1 tablespoon vegetable oil
1/2 medium white onion, chopped
1/2 lb fresh mushrooms, halved and thinly sliced
1 tablespoon chopped fresh epazote leaves (or oregano)
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper, to taste
2 cups shredded monterey jack cheese
crisp corn tortilla chips

Steps:

  • Preheat oven to 375°.
  • In a medium skillet, heat the oil over medium heat, and cook the onion until softened, 3-4 minutes.
  • Add in the mushrooms, epazote, salt, and pepper; cook, stirring, until all the moisture has evaporated, 3-4 minutes.
  • Grease a shallow ovenproof earthenware plate or gratin dish, then transfer the mushrooms to the plate.
  • Spread the cheese on top and bake until the cheese is melted and bubbly, about 6-8 minutes.
  • Serve at once with the chips.

1/2 pound mushrooms
1/2 pound Stilton cheese
2 large garlic cloves
1 tablespoon unsalted butter
1/3 cup heavy cream
Accompaniment: chunks of crusty whole-grain bread

Steps:

  • Preheat oven to 425°F.
  • Trim mushrooms and halve if small or quarter if large. Crumble enough Stilton, not including rind, to measure about 1 cup. Force garlic through a garlic press.
  • In a 9-inch heavy skillet heat butter over moderately high heat until foam subsides and sauté mushrooms, stirring, until golden, about 2 minutes. Stir in garlic and cream and gently boil until slightly thickened, about 4 minutes. Season mixture with salt and pepper and divide between 2 shallow 1-cup gratin dishes. Mushroom mixture may be made 1 day ahead and chilled, covered.
  • Top mushroom mixture with Stilton and on a baking sheet bake in middle of oven until cheese is melted and bubbling, 5 to 10 minutes.
  • Serve mushrooms with bread for sopping up sauce.

1 cup no-sugar-added spaghetti sauce
4 large portabella mushroom caps
1 (4 ounce) package reduced-fat goat cheese, cut into 4 pieces
2 tablespoons pine nuts, finely chopped
1 tablespoon chopped fresh basil
1 sprig fresh basil (to garnish) (optional)

Steps:

  • Preheat the oven to 375*F.
  • Spread the sauce in the bottom of a 9"x9" baking dish.
  • Arrange the mushroom caps, gill side up, on top.
  • Place a piece of goat cheese on each mushroom.
  • Sprinkle evenly with the pine nuts.
  • Bake for 30 minutes, or until hot and bubbly.
  • Top with the chopped basil.
  • Garnish with the basil sprig, if using.
  • Makes 4 servings.
  • Enjoy!
