MUSSELS WITH CHORIZO AND BEER
Steps:
- Place the olive oil in a large skillet in your wood oven or on the stove over medium-high heat. Once it starts to smoke, add the chorizo and brown it off, using a wooden spoon to break up the meat as it cooks.
- Once the chorizo is broken up and caramelized, add the onion and bell pepper, season with salt and pepper, and allow the vegetables to sweat, stirring occasionally, for 5 minutes. Add the jalapeno and garlic and cook the mixture for 3 minutes more. Add the beer and stir well to dislodge any delicious caramelized goodness from the bottom of the skillet. Bring the mixture to a boil and allow the beer to reduce by three-quarters.
- While the beer is reducing, open the can of tomatoes, pour them into a bowl and use your hand to crush the tomatoes into little bits. You can just use diced canned tomatoes, but something about those big uniform chunks of canned tomato is just off-putting to me. So I prefer this method. Add the tomato to the skillet, re-season to taste, and allow the mixture to simmer gently for at least 15 minutes, until the flavors have all come together and the tomato liquid has reduced somewhat.
- While your sauce is cooking, clean your mussels. If you haven't cleaned mussels before, a quick primer: Place the mussels in a bowl of clean, cool water. As the mussels sit in the water they will filter out some of the sand and grit in their systems and leave it on the bottom of the bowl instead of in your teeth later. Use a brush to scrub the shells to dislodge any other dirt or barnacles that will come off and muddy up your final dish. Some of the mussels will have hairy fibers sticking out of one side of their shells. This is called the beard. Use your fingers or tweezers to pull these off by tugging them outward from the side of the shell. If a mussel is open, give it a squeeze or tap it on the edge of the counter. If it doesn't close back up, throw it away. Same goes for any cracked or broken mussels.
- Once your mussels are all clean, preheat a large roasting pan in your wood oven. Your oven should be very hot - pizza hot. Add the mussels to the dry pan and then pour the chorizo sauce over the top. Slide the mussels back into the oven and allow to cook just until the mussels open, rotating the pan once. If your oven is hot enough, this could happen in as little as 1-2 minutes. It won't take any more than 5.
- Remove from the oven, serve immediately with some crusty bread, and be happy.
BEER-STEAMED MUSSELS WITH CHORIZO

- Heat oil in Dutch oven over medium. Cook chorizo, onion, chopped garlic, cumin, and salt, stirring frequently to break up chorizo, until onions are softened and chorizo is cooked through, about 10 minutes. Add beer and butter; increase heat to medium-high and bring to a boil. Cook 1 minute to reduce slightly. Add mussels, cover, and cook until mussels open, 5-8 minutes; discard any mussels that do not open.
- Spoon mussels into bowls. Ladle brothy chorizo mixture over. Top with cilantro, then hot sauce, if using. Rub bread with cut side of garlic clove, if using, and serve alongside.
SPICY MUSSELS WITH CHORIZO AND WINE

- In a large saucepan or Dutch oven, cook the onions in the butter over medium heat until soft, about 5 minutes. Add the garlic and chorizo to the onions and cook until the sausage loses its raw color, about 5 minutes. Add the harissa and red pepper flakes, and then turn up the heat to high.
- Once fragrant, deglaze the pan with the wine, allowing to bubble for a minute. Lower the heat to medium, add the chicken stock and bring to a simmer. Add the prepped mussels and cover to steam until the mussels open, 3 to 4 minutes. Add the cream and stir. Serve immediately with plenty of sliced French bread for dipping.
MUSSELS WITH CHORIZO
Steps:
- Working, 1 at a time, scrub any grit from shells under running water. Discard open mussels that do not close with a few taps of the finger and any with cracked shells. Put the mussels in a bowl of cold water.
- Heat the oil in a large wide pot over medium-high heat and add the chorizo. Using a wooden spoon or potato masher, mash the chorizo into chunks, so it resembles ground beef. Saute until brown, about 8 minutes. Remove chorizo to a bowl. In the same pot, add the onion and garlic and season with salt and pepper, to taste. Saute 3 minutes to sweat. Deglaze the pan with the wine. Pull the mussels from bowl and transfer them and the water to the pot, do not strain, leaving behind any sand and grit that has sunk to the bottom. Stir to coat. Add the chorizo back into the pot and cover. Cook over medium heat until the mussels open, 5 to 10 minutes. Transfer to a large serving bowl, sprinkle with parsley and serve immediately.

