Time 12h40m

Number Of Ingredients 14

2 tbsp millet
2 tbsp flax seed
2 tbsp chia seeds
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 tbsp sesame seeds
2 cups water
2 tsp yeast
3 tbsp molasses
2 tsp salt
1/2 cup rye flour
1/2 cup whole wheat flour
1 cup bread flour
3 1/2 cups all-purpose unbleached flour

Steps:

  • Place the millet, flax seed, chia seeds, sunflower seeds, pumpkin seeds, and sesame seeds in a pan. Heat the seeds over medium-high heat for about 3-5 minutes or until you can hear the seeds crackling. Make sure to mix occasionally to prevent the seeds from burning on one side.
  • Remove the seeds from the hot pan and place them into a small bowl. Pour 3/4 cup boiling water over the seeds or just enough to cover them. Then cover with plastic wrap and let the seeds cool.
  • In a large mixing bowl, combine 2 cups warm water (110 degrees Fahrenheit) with 3 tbsp molasses.
  • Then evenly sprinkle 2 tsp yeast on top of the water and molasses. Wait until the yeast becomes slightly frothy.
  • Sift 2 tsp salt, 1/2 cup rye flour, 1/2 whole wheat flour, 1 cup bread flour, and 3 1/2 cups all-purpose unbleached flour into a bowl. Then stir the dry ingredients so that all the different flours are well combined.
  • Add the dry ingredients to the wet and combine it with a wooden spoon until well incorporated.
  • . Place the soaked seeds into the dough. If the seeds have any extra water on top, strain before you add it to the dough.
  • Begin working the seeds into the dough with your hands. I found that stretching the dough helps incorporate the seeds best. Once you don't see any more patches of flour, stop kneading the dough.
  • Place the dough into a large bowl (no grease necessary). Sprinkle a small amount of flour on top and cover the dough with a kitchen towel. Then let it sit at room temperature for 1 hour and 30 minutes. (Keep between 68-70 degrees Fahrenheit).
  • 10. After 1 hour and 30 minutes go by, deflate the dough and shape is back into a ball with your hands. Cover with a kitchen towel again and let is sit at room temperature overnight or 8 hours.
  • 11. . After 8 hours have passed, deflate the dough once more and reshape it into a ball and place it back into the bowl. Cover with a kitchen towel and let it sit in a warm place for 2 hours or until it doubles in size. To speed up this step, turn your oven onto the proof cycle and place it in your oven. If you don't have a proof setting on your oven, turn your oven on to 300 degrees Fahrenheit for 2 minutes and turn it off. This should be just enough warmth to let the dough proof.
  • 12. Remove the proofed dough onto a floured surface and divide it into halves.
  • 13. Shape each piece of dough into squares, then fold in each corner of the square towards the center.
  • 14. Shape the dough into a smooth ball and place it into lightly floured 9-inch proofing baskets. Dust the dough with flour and cover with a kitchen towel. Let it proof in a warm place for 1 hour and 30 minutes or until it doubles in size.
  • 15. Place a cast iron or Dutch oven pot (with lid) into the oven and let it heat up to 500 degrees Fahrenheit.
  • 16. Once the oven reaches 500 degrees Fahrenheit remove the pot from the oven. Open the lid and dust the bottom of the pot with flour. Gently flip the proofed dough into the cast iron or Dutch oven pot.
  • 17. (optional) Using a sharp blade make a few decorative slits into the top of the dough.
  • 18. Using a spray bottle, lightly spray the bread dough with 3-4 sprays of warm water. Then place the hot lid on top and bake at 430 degrees Fahrenheit for 20 minutes.
  • Note: Most people place an oven safe bowl filled with water in the oven to achieve that nice bread crust; I find that lightly spraying the bread with warm water is an easier way to achieve the same results.
  • 19. Then remove the lid from the pot and bake for an additional 15-20 minutes at the same temperature.
  • 20. The moment the bread is baked, CAREFULLY remove the bread with a spatula and place it onto the cooling rack. Be very cautious as the cast iron will be extremely hot.

HEARTY MULTIGRAIN SEEDED BREAD

Hearty Multigrain Seeded Bread image

This is a very nice, light textured multigrain bread that uses many different grains and seeds and very easy to make if you have a food processor. I used my Ninja® with the plastic blade attachment.

