FAMILY FAVORITE MISSISSIPPI GREEN BEANS



Family Favorite Mississippi Green Beans image

Marinade these green beans a day or two ahead of time, and simply slow cook, pressure cook, or oven bake on the day you serve them.

Number Of Ingredients 5

6-7 slices bacon cooked and crumbled (reserve drippings) * note below
3/4 stick butter (melted)
1/2 cup brown sugar
2 TB soy sauce
6 cans green beans, drained *note below

Steps:

  • In small bowl, mix melted butter, soy sauce, and brown sugar until sugar dissolves and mixture is well combined.
  • Add bacon bits (with drippings) to butter mixture.
  • Place green beans in large airtight container (I use 2 gallon ziploc).
  • Pour marinade over beans.
  • Make sure all beans are coated with marinade.
  • Place beans in fridge for 12-24 hours.
  • Cook as you prefer:

2 (15 ounce) cans green beans
1 cube beef bouillon cube
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 tablespoon butter
⅛ teaspoon garlic pepper seasoning

Steps:

  • Drain the green beans, reserving 1/2 of the liquid. Dissolve the bouillon cube in the reserved liquid.
  • Place green beans and liquid in a saucepan. Add Worcestershire sauce, soy sauce, butter or margarine and garlic pepper seasoning to taste. Simmer gently for 15 minutes.
  • Remove to serving bowl leaving beans sitting in their liquid. Use a slotted spoon to serve.

1 pound green beans, trimmed
Kosher salt and freshly ground black pepper
1/4 cup hazelnut oil
1/4 cup white wine vinegar
1 teaspoon honey
1 cup chopped and toasted hazelnuts
Lemon zest, for garnish

Steps:

  • Fill a bowl with ice water. Cook the green beans in salted boiling water until tender but still bright green, about 5 minutes, then drain and chill in the ice water to stop the cooking. Remove from the ice water and pat dry.
  • In a large bowl, whisk together the hazelnut oil, vinegar and honey, and season to taste with salt and pepper. Add the green beans to the bowl with the dressing and toss to coat, adding more salt and pepper if needed. Transfer to a serving bowl or platter and top with the toasted nuts and lemon zest.

An old southern recipe from Mississippi for green beans and potatoes. You can delete the bacon or ham hock and they still taste good. Green beans adds a special taste to potatoes and I love it.

2 slices bacon or 1 ham hock
3 medium potatoes
salt and pepper

Steps:

  • In pot cover green beans with water and boil till tender with potatoes and bacon (or ham hock); drain.
  • Add your favorite seasoning (I like butter, salt, and pepper).
  • Remember ham hocks take a little longer than green beans, so if you use a ham hock, boil it first till tender then add the rest and cook. I personally never use ham hock due to fat content--I usually just use the bacon strips. I only listed it here as it was in the old south recipe.

1 cup buttermilk
2 cups all-purpose flour
1 tablespoon salt
1/2 teaspoon pepper
1/2 tablespoon garlic powder
oil (for deep frying)

Steps:

  • Wash and trim green beans; pat dry.
  • Mix the flour, salt, pepper and garlic powder in a bowl.
  • Dip the green beans into the buttermilk and then roll into the flour mixture.
  • Deep fry until golden brown.
  • Drain on paper towels.
