MUSHROOM-FILLED MINI PHYLLO SHELLS

Sautéed mixed mushrooms become delectable appetizers when you combine them with garlic, feta, and horseradish sauce, then use the filling in flaky mini phyllo shells.

Yield Serves 5; 3 mini shells per serving

Number Of Ingredients 10

1 teaspoon olive oil
4 ounces sliced button mushrooms
4 ounces sliced shiitake or brown (cremini) mushrooms, or a combination
3 medium garlic cloves, minced
3 tablespoons brandy or dry sherry (optional)
1 tablespoon minced fresh parsley
1/8 teaspoon pepper
1 tablespoon plus 3/4 teaspoon crumbled fat-free feta cheese
15 frozen mini phyllo shells (1.90-ounce box), thawed
2 teaspoons (scant) bottled horseradish sauce (not bottled horseradish)

Steps:

  • In a large nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Add the mushrooms, garlic, and brandy, stirring to combine. Cook for 5 to 6 minutes, or until the mushrooms are soft, stirring frequently. Increase the heat to high and cook for 1 to 2 minutes, or until the liquid has evaporated, stirring frequently.
  • Stir in the parsley and pepper. Remove from the heat.
  • Just before serving, spoon 1/4 teaspoon feta into each phyllo shell. Top each with 1 heaping teaspoon mushroom mixture, then with 1/8 teaspoon horseradish sauce. Serve immediately.
  • Horseradish sauce, usually found in the condiment section of supermarkets, tastes much milder and has less heat than bottled horseradish. The sauce is similar to mayonnaise with a slight kick of horseradish but contains less fat and fewer calories.

30 mini phyllo tart shells
1 (12 ounce) package frozen spinach souffle (such as Stouffer's®)
2 teaspoons unsalted butter
2 ½ cups diced fresh mushrooms
1 clove garlic, minced
4 slices cooked bacon, crumbled
2 tablespoons grated Parmesan cheese, or to taste
1 teaspoon chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper and place phyllo shells on top.
  • Remove souffle from the box, take off plastic cover, and microwave on High power for 6 minutes. Remove carefully, stir, and set aside.
  • Place butter in a nonstick skillet over medium-high heat. Saute mushrooms until they darken and begin to shrink, about 4 minutes. Add garlic and continue to stir, about 1 minute. Remove from heat; Add souffle and bacon to mushrooms and garlic and mix until evenly incorporated.
  • Fill each phyllo shell with souffle mixture, dividing evenly, about 1 rounded teaspoonful each. Sprinkle each filled shell with Parmesan cheese.
  • Bake in the preheated oven until cheese is melted, about 15 minutes. Serve warm or at room temperature and garnish with fresh parsley.

3 packages (1.9 ounces each) frozen miniature phyllo tart shells
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and finely chopped
1/2 cup shredded part-skim mozzarella cheese
3 green onions, chopped
1/4 cup whipped cream cheese
2 tablespoons minced fresh parsley
2 tablespoons grated Parmesan cheese
2 tablespoons sour cream
1 tablespoon mayonnaise
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place tart shells on a baking sheet. In a small bowl, combine the remaining ingredients; spoon into tart shells., Bake at 350° until lightly browned, 10-15 minutes. Serve warm. Freeze option: Freeze cooled baked pastries in freezer containers, separating layers with waxed paper. To use, reheat pastries on a baking sheet in a preheated 350° oven until heated through.

¼ cup diced onion
¼ cup diced green bell pepper

2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
2 ounces cream cheese, softened
½ teaspoon parsley flakes
2 (1.9 ounce) packages mini phyllo tart shells
½ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place phyllo shells on a baking sheet.
  • Melt butter in a large skillet over medium-high heat. Add mushrooms, onion, and bell pepper. Cook until onion is translucent and mushrooms have softened, about 5 minutes. Add steak, Worcestershire sauce, and soy sauce; cook for 5 minutes.

4 tablespoons butter
3 shallots, chopped
1/2 lb regular portabella mushrooms or 1/2 lb baby portabella mushrooms, finely chopped
2 tablespoons dry white wine
2 tablespoons flour
1/2 cup heavy cream
2 tablespoons chopped fresh parsley
1/2 teaspoon dried basil
1/2 teaspoon lemon juice
1/2 teaspoon salt
1/8 teaspoon cayenne

Steps:

  • Preheat oven to 350 degrees F
  • In a large skillet, melt butter over medium heat and add shallots, cooking until softened about 2 minutes
  • Add mushrooms and cook until tender and almost all liquid is cooked away, stirring occasionally
  • Add wine and cook until wine is almost evaporated, stirring occasionally
  • Sprinkle flour over mushroom mixture and cook and stir until well blended, about 2 minutes
  • Increase heat to high and add cream, stirring well until mixture comes to a boil
  • Remove from heat and stir in parsley, lemon juice, salt and cayenne, and let cool slightly
  • Place prepared phyllo shells on a baking sheet and fill almost to the top with mushroom mixture
  • Bake for 5-8 minutes until heated through

4 sheets phyllo dough or 1 (8 ounce) can pillsbury crescent roll dough
3 1/2 tablespoons butter, separated
8 ounces fresh mushrooms, finely chopped
1 tablespoon flour
1 finely chopped shallots or 2 tablespoons onions
2 garlic cloves, minced
1/2 cup heavy cream
1/4 cup freshly grated parmesan cheese
2 tablespoons chopped fresh parsley, for garnish (optional)

Steps:

  • Heat oven to 350°F.
  • Melt 2 tbsp butter in a large skillet over medium heat.
  • Add mushrooms, shallots and garlic & flour; mix well.
  • Cook 5 minutes or until tender, stirring frequently.
  • Add cream and cheese; mix well.
  • Cook 2 to 3 more minutes or until most of the liquid has evaporated, stirring frequently; set aside.
  • Melt remaining butter in a small dish in microwave.
  • Brush one sheet of phyllo with butter, place another sheet on top, and brush with butter, repeat, do not butter top of last sheet.
  • Cut phyllo into 24 equal squares, and place each square into ungreased mini muffin cups.
  • Spoon one heaping teaspoon mushroom mixture into each cup.
  • Bake at 350°F for 8-10 minutes or until golden brown.
  • Sprinkle with parsley.

1 1/2-2 ounces gouda cheese, shredded

Steps:

  • Preheat oven to 350°F.
  • Clean mushroom (remove stem and gills) and chop in roughly 1/8 inch pieces (does not need to be exact).
  • Combine ricotta, chopped mushroom, parsley, salt, Italian seasoning and pepper.
  • Fill mini shells with filling (they will be very full). Top each one with a little Gouda.
  • Cover a baking sheet with foil and spray with cooking spray. Place filled shells on baking sheet and bake for 10-15 minutes or until cheese is melted and filling is hot.
  • Let cool for 5 minutes before digging in!
