut potatoes into small chunks, quarters, pieces. While boiling potatoes, also boil eggs in a seperate pot to save time. Peel shell off, set eggs aside.
  • Add mayo, mustard, sugar, onion, and pickle cubes. Cut each egg in half, remove the yolk to a seperate bowl, then cut the egg white into small pieces. Add egg pieces to main bowl; stir very good to mix all the flavors.
  • Refridgerate overnight for best taste, but you can serve right away if you choose.

1 lb bacon
1/2 cup sliced green onion
1 (10 ounce) package frozen peas, thawed
12 ounces of shredded cheddar cheese
1 cup chopped cauliflower
1 cup mayonnaise (I always use Hellmans)
1 cup sour cream
2 tablespoons sugar

Steps:

  • Place bacon in a large skillet, cook over medium high heat until brown and fully cooked. Crumble and set aside.
  • In a large flat bowl, put the chopped lettuce in and layer with onion, peas, cauliflower and bacon. prepare the dressing by combining mayo, sour cream and sugar, mix well. Spread the dressing on top of salad and then top with cheese. Refrigerate until chilled.

I agree that the crushed pineapple made the salad a bit mushy, but all of the great flavor was still there - the marshmallow and sour cream blended together tasted like fluff, and with the pineapple and coconut, it tasted like an ice cream sundae topping minus the ice cream underneath. Great juicy mandarin oranges. A little too sweet and decadent - a once-a-year treat, for sure.
