1 pound ground sirloin
3 tablespoons Worcestershire sauce
1 egg
⅓ cup dry bread crumbs
½ small onion, chopped
salt and ground black pepper to taste
¼ cup butter, divided
1 (16 ounce) package mushrooms, sliced
2 tablespoons all-purpose flour
1 (10.5 ounce) can beef broth
1 teaspoon ground mustard
⅓ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a baking sheet with oil.
  • Combine ground sirloin, Worcestershire sauce, egg, bread crumbs, onion, salt, and pepper in a bowl. Mix well. Divide into golf ball-sized meatballs. Place on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the center, about 15 minutes.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add mushrooms; cook and stir until soft, about 10 minutes. Push mushrooms to the side of the pan.
  • Melt remaining 2 tablespoons butter in the skillet; whisk in flour. Add broth and mustard; bring to a boil. Add meatballs and cook until some sauce is absorbed, 10 to 15 minutes. Remove from heat. Add sour cream and stir to combine.

24 oz white mushroom, finely chopped
1 medium onion, diced
3 cloves garlic, minced
1 cup whole wheat breadcrumbs
½ cup quick-cook oats
¼ cup fresh parsley, chopped
2 tablespoons grated parmesan cheese
½ teaspoon dried oregano
½ teaspoon dried rosemary
½ teaspoon dried thyme
½ teaspoon salt
½ teaspoon pepper
½ teaspoon cayenne, optional
2 eggs

Steps:

  • In a skillet over medium heat, add cooking oil or water and mushrooms. Cook down until mushrooms begin to brown, stirring occasionally.
  • Add the onion and cook until onions are translucent. Add the garlic and stir until fragrant. Transfer to a large bowl.
  • To the mushroom mixture, add breadcrumbs, oats, parsley, Parmesan, oregano, rosemary, thyme, salt, pepper, and cayenne, and stir to combine.
  • Add eggs and mix well.
  • Cover and refrigerate for at least 2 hours, or overnight.
  • Preheat oven to 375°F (190°C).

It is rare that meatballs can be described as light, but these are. You bake them in the oven at a low temperature and the result is a very tender meatball. The mushroom base renders a flavor that is more vegetal than meaty. The recipe is easy to double and the meatballs freeze well. They are great to have on hand.

1 cup cubed Italian bread (2 ounces)
1/4 cup milk
1 medium carrot (about 4 ounces), cut in 1/4 inch dice
2 teaspoons extra virgin olive oil
1/2 pound lean ground beef
1/2 pound roasted mushroom base (just under 1/2 recipe, about 1 1/3 cups)
1/4 cup finely chopped onion
3 tablespoons beaten egg (1/2 extra large egg)
2 tablespoons finely chopped flat-leaf parsley
Salt to taste (about 3/4 teaspoon)
Freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees. Put the bread in a bowl, toss with the milk (add a little more milk if 1/4 cup isn't enough to moisten all the bread) and let soak for 20 minutes.
  • Meanwhile toss the carrots with 2 teaspoons olive oil on a parchment-covered sheet pan and roast for 15 to 20 minutes, stirring every 5 minutes, until tender and lightly browned (you can also make the mushroom base at this time).
  • Squeeze the milk out of the bread and crumble the bread into a large bowl. Add the beef, mushrooms, carrots, onion, egg, parsley, salt, and pepper and mix together well.
  • Turn the oven down to 300 degrees. Line a sheet pan with parchment. Working in batches, pulse the meat and vegetable mixture in a food processor fitted with the steel blade until pasty. Return to the bowl. Fill a small bowl with water for dipping your hands, then with wet hands form 1-ounce balls, which will be about the size of a golf ball, and place them on the parchment-lined baking sheet. You will need to keep wetting your hands.
  • Bake 40 minutes, or until the meatballs are nicely browned. Remove from the oven and if desired, simmer for up to an hour in tomato sauce. I like to serve these with spaghetti.