- Gently cook the shallots, parsley stalks, garlic and chorizo in the oil in a large pan with a lid or casserole dish until the shallots are softened - about 5 mins. Add the cavolo nero and cook for a couple more mins, then add the wine and cook for another 1 min.
- Stir in the beans, then add the mussels, ensuring they're well coated with the sauce, and cover with the lid. Cook for a few mins, shaking the pan to release the mussel juices, until they've all opened (discard any that haven't). Scatter over the parsley leaves and squeeze over the lemon to serve.

This is an Emeril recipe that got rave reviews from my family. We love mussels, and here in Holland they are locally cultivated. So during the season we try to have them once a week. I try new recipes frequently to change the pace. This recipe is my husbands favorite and gets requested often. It has an amazing flavor. I have changed it a little to suit my family's taste from the original recipe. Have plenty of crusty bread, as the juice is oh sooooo good! This recipe serves either 2 meal portions or a first course for 4-6 people. Rule of thumb in Holland is to serve 1 kg of mussels per person, for a dinner portion.

- In a large saute pan, cook the chorizo until brown over medium-high heat, about 4 minutes. Remove with a slotted spoon and drain on paper towels. Drain off all but 1 tablespoon of fat from the pan.
- Add butter and when melted, add the onions, shallot, fennel seeds, and pepper. Cook, stirring, until veggies are tender.
- Add the garlic and tomatoes, and cook, stirring, for 2minute.
- Add mussels to pan. Add the wine, 1/4 cup cream, and parsley, and bring to a boil. Stir mussels, cover, and cook until the shells have opened, about 6-8 minutes.
- Remove mussels from pan to serving bowls. Discard any shells that do not open.
- In pan with juice, bring to a boil. Allow to boil for 3 minutes. Add sausage and cream. Bring to boil for 1 minute. Pour juice over mussels.
- Serve immediately with hot French bread for dipping.

MUSSELS WITH CHORIZO AND FENNEL
I made this up one day when my Dad was coming to visit. He's a big mussels fan and I always make mussels but I always went with this heavier tomato sauce which I was getting tired of. I came up with this sort of mussels soup/stew. Bottom line is it is simple, tasty and looks great. I use the same wine that I serve (wine with soup? Wha?) to cook with and I serve it with some crusty French bread. This is very filling.

- Remove the tops and stem bottom of the fennel, reserving the green 'hairs', and slice vertically into thin slices. Finely chop those hairs as well.
- In a large sauté pan, brown the sausage over medium high heat with a little olive oil.
- Once the sausage is browned, add the fennel and 1 cup of wine. Braise for about 10 minutes until fennel is flexible but still crunchy and the wine has reduced by half.
- Add the tomatoes and garlic to the sausage/fennel mixture. Crush about half the tomatoes with the back of a spoon to release some of their juices. Cook for about another 5-10 minutes.
- Meanwhile add the other cup of wine and mussels to a stockpot, cover and cook on medium heat until mussels are cooked, about 4-5 minutes.
- Once the mussels are cooked (discard any unopened mussels), combine the mussels (and liquid) with the sausage mixture and mix well. Cook for about another 5 minutes to meld the flavours. Season to taste.
- Serve in large soup bowls, spooning a little of the broth in each bowl and topping the fennel, chorizo and mussels mixture with some of the reserved fennel tops.

PASTA WITH MUSSELS AND CHORIZO

- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté chorizo and shallots, stirring, until chorizo is golden brown on edges, about 4 minutes. Add garlic and sauté, stirring, 1 minute. Add wine and simmer until liquid is reduced by half, about 5 minutes. Keep sauce warm, covered.
