3/4 lb. linguine, uncooked
2 Tbsp. olive oil
4 cloves garlic, minced
1 can (10 oz.) baby clams, undrained
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
1/4 cup KRAFT 100% Grated Parmesan and Romano Cheese
1/4 cup chopped fresh parsley
2 Tbsp. butter
1 Tbsp. lemon juice
2 Tbsp. POLLY-O Shaved Parmesan Cheese

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium heat. Add garlic; cook and stir 1 min. Stir in clams; cook 3 min. or until heated through, stirring frequently.
  • Stir pasta sauce into clam mixture; bring to boil, stirring frequently. Add all remaining ingredients except shaved Parmesan; mix well. Simmer on medium-low heat 3 to 4 min. or until butter is completely melted and pasta sauce mixture is heated through, stirring occasionally.
  • Drain pasta. Serve topped with pasta sauce mixture and shaved Parmesan.

1 teaspoon coarse salt
1 lb linguine
3 tablespoons extra virgin olive oil, 3 turns of the pan (EVOO)
1 (2 ounce) can flat anchovy fillets, drained
1/2 teaspoon crushed red pepper flakes, eyeball it in your palm
1/4 teaspoon dried oregano leaves (a couple of pinches)
1 teaspoon dried thyme (one-third palmful)
6 garlic cloves, finely chopped
1 small onion, finely chopped
1/2 cup dry red wine (a couple of glugs)
2 (14 ounce) cans baby clams, in juice, 1 can drained
1 (28 ounce) can crushed tomatoes
salt & freshly ground black pepper
1/2 cup chopped flat leaf parsley (2 handfuls)
1 teaspoon rated lemon zest, for garnish

Steps:

  • Bring a large pot of salted water to a boil, then add the pasta and cook until al dente.
  • While the pasta cooks, prepare the sauce: Heat a large skillet over medium-low heat, add the EVOO (3 turns of the pan) and the anchovies and cook until the anchovies melt into the oil.
  • Add the crushed red pepper flakes, oregano, thyme and garlic and cook for 1 minute, then add the onion, raise the heat to medium and cook, stirring frequently, for 3 to 4 minutes, until the onion begins to soften. Add the wine and cook 1 minute, then stir in the clams with their juice plus the drained clams. Cook, stirring, for 1 minute to concentrate the flavors. Stir in the tomatoes and cook until heated through. Season with salt and pepper to taste (be sure to taste the sauce before seasoning it; there's so much salt in the anchovies and clams that you may not need to add any).
  • Drain the linguine, return it to the pot and add the sauce. Add half the parsley and toss. Adjust the salt and pepper and plate the pasta. Garnish it with the remaining parsley and a little lemon zest.

12 ounces linguine
3 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
2 anchovy fillets
1/2 teaspoon red pepper flakes
1/2 teaspoon dried oregano
1/2 cup dry white wine
1 28-ounce can whole San Marzano tomatoes, crushed by hand
1 1/4 pounds littleneck clams (about 16), scrubbed
12 ounces chopped clams (drained if canned)
1/2 cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; drain and set aside.
  • Meanwhile, heat 2 tablespoons olive oil in a large deep skillet over medium-high heat. Add the garlic, anchovies, red pepper flakes, oregano and 1/4 teaspoon salt and cook, stirring occasionally, until the garlic is lightly golden, about 1 minute. Add the wine and cook until reduced by half, about 3 minutes. Add the tomatoes and cook, stirring occasionally, until the sauce thickens slightly, 5 to 7 minutes.
  • Add the whole clams; cover and cook until they just begin to open, about 3 minutes. Add the chopped clams and parsley; continue cooking, covered, until the whole clams are fully opened, about 3 more minutes (discard any that do not open). Add the pasta and the remaining 1 tablespoon olive oil; toss to combine. Season with salt.

KAREN'S SPICY CLAM LINGUINE

I never tasted or made clam sauce before, but my boyfriend loves spicy red clam linguine so I came up with this recipe. It was extremely tasty. He really really loved it and said it was as good, if not better, than any restaurant. This is a very simple recipe and very delicious. It has a lot of kick to it so if you don't like spicy leave out the chili pepper and cayenne. I personally used more pepper flakes and cayenne than this recipe has because we like it really spicy. I also can't emphasize how important it is to use fresh herbs if available. They really make a difference. I served this over linguine. This is the first recipe I have ever posted on this site, so I'm sentimental about it.

1 cup presidents choice splendido original magic Italian sauce (see note * below)
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons olive oil
1 clove garlic, minced or 1 1/2 cloves garlic, if smaller size,use more if desired,but don't recommend using more than 2 cloves
1 tablespoon of chopped fresh parsley
1 teaspoon dried chili pepper flakes
1/3 teaspoon cayenne pepper

1 medium basil leaves, finely chopped or 1/2 teaspoon dried basil
1/8 teaspoon dried oregano or 1/8 teaspoon fresh oregano

1/2 lb favourite pasta, cooked according to pakage directions.