2 pound ground pork
1 large onion (chopped)
3 tablespoon fresh dill (chopped)
2 eggs
¾ cup bread crumbs
¼ cup buttermilk
1 tablespoon hot sauce (I used Sriracha sauce)
salt and pepper to taste
vegetable oil ( for frying)
½ pound cremini mushrooms (sliced)
4 tablespoon unsalted butter
¼ cup all-purpose flour
¼ cup white wine
½ cup heavy cream
1 cups chicken broth
salt and pepper to taste

Steps:

  • Combine the meatballs: Add all the meatball ingredients (excluding the vegetable oil) to a large bowl and mix well using your hands. Shape into 1 inch meatballs. You should get about 40 to 50 meatballs.
  • Prep for cooking: Line a baking sheet with paper towels. Add some vegetable oil to a large skillet, about 1/4 cup and heat it over medium-high heat.
  • Cook the meatballs: Add meatballs to the skillet and cook. If not all meatballs fit in the skillet you will have to do this in a couple batches. Cook the meatballs on all sides, adding more oil if needed in between batches. Remove meatballs from skillet to prepared baking sheet, to soak up the oil.
  • Saute the mushrooms: Discard any leftover oil from the skillet and add the butter and melt. Add the mushrooms to the skillet and saute for about 5 minutes until they start to brown.
  • Create the sauce: Sprinkle the flour over the mushrooms and stir, cook for about 1 minute to remove the raw taste of flour. Add the white wine, heavy cream and chicken broth. Cook for 10 minutes, stirring occasionally. The sauce should thicken and reduce a bit. If the sauce is too thick add a bit more heavy cream or chicken broth.
  • Finish the dish: Add the meatballs to the mushroom sauce and toss them around making sure they're covered in the sauce. Cook for 2 more minutes until they heat through, then garnish with fresh parsley or dill. Serve over mashed potatoes, noodles or rice.

1/2 cup bread crumbs
1 small onion ((finely chopped))
2 Tbsp olive oil
1 Tbsp fresh parsley ((finely chopped))
1 lb lean ground beef
1/2 lb lean ground pork
1/4 cup milk
1 egg
1/4 tsp ground nutmeg
1/8 tsp ground allspice
1/2 tsp garlic powder ((or granulated garlic))
1 tsp kosher salt
1/4 tsp ground black pepper
1 Tbsp olive oil
2 Tbsp butter
1 cup beef broth
1 cup cream of mushroom soup ((you can add 1 1/2 cups if you want more sauce))
1/4 cup sour cream
1 Tbsp Worcestershire sauce ((optional; plus more to taste))
1 Tbsp fresh parsley ((finely chopped))

Steps:

  • In a large non-stick skillet, roast the bread crumbs over medium to medium-high heat, stirring constantly. Bread crumbs are done when darker in color and smell toasty. That takes about 2-3 minutes. Transfer to a large mixing bowl.
  • In the same skillet, heat two tablespoons of olive oil, add the chopped onions and cook them until soft, about 3 minutes. Season with a pinch of salt and pepper and transfer to the bowl with the breadcrumbs.
  • Add the ground meat, milk, egg, parsley, salt and spices to the bread crumb and onion mixture. Mix well to combine.
  • From the meat mixture, make approximately 20 meatballs of even size. Set aside on a plate.
  • Heat oil and butter in a skillet over medium-high heat. Brown the meatballs on all sides. If you skillet is not big enough, you may wan to do it in two batches so that it's easier to turn the meatballs. Set aside on a plate.
  • Pour the broth to the skillet and bring a boil, stirring to scrape up the browned bits from the bottom of the skillet. If you used a non-stick pan, you probably won't have many of those, which is OK.
  • Stir in the cream of mushroom soup and the sour cream.
  • Return the meatballs back to the pan. Reduce heat to low, cover and cook for 5 minutes or until the meatballs are cooked through.
  • Serve the meatballs while they are hot with noodles, with the sauce poured over and a sprinkle of fresh parsley on top. If you don't want to serve immediately, keep the meatballs warm, tightly covered.

1 cup brown lentils, rinsed
water
8 ounces mushrooms (white or crimini), quartered
1/4 cup nutritional yeast
2 tablespoons ground flaxseed meal
1 tablespoon olive oil (or oil of choice)
1 medium onion, finely chopped
3/4 cup (175 mL) water
4 cloves garlic, minced or pressed
1 tablespoon dried Italian herbs or herbes de Provence
fine sea salt and freshly cracked pepper
2 tablespoons coconut flour

Steps:

  • In a medium saucepan, combine the lentils and enough water to cover by at least 1 inch (2.5 cm). Bring to a boil over high heat; reduce heat to low and simmer, uncovered, for 10 minutes (the lentils will be slightly undercooked). Drain and rinse under cool water. Place lentils in a food processor.
  • Add the mushroom pieces, nutritional yeast, and flaxseed meal to food processor with lentils. Pulse, using on/off pules, until chopped to a meaty texture (see photo), scraping sides and bottom of bowl several times so that the mixture is evenly chopped.
  • In a large skillet set over medium-high heat, heat the oil. Add the onion; cook and stir for 5 minutes. Add the 3/4 cup (175 L) water, lentil-mushroom mixture, garlic, Italian herbs, 1 teaspoon salt and 1/4 teaspoon pepper. Cook and stir for 5 to 6 minutes longer until slightly browned and almost all of the liquid has been absorbed. Note: The mixture should be thick and meaty, not wet. If it is still wet, cook several minutes longer (if they are too wet, they will not be very firm after baking).
  • Remove from heat and stir in the coconut flour until blended. Adjust salt and pepper to taste. Cool.
  • Preheat oven to 400F (200C). Line a large rimmed baking sheet with parchment paper.

400 grams (about 1 pound) tomatoes, blended or crushed
250 grams (about 8 ounces) mushrooms
150 grams (about 5 1/2 ounces) peas
2 bay leaves
Almonds, garlic and hazelnuts, crushed together with a mortar and pestle
2 kilograms (about 4 1/4 pounds) ground meat (pork and beef)
1 egg, beaten
3 slices bread, soaked in milk
Salt and freshly ground black pepper

All-purpose flour, for coating

Steps:

  • For the sauce: Heat some olive oil in a heavy pot. Add the onions and cook, stirring occasionally, until golden.
  • Add the stock, tomatoes, mushrooms, peas and bay leaves. Cook over low heat for 30 to 45 minutes.
  • For the meatballs: Meanwhile, Mix the meat together with the egg, soaked bread and some salt and pepper. Shape into meatballs and then roll in flour.
  • Fry the meatballs in some olive oil in a skillet, then transfer to the sauce.

1/3 cup onions, (chopped)
1 egg
1/2 cup bread crumbs
2 Tbsp Worcestershire sauce
1 tsp parsley
1 tsp pepper
1/2 tsp crushed red peppers
1 Tbsp butter
4 cups beef broth
3 Tbsp all purpose flour
2 cups onions, (chopped)
3 cloves garlic, (minced)
8 oz mushrooms, (sliced)
1 Tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
8 oz package egg noodles
1 tsp corn starch
1/8 cup water
2 Tbsp butter

Steps:

  • In a medium mixing bowl, mix ground beef, onions, egg, bread crumbs, Worcestershire sauce, parsley, crushed red peppers and pepper together. Make small size meatballs (should get about 24).
  • Add 1 tablespoon of butter to cast iron pan, or large frying pan, and after butter melts, add meatballs.
  • Heat over medium heat, cook until all sides are pan seared then remove from pan, place on a plate.
  • Drain any excess grease, if needed.
  • Melt 2 tablespoons of butter and sauté onions and garlic for 3-4 minutes scraping pan drippings.
  • Add mushrooms and continue cooking for 2 minutes.
  • Sprinkle flour over mushrooms and onions. Stir, cook for another 2 minutes.
  • Pour beef broth, Worcestershire sauce, salt and pepper into pan. Stir for a few minutes and place meatballs back into the pan. Stir.
  • Cover pan, cook for about 30 minutes, stirring occasionally. The gravy will also thicken up as it cools. And if the gravy seems to thin mix 1 tsp corn starch with 1/8 cup water, then add to pan, stir and let simmer for a few more minutes.
  • In a large saucepan, cook egg noodles according to package directions. Rinse and set aside.
  • Once noodles are cooked and meatballs are done, mix together and enjoy!

1/2 cup water or 1/2 cup beef broth

2 (10 ounce) cans cream of mushroom soup

Steps:

  • In a large bowl mix together all the dry ingredients(Onion Soup mix, bread crumbs & garlic salt) then add in the wet ingredients(water or beef broth, Worcestershire sauce & egg) mix together then add in the ground beef and incorporate all the ingredients together mix well.
  • Now make meatballs about the size of your palm(maybe about 2 inches round) place all the meatballs in a large skillet and cook at medium high heat until cooked all the way through and browned on all sides.
  • Once your meatballs are completely cooked keep the heat at medium high and then add in your water. The water will deglaze the bottom of your pan then add in the 2 cans of Cream of mushroom soup and mix it in with the water stirring until becomes a gravy. Turn the heat down to medium low and cover the skillet and cook until gravy is heated through.
  • Serve with Mashed potatoes spoon the gravy over the meatballs and the potatoes! ENJOY =).
