Comfort food at its finest! This has been a staple in Nova Scotia homes for generations. Serve with brown bread and butter, and a good cup of tea! Prep time includes soaking the beans overnight.

2 lbs yellow-eyed beans
1 teaspoon baking soda
1 medium onion
1/2 lb salt pork
1/4 cup brown sugar
1/2 cup molasses
2 teaspoons dry mustard
1/2 teaspoon salt

Steps:

  • Soak beans overnight, well covered with cold water.
  • Pour off soaking water and pick over beans to remove any bad ones, or debris.
  • Put beans in a pot.
  • Cover with fresh cold water and add 1 tsp. baking soda.
  • Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
  • Cut onion in quarters and put in bottom of a bean crock or large casserole.
  • Add the partially cooked beans.
  • Put cut up salt pork on top.
  • (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
  • Pour over the beans.
  • Add more boiling water, if needed, to come just to the top of the beans.
  • Also, if needed during baking tme, add more boiling water.
  • Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

1 -1 1/2 lb navy beans (2 1/2 to 3 cups measure)
bay leaf
2 garlic cloves
1/4 cup molasses
1/4 cup maple syrup
3/4 cup ketchup
1 medium onion, diced
2 teaspoons salt
2 teaspoons vinegar
1 1/2 teaspoons dry mustard (Keen's brand is what I use)
2 -3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
4 slices bacon (optional)
reserved bean liquid

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).
  • Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
  • Arrange bacon on top.
  • Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
  • Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

1 pound bacon
1 large sweet onion, such as Vidalia, finely chopped
Four 14-ounce cans pork and beans
1/2 cup dark molasses
1/4 cup light brown sugar, packed
2 tablespoons prepared yellow mustard

Steps:

  • Preheat the oven to 350 degrees F.
  • Fry the bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the pan, leaving the drippings, and drain it on paper towels. Crumble and set aside.
  • Add the onion to the pan with the bacon drippings and saute until softened, a couple minutes. Stir in the beans, molasses, brown sugar, mustard and crumbled bacon, and mix well.
  • Pour the beans into a 3-quart casserole and bake, uncovered, for about 45 minutes.

MAMA NEELY'S BAKED BEANS

Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

2 tablespoons canola oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 pound smoked sausage, sliced
Three 16-ounce cans pork and beans
1/2 cup ketchup
1/2 cup light molasses
1/4 cup light-brown sugar
2 tablespoons apple-cider vinegar
2 tablespoons prepared mustard
Dash of hot sauce, preferably Tabasco

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.

Doctored-up "canned beans" are OK if you're in a hurry...I've done it more than once, but for REAL Baked Beans, give these a try! The aroma of them baking in the oven is heavenly!!! A stoneware bean pot is preferred, but you can use a small covered roaster or casserole if need be. My Dad always used lean salt pork, but I prefer to use a good smoked bacon.

1 lb navy beans
2 teaspoons baking soda
water
1/2 cup light molasses
1/2 cup catsup
1/2 cup light brown sugar
2 teaspoons Worcestershire sauce
2 teaspoons seasoning salt, Lawry's preferred
1 teaspoon dry mustard
1 teaspoon black pepper
1/2 cup onion, chopped
1/2 lb thick slab bacon, diced (thick sliced is OK)

Steps:

  • THE NIGHT BEFORE:.
  • Wash & sort beans for any small stones.
  • Place in a large kettle & cover with water, about 3 inches above the beans.
  • Cover & soak overnight.
  • THE NEXT MORNING:.
  • Drain & add 6 cups fresh cold water.
  • Stir in the baking soda (this helps remove the "music" afterwards, but no guarantees. LOL!).
  • Cover & bring to a boil -- WATCH CAREFULLY so as to not boil over!
  • Reduce heat & simmer for 10 minutes.
  • Drain & reserve the bean water.
  • Preheat oven to 300°.
  • Add remaing ingredients plus 2 cups of the reserved bean water.
  • Place everything into the bean pot (or whatever you're using) & cover.
  • (Use double-thick aluminum foil to cover if need to.).
  • Bake for 3 to 4 hours.
  • IMPORTANT: Check every couple of hours, adding more bean water if needed, so the beans don't cook dry.

1 cup water
¾ cup packed brown sugar
2 small onions, chopped
3 tablespoons ketchup

1 tablespoon vinegar
1 tablespoon mustard
1 teaspoon salt
1 teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 1/2-quart baking dish.
  • Place bacon in a large skillet and cook over medium-high heat until crisp, about 10 minutes; drain and cool on paper towels. Crumble bacon once cooled.
  • Mix bacon, beans, water, brown sugar, onions, ketchup, molasses, vinegar, mustard, salt, and garlic powder together in the prepared baking dish. Cover dish with aluminum foil.
  • Bake in preheated oven until bubbling, 45 minutes.

4 slices bacon
3 tablespoons drippings
1/2 cup onion, chopped
2 (16 ounce) cans pork and beans in tomato sauce
2 tablespoons brown sugar
2 tablespoons catsup
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard

Steps:

  • Cook bacon till crisp.
  • Remove bacon, reserving about 3 Tbsp drippings in skillet. Drain and crumble bacon; set aside. Cook chopped onion in reserved drippings till tender.
  • Stir in two cans pork and beans in tomato sauce, brown sugar, catsup, Worcestershire sauce, and prepared mustard.
  • Turn into a 1 1/2 quart casserole. Bake, uncovered, in a 350 degree oven for 1 1/2 to 1 3/4 hours, or cook in the microwave oven on HI for 10 to 12 minutes.
  • Stir 1/2 way through cooking time, Top with bacon.
  • Let stand a few minutes before serving.

4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

These are the beans my French-Canadian mother used to make. She never measured anything making these so I've estimated the amounts. These taste great with fresh bread. A good dish to keep in mind for pot-lucks. You can add pork or weiners to it if you like. Bacon strips on top work well.

  • Soak beans overnight in water, then boil until tender (not mushy) Note: Soaking is not mandatory but it reduces boiling time.

  • Cover and bake at 325 degrees for about 6 hours.
  • Check beans while they are baking to add water to ensure they do not go dry.

1 pound dry navy beans
6 cups water
1 pinch baking soda
1 bay leaf
6 slices bacon, cut into 1/2-inch pieces
1 yellow onion, diced
⅓ cup molasses
¼ cup packed dark brown sugar
1 teaspoon dry mustard powder
1 ½ teaspoons salt
½ teaspoon freshly ground black pepper, or to taste

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
  • Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.
