WILD MUSHROOM PUFF PASTRY

1 tablespoon olive oil
1 shallot, minced
1 pound assorted wild mushrooms, sliced
2 cloves roasted garlic, minced
1 cup grated Parmesan cheese
1 bunch fresh thyme, leaves stripped and chopped
salt and black pepper to taste
½ cup heavy cream
1 (17.25 ounce) package frozen puff pastry, thawed

Steps:

  • Preheat oven to 400 degrees F.
  • Heat olive oil in a large skillet over medium-high heat. Add shallot; cook and stir until tender, about 5 minutes. Lower heat to medium-low and add mushrooms. Cook and stir until mushrooms reduce by half, about 15 minutes. Stir in roasted garlic, Parmesan cheese, and thyme. Season to taste with salt and pepper. Stir in cream. Remove from heat and allow mushroom mixture to cool. It will thicken as it cools.
  • Unfold pastry sheet onto floured surface and lightly roll into a 12 x 15 inch square. Cut into eighteen 3 inch squares. Place a mounded teaspoon of mushroom filling in the center of each square. Fold pastry over filling to form a triangle. Pinch edges firmly together with a fork to seal.
  • Bake 12 to 16 minutes, or until golden brown. Serve hot or at room temperature.

2 tablespoons butter
1/2 pound fresh mushrooms, chopped
1 small onion, finely chopped
1 garlic clove, minced
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, softened
1 package (17.30 ounces) frozen puff pastry, thawed

Steps:

  • Preheat oven to 400°. For filling, in a large skillet, heat butter over medium heat. Add mushrooms and onion; cook and stir until tender, 3-5 minutes. Add garlic and pepper; cook 1 minute longer. Stir in cream cheese until melted; remove from heat., Unfold one pastry sheet; cut into 9 squares. Cut each square diagonally in half. Place a scant teaspoon of filling on one half of each triangle. Brush edges of pastry with water; fold over to form a triangle. Seal edges with a fork; place 1 in. apart on parchment-lined baking sheets. Repeat with second pastry sheet and remaining filling., Bake until golden brown, 12-15 minutes. Remove from pans to wire racks. Serve warm. Freeze option: Cover and freeze unbaked triangles on parchment-lined baking sheets until firm. Transfer to a freezer conatiner; return to freezer. To use, bake as directed.

This is a delicious variation of the popular turnover-style pastries. A splash of sherry intensifies the mushroom flavor and turns these easy pastries into a gourmet treat.

1 teaspoon vegetable oil
12 ounces mushrooms, finely chopped
1/2 cup very finely chopped onion
1 1/2 tablespoons flour
1 1/2 tablespoons sherry wine
1/8 teaspoon salt
1/8 teaspoon pepper
1 (10 ounce) container refrigerated biscuits

Steps:

  • Heat oil in a medium nonstick skillet over medium heat. Add the mushrooms and onion. Cook, stirring frequently, until most of the mushroom juices have cooked out, about 4 minutes. Sprinkle with flour, stirring to mix well.
  • Stir in sherry, salt and pepper. Cook and stir until mixture is almost dry, about 2 minutes. Remove pan from heat and set aside to cool slightly.
  • Preheat oven to 400 minutes.
  • Have an ungreased baking sheet ready. Separate biscuits and place them between two sheets of waxed paper severl inches apart. With a rolling pin, roll biscuits into 4 to 5 inch circles. Carefully remove the top sheet of wax paper.
  • Using a heaping tablespoonful of filling, place slightly off-center on each circle. Carefully fold biscuits over, making a half-circle and stretching the dough gently over the filling. Crimp the edges together with a fork. Place pastries on baking sheet.
  • Bake 8 to 10 minutes, until golden brown. Serve hot or at room temperature.

  • Bake pastry shells according to package directions.
  • Ten minutes before serving sautee mushrooms in olive oil over high heat until golden brown.
  • Add garlic and cook for 1 minute.
  • Add wine and cook until reduced by 1/2.
  • Lower heat add cream and seasonings.
  • Cook until sauce thickens.
  • Divide mushroom mixture into six cooled shells.

PIROSHKI (A SAVOURY, FILLED PASTRY)

Make these for your next party as an appetizer. Piroshki are a very popular pastry here in Greece, probably brought over with the return of the Greeks from 'Pontos', now a part of Russia. Here, they are traditionally fried, but I find them much too rich (although very good) that way. This version is baked, and does not suffer any (just less calories) for it. I have given 3 different filling recipes. One for meat, one potato, and one mushroom. They are all great and each recipe will yield enough filling for 20-22 pastries. The prep time approximate - the pastry does need two hours to 'rest'.

