PAUL'S GRILLED GROUPER

This is a South Louisiana secret ... and a great way to grill fish that leaves you worry-free. Not only does this make for easier fish cleaning, but the scales keep the fish from drying out while on the grill. Fish cooked this way consistently results in juicy, moist fillets.

Number Of Ingredients 25

4 tablespoons melted butter
3 cloves minced garlic
1 tablespoon finely grated Parmesan
1 tablespoon Essence, recipe follows
4 tablespoons olive oil
1 (3 1/2 to 4 pound) grouper, fillets removed with scales intact
1/4 cup finely chopped fresh herbs, such as tarragon, thyme, basil or chives
Arugula and Orange Salad, recipe follows
1 tablespoon dried thyme
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
2 cups arugula, cleaned
2 cups baby spinach, cleaned
1/2 red onion, sliced thinly
1 orange, supremed
2 tablespoons Dijon mustard
1/4 cup orange juice
1 tablespoon white wine vinegar
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat the grill to medium-high.
  • In a small bowl combine the butter, garlic, Parmesan, Essence, and olive oil and whisk to combine.
  • Lay the fillets on the grill, scale side down, and brush generously with the melted butter mixture. Close the grill cover and cook for 3 minutes. Open and brush again with the melted butter mixture. Repeat this process until the flesh is firm and opaque, for a total cooking time of about 12 to 15 minutes for this size fish. The last minute of cooking time, sprinkle with the fresh herbs. Remove from the grill and serve immediately with Arugula and Orange Salad.
  • Combine all ingredients thoroughly and store in an airtight jar or container.
  • Recipe from New New Orleans Cooking by Emeril Lagasse and Jessie Tirsch. Published by William and Morrow, 1993.
  • In a large salad bowl, combine the arugula, spinach, red onion, and orange segments.
  • In a small bowl, whisk together the mustard, orange juice, and vinegar. While whisking, slowly drizzle in the oil. Whisk until emulsified and season with salt and pepper.

This recipe came about from trying different ways to prepare grouper. Taking a little of this and then some more from other recipes, I came up with this one that is our favorite. We really enjoy the taste of this and especially the extra crispness when it is finished in the broiler. Yes, you can just bake it if you don't like using a broiler. Paprika may be substituted for Old Bay Seasoning. Note: If broiling, Do NOT omit the mayonnaise as it prevents fish from being dry.

2 lbs grouper fillets, skined
1/4 cup olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon finely minced parsley
1/4 teaspoon black pepper
1/4 teaspoon Old Bay Seasoning
1/3 cup plain fine breadcrumbs
2 -3 tablespoons light mayonnaise

Steps:

  • Prepare your baking pan or broiler with Pam.
  • Preheat oven to 350 degrees.
  • In a small dish, combine onion powder, garlic powder, minced parsley, black pepper, and Old Bay. Reserve.
  • In another small dish, combine the olive oil with fresh lemon juice. Reserve.
  • Brush 2 tablespoons of the olive oil mixture on both sides of the fillets.
  • Sprinkle both sides of the fillets with dry spice mixture.
  • Sprinkle both sides of the fillets now with fine breadcrumbs.
  • Bake fillets about 10 minutes; brush with remaining olive oil mixture and spread with mayonnaise.
  • Broil until fish flakes easily; depending on thickness of fillets this can be from 3-6 minutes or so.
  • Enjoy!

GROUPER CRAB CRUSTED BAKED GROUPER

I like the taste of Grouper and I had some crab on hand,so I decided to try to make a crust on top to keep the grouper from drying out while baking. I had all the other items listed either in the freezer or frig.We had a nice garden and grew the peppers,jalapeno's. Thou they do not freeze well,they can be used in something like this that is being baked.

4 grouper fillets (6 ounce each)
1 (6 ounce) can crabmeat, drained and flaked
2 tablespoons parmesan cheese
2 tablespoons shredded mozzarella cheese
seasoned bread crumbs
2 tablespoons chopped red bell peppers
2 tablespoons chopped yellow bell peppers
2 green onions, chopped
1/4 jalapeno pepper, seeded and minced
4 tablespoons butter, melted
salt and pepper

Steps:

  • 1.Preheat the oven to 375 degrees F.
  • 2.In a medium bowl, stir together the bread crumbs, red pepper, yellow pepper, green onions, jalapeno, butter, crab meat, and mozzarella cheese.
  • 3.Arrange seasoning grouper fillets with salt and pepper in a single layer in a 9 x 13 inch baking dish.
  • 4.Spread the crumb topping evenly over the fish.
  • 5.Bake for 30 minutes in the preheated oven, or until fish is easily flaked with a fork. If you have thin fillets, you may broil for 10 minutes instead of baking.

1/2 cup butter or 1/2 cup margarine, softened
3 tablespoons mayonnaise
3 tablespoons green onions, chopped
2 teaspoons fresh chives, chopped
6 (8 ounce) grouper fillets, about 1 inch thick
1/4 cup lemon juice
1/4 teaspoon ground black pepper
lemon slice (optional)
fresh chives (optional)

Steps:

  • Combine cheese, margarine, mayonnaise, green onions and chives in a small bowl and stir well. Set aside.
  • Place fillets on a lightly greased rack in a broiler pan. Dizzle lemon juice over fillets; sprinkle with pepper. Broil 6 inches from heat 8 to 10 minutes or until fish flakes easily when tested with a fork.
  • Remove from oven and spread tops of fillets with cheese mixture. Broil an additional 2 minutes or until cheese is lightly browned and bubbly.
  • Remove fillets to a serving platter. If desired, garnish with lemon slices and fresh chives.

24 ounces grouper fillets
1 cup pecan halves, crushed
1/4 cup Bourbon
1/4 cup olive oil
1/8 teaspoon sea salt
1/8 teaspoon black pepper
2 tablespoons lime juice
2 tablespoons honey

Steps:

  • Stir together bourbon, oil, salt, pepper, lime juice and honey until emulsified. Pour into shallow dish.
  • Lay grouper filets in bourbon mixture. Turn to coat and refrigerate for 1-4 hours.
  • Pour crushed pecans into another shallow dish.
  • Pour enough olive oil into deep frying pan to cover bottom and preheat on medium-low.
  • Dip filets into pecans, pressing firmly to coat evenly. Turn over and coat other side.
  • Fry in pan until pecans turn golden brown. Gently turn over and cook other side; approximately 10 minutes per side.
  • Can also use with other firm-fleshed fish or chicken.

1/3 cup tequila
1/2 cup triple sec
3/4 cup lime juice
1 teaspoon sea salt

3 medium tomatoes, diced

1 small jalapeno, seeded and finely chopped
1 pinch sugar
4 tablespoons chopped cilantro

Steps:

  • PLACE FISH IN A LARGE DISH.
  • COMBINE TEQUILA, TRIPLE SEC, LIMEJUICE, SALT, GARLIC AND 1 TABLESPOON OIL AND POUR OVER FILETS AND RUB INTO FISH.
  • COVER AND MARINATE FOR 1/2 HOUR AT ROOM TEMPERATURE, TURNING FILLETS ONCE.