Steps:

  • Note*: Probably only available in Canada, for ingredients see below; Make sure it is Original because there are different varieties; If you don’t have access to President’s Choice products use another similar brand or improvise with 1 cup of chopped canned tomatoes; It’s really just crushed tomatoes with a bit of salt; President’s Choice Splendido Original Magic Italian Sauce Ingredients: Tomatoes, salt, natural flavour, citric acid.
  • Melt butter over medium heat with olive oil.
  • When butter is melted and starting to sizzle add minced garlic.
  • Sautee garlic for about 1-2 minutes being careful not to let garlic turn brown or burn.
  • Reduce heat.
  • Add all other ingredients and mix well.
  • Turn up heat until gently boiling.
  • Reduce heat and let simmer for about 15 minute.
  • Taste test.
  • If not spicy enough add a little more chili pepper flakes and/or cayenne pepper to taste if you like it really spicy.
  • Serve over favourite pasta cooked according to package directions.
  • I recommend linguine.

Also, I often make it with just the canned clams when the little fresh ones are not readily available or I'm just cooking from my pantry, so I'm listing them as "optional" in the ingredients, but use them if you can, because they bring this dish to a new level!

Steps:

  • In a large, deep skillet, heat oil and then add garlic, anchovy fillets, red pepper flakes, oregano, and 1/4 teaspoon salt. Cook, stirring, until anchovies melt into the oil, about 1 or 2 minutes.
  • Add wine and simmer until reduced by half.
  • Add your hand crushed tomatoes and their juice, and reserved 1/2 cup clam liquid. Simmer until slightly thickened, about 7-10 minutes.
  • Add whole clams and cook until they begin to open, about 3 minutes. Add chopped clams and parsley, cover again and continue cooking until clams are fully opened, about 3 minutes more. Discard any clams that did not open. Add parsley and lemon juice.
  • Add cooked drained linguine, season well with salt, and toss to combine.

2 lbs pre-cooked whole clams, partially thawed
1 tablespoon lemon juice
1 lb linguine
0.5 (3 ounce) can tomato paste, if you want to thicken the sauce

Steps:

  • Heat butter and olive oil in large skillet over medium-high heat.
  • Add garlic and cook til garlic is golden (about 3 minutes).
  • Add parsley, oregano, basil, crushed red pepper, 1.5 cans of the stewed tomatoes and salt to pan. Mix well.
  • Add undrained clams.
  • Bring to boil; simmer 5-6 minutes.
  • Add Longneck clams to sauce. Cover and simmer til shells just barely open.
  • Add lemon juice to sauce, simmer for another 1-2 minutes, covered.
  • Spoon sauce and clams over prepared linguini.
  • ***SERVING SUGGESTION: Serve with warm loaf French garlic bread, a glorious Caesar salad and a glass of good white wine. :).

8 garlic cloves, chopped small
2 (14 ounce) cans ready cut canned tomatoes
2 (6 ounce) cans tomato paste
1 (3 lb) can clams
black pepper
2 tablespoons basil
1 1/2 teaspoons salt
1 teaspoon cayenne powder
1 teaspoon oregano
1/2 cup dry white wine

Steps:

  • Heat olive oil in large pot. Add chopped garlic and brown. Putt all other ingredients in except clams. Boil and add wine.
  • Reduce to a simmer for 20 minutes. If it needs more liquied add clam juice. Add clams, simmer for 10-15 minutes.
  • Serve over linguine and top with shredded parmesan cheese. Serves 6-8.

  • While water is heating, warm anchovy oil and olive oil in large saucepan over medium. Add sliced garlic, and cook, stirring constantly, until golden brown, about 2 minutes. Add anchovies and crushed red pepper, and cook, stirring constantly, until warmed through, about 30 seconds. Add clam juice and vermouth and increase heat to medium-high; bring to a boil.
  • Add clams, tossing to coat in sauce, and cook, covered, until clams start to open, 6 to 8 minutes. Using a spider or slotted spoon, transfer clams to a large bowl, reserving mixture in pan. (Discard any clams that do not open.) Once cool enough to handle, remove meat from half of clams, and chop; set aside chopped clam meat and remaining clams in shells. Discard empty shells.
  • Crush tomatoes with hands in a medium bowl, and add with juices to mixture in pan. Add salt and bring to a boil over medium-high. Reduce heat to medium-low, and simmer, stirring occasionally, until thickened and saucy, about 15 minutes. NOTE: About 5 minutes into cooking tomato sauce, add linguine to boiling water.