3/4 cup unsalted butter, chilled
2 cups flour
1/4 teaspoon salt
4 -6 tablespoons ice water
1 egg yolk (for egg wash for pastry)
2 tablespoons butter
1 large onion, chopped
3/4 lb ground beef
2 hard-boiled eggs, minced
3 tablespoons minced fresh dill (or 1 1/2 tsp dried dill weed)
salt and pepper
1 egg
2 tablespoons water
2 medium onions, minced
3 tablespoons butter
1 lb potato
1 cup grated graviera cheese (you can sub gouda or cheddar)
1 egg
salt and pepper
1 lb mushroom, minced
1 medium onion, minced
2 shallots or 2 green onions, minced
4 tablespoons butter
1 teaspoon fresh lemon juice
salt and pepper
1 pinch of grated nutmeg
4 ounces cream cheese, softened (or 1 medium-sized potato, cooked and mashed)
1 egg

Steps:

  • For pastry: Cut butter into pieces.
  • Combine flour, butter, and salt using a knife or pastry blender.
  • Sprinkle with 4 tablespoons ice water.
  • Form into ball as you would pie dough.
  • May need to add remaining 2 tablespoons water.
  • Wrap in plastic wrap and refrigerate for 1 hour.
  • Place pastry dough on floured board; roll out into rectangle.
  • Fold over into thirds.
  • Roll out again into rectangle.
  • Continue rolling and folding five times.
  • Rewrap in plastic; return to refrigerator for 1 hour.
  • Preheat oven to 400°F.
  • Grease baking sheet.
  • Roll dough out to 1/8-inch thickness.
  • Cut dough using 3 ½-inch round cutter.
  • Place about 1 tablespoon of filling on each pastry circle.
  • Fold dough over making half moons; press together edges together using ice water to seal.
  • Place pies on baking sheet.
  • Whisk together egg yolk and 2 tblsps water; brush pies with egg wash.
  • Bake about 30-40 minutes or until golden brown.
  • For Meat Filling: sauté onion in 2 tablespoons butter until soft.
  • Add ground beef and sear until light gravy forms.
  • Let cool.
  • Mix in egg, dill, salt and pepper.
  • For Potato Filling: Fry the onions in the butter until soft and golden-brown.
  • Boil the potatoes in their jackets, then peel and mash them.
  • Let cool slightly.
  • Season with plenty of salt and pepper and mix in the onions and egg.
  • For Mushroom Filling: In a pan or skillet, saute the mushrooms, onion, and shallots in the butter until the onion is translucent.
  • Add the lemon juice, salt, pepper, and nutmeg.
  • Continue to cook, stirring until nearly all the moisture is evaporated.
  • Cool mixture slightly and mix in cream cheese or mashed potato.
  • I like to sprinkle poppy seeds over the egg washed pastries filled with the mushroom filling.
  • Note: these pastries are very good made with phyllo pastry, too.

Do you like mushrooms and puff pastry, well this is the appetizer for you. My friend made these for me and I absolutely loved them. You can use any mixture of mushrooms that you prefer, or go with just one type. I personally prefer wild and cremini. Use a good quality wine and parmesan cheese, when the dish is ready it will have a nicer flavor.

1 sheet puff pastry, 10 x 10 inch thawed, and rolled out 1/8-inch thickness
1 egg, lightly beaten
4 tablespoons butter
4 cups mixed mushrooms, whole (mixture, your choice)
3/4 cup onion, sweet, coarsly chopped
1 shallot, small, french, finely chopped
1/2 teaspoon pepper, cayenne
1/2 teaspoon salt, sea
1/4 cup white wine, good quality
1/4 cup creme fraiche or 1/4 cup sour cream
3 tablespoons parmesan cheese, finely grated, good quality
2 teaspoons thyme, fresh, chopped

Steps:

  • Preheat oven to 400.
  • Lay pastry on a lightly floured surface and trim to form square.
  • Cut the pastry into 36 squares and place on baking sheet, then brush lightly with egg.
  • Bake until golden 10 - 12 minutes and remove from oven, let cool.
  • Lower the heat to 350.
  • Heat the butter in a pan over med - high heat. Add the mushrooms, onions and shallots.
  • Season with the sea salt and cayenne pepper and cook until mushrooms brown - 10 minutes.
  • Add the wine and cook until it has all been absorbed.
  • Put the mushrooms mixture, creme fraiche, cheese and herb in a food processor or mixer and pulse 2 - 3 times, just until the mixture is combined, you don't want to puree it.
  • To assemble cut each puff-pastry square in half crosswise and fill with 1/2 tsp mushroom filling.
  • Then bake for 5 minutes.
  • This is best served warm.

This is a really easy recipe that looks and tastes like it took hours to make. It calls for wild mushrooms, but you can use any or a mixture of whatever is in season. If you can't find the pastry squares, you may use the round ones that have the removeable tops.

1/2 lb mixed mushroom (oyster, Chanterelle, shitake...)
2 tablespoons vegetable oil
2 shallots, chopped
salt
fresh ground pepper
1/4 cup cognac or 1/4 cup brandy
1 cup heavy cream
1 tablespoon unsalted butter, softened
1 tablespoon fresh chives, tarragon or 1 tablespoon basil
1/2 lemon, juice of
1 package frozen puff pastry (6 squares)

Steps:

  • Saute mushrooms and shallots in oil until soft.
  • Season with salt and pepper.
  • Add cognac or brandy and reduce slightly; add cream and boil until cream thickens slightly.
  • Stir in butter, herbs,and lemon juice.
  • Taste and season with additional salt and pepper if needed.
  • Bake the puff-pastry rounds or squares according to package directions.
  • Split baked shells in half and divide the mushroom mixture between the bottom halves of the shells.
  • Place pastry tops on top and serve.
  • Optional: I like to add a little grated Gruyere or Swiss cheese after adding the mushroom mixture to the shells and baking just enough to melt the cheese.
