Steps:
- Mix: oats, flour, brown sugar, butter, baking soda and salt then press on bottom of 8x8 pan.
- Boil: dates, sugar and water until thick.
- Bake 20-30 minutes in 375 F oven.
- Cool before serving.

DATE AND PRUNE SQUARES
This is a really delicious variation of the old time favourite. I like a lot of filling so I increased the amount of fruit by one cup over the original recipe. You may also use non-dairy margarine to make this, as I did, and it will still turn out fine.

Steps:
- In a covered bowl, let the dates and prunes steep in the boiling water for about 10 minutes, to soften, then transfer to a saucepan.
- Add the sugar and let simmer for about 10 minutes, until thickened.
- Stir in the cinnamon and nutmeg and let cool.
- In a food processor, pulse together the oats, flour, sugar, salt and baking soda until the oats are chopped, 5 to 10 pulses.
- Pulse in the butter until crumbly, then pulse in the cold water until the mixture comes together.
- Press two-thirds into a greased 13" x 9" cake pan and spread with the date mixture.
- Mix the remaining oat mixture with the almonds, if using, and sprinkle over the date mixture, pressing lightly.
- Bake in a 350 degree F oven until light golden, 35 to 40 minutes.
- Let cool in the pan before cutting into squares.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat dates, 2/3 cup brown sugar, orange juice, and orange zest in a saucepan over low heat; cook, stirring occasionally, until dates have softened, absorbed the liquid, and mixture is like a paste, about 10 minutes. Remove from heat; stir in vanilla extract.
- Stir oats, flour, 1 cup brown sugar, baking soda, and salt together in a bowl; cut in butter with a knife or pastry blender until mixture resembles coarse crumbs.
- Lightly press 2/3 of the crumb mixture into the bottom of a 9x9-inch pan. Spread date mixture evenly over the crumb crust; sprinkle remaining crumbs evenly over the top of date mixture.
- Bake in the preheated oven until top is golden, about 30 minutes; cool on a wire rack for at least 1 hour before slicing into bars.

I will always remember how delicious these were and how everyone used to rave over them when Grandma would make them. I honestly dont remember how many these make but they are SO good, I just found the recipe and I am so excited!

Steps:
- Mix oats, flour, and baking soda.
- Add shortening.
- Prepare filling by mixing chopped dates, hot water, brown sugar, and vanilla.
- Put 1/2 dry mix in a baking pan.
- Add filling.
- Top with rest of dry mix.
- Bake 20 minutes at 350, or until well browned.

- Preheat oven to 350°F.
- Combine flour,baking powder,baking soda,and salt.
- Rub in butter until mixture is crumbly.
- Add sugar and oats.
- Mix well.
- Spread half of crumb mixture into 9"x9" greased baking pan,patting mixture until firm and smooth.
- Cook dates,with water,orange rind ,orange juice,lemon and sugar in a saucepan till smooth and thick.
- Cool mixture.
- Add to bottom layer of oat mixture.
- Add remaining oats to top of dates.
- Spread out evenly.
- Bake at 350 for 35-40 minutes or until lightly browned.
- Cool and cut into squares to your liking.
- Enjoy these great Date squares.
MUM'S DATE COOKIES AND SQUARES
These have to be my favourite baked treat. Unfortunately for me, the only time of year Mom made the squares was Christmas, but she made the cookies as a special treat for Dad a couple of times a year. I've never been able to replicate hers, but they are still really good :)

Steps:
- 1. Date Filling: Cook dates, water, orange rind and sugar in small saucepan (1 qt), over moderate heat until thick and smooth. Remove from heat, add juices mix well. Cool before spreading on cookie or oatmeal batter.
- 2. Date Cookies: Cream butter and lard, add sugar, mix until smooth, add vanilla and mix. Sift flour, baking powder and soda. Add to mixture alternately with milk. Add rolled oats a cup at a time, mix in. It will be stiff so you may want to use your hands to mix. Roll out on a floured surface, cut with 2-3" cookie cutter, place on greased cookie sheet and bake at 325°F for 8-10 minutes or until lightly golden. Cool and spread with date filling. Sandwich with another cookie on top.
- 3. Date Squares: Sift flour, baking powder, soda and salt. Rub in butter with tips of fingers. Add sugar and oatmeal. Mix well with fingers until all oatmeal is covered. It should be like a crumble. Spread one half of mixture crumbs into a greased, shallow pan, pat down to make it smooth. Cover with cooled date filling, spreading it evenly, then cover with the remaining crumbs. Pat to make smooth. Bake at 325°F for 30 to 35 minutes. Cut while still warm and allow to cool in the pan.