Time 2h30m

1 tablespoon flax seeds
1 tablespoon millet
2 tablespoons hulled hemp seeds, divided
2 tablespoons salted roasted sunflower seeds, divided

HARVEST GRAIN BLEND FOR BREAD

Harvest Grain Blend for Bread image

I was inspired by the Harvest Grain Blend that King Arthur Flour sells, but being in Canada, the cost of shipping is prohibitive enough to make me come up with my own version. Add 1/2 to 2/3 cup to your favourite bread for extra crunch, flavour, and nutrition! I suggest replacing 2 tbsp of each cup of flour with the mixture as a starting point. I've also added some barley flakes and 7 grain cereal to my mix. Store in a tightly sealed container. Another way to use the mix is to make a "soaker", which you do by pouring 1 cup of hot water over 2/3 cup of the mix, and allowing it to soak overnight. Then add this to your bread mix, ensuring to subtract out the 1 cup of water and 2/3 cup of flour from the recipe you're working with.

Categories     Breads

Time 5m

Yield 12 loaves, 144 serving(s)

Number Of Ingredients 10

1 cup rye flakes
1 cup wheat flakes
1 cup whole oat groats (also known as oat berries)
1 cup millet
1 cup barley (barley flakes, not barley) (optional)
1 cup seven-grain cereal (optional)
1/2 cup flax seed
1/2 cup poppy seed
1/2 cup sesame seeds
1/2 cup sunflower seeds

Steps:

  • Mix all ingredients together. Store in tightly sealed container.
  • To use, substitute mix flour, using 2 tbsp per 1 cup of flour. To use soaked (which will make it less crunchy, and more chewy), add 1 cup hot water to 2/3 cup of the mix, and allow to sit, covered overnight. Ensure when adding to your flour mix to subtract the water and mix from your recipe's water and flour.

MULTIGRAIN AND SEED BREAD

Multigrain and Seed Bread image

Provided by Food Network

Categories     side-dish

Yield 2 loaves

Number Of Ingredients 22

1/2 ounce fresh yeast
16 ounces whole milk
1 3/4 pound bread flour
1/2 ounce salt
3 ounces honey
1 1/2 ounces vegetable shortening
1 egg
3 ounces bran
3 ounces raw sunflower seeds
1 1/2 ounces raw walnuts, chopped
3 ounces Multigrain Cereal Mix, soaked
Rye berries, whole and cracked
Barley
Triticale
Oats, whole berries (not rolled)
Millet
Brown rice
Flax seed
1 tablespoon vegetable oil
1 cup millet
2 cups boiling water
Fruit, milk, brown sugar to serve

Steps:

  • In a saucepan heat enough water to cover the seeds, to a boil. Pour over seeds and let sit in the refrigerator overnight.
  • Combine yeast and milk into a Kitchen Aid bowl, or other dough mixing bowl. Add all other ingredients, starting with the bread flour, then everything else on top. Mix with dough hook on low. Develop gluten with machine on medium for approximately 13 to 15 minutes until dough is smooth and springs back when touched.
  • Turn dough out into a lightly oiled bowl, cover with a kitchen towel or plastic wrap and allow to rise for 1 1/2 hours or until doubled in bulk.
  • Punch down dough and let relax for 10 to 15 minutes. Divide it into two pieces. Form pieces into loaf shapes. Place in loaf pans. Allow to rise for another 45 minutes to 1 hour.
  • Eggwash each loaf and with a sharp knife score top. Bake in a 350 degree F oven until golden brown and bottom when rapped sounds hollow; approximately 30 to 40 minutes.
  • In a large saute pan, heat oil. Add 1 cup millet and cook, stirring until the millet begins to toast and become brown. Add 2 cups boiling water, cover and simmer 30 minutes or until liquid has been absorbed. Let stand for five minutes then serve with milk, fruit of your choice and brown sugar.

MULTIGRAIN BREAD

Multigrain Bread image

This dough can rise in Brotformen, German baskets that mold the loaves. The grains are available at health food stores.

Provided by Martha Stewart

Yield Makes 2 loaves

Number Of Ingredients 15

1/4 cup plus 2 tablespoons whole-wheat berries
2 1/2 cups warm water (about 110 degrees)
1 1/2 teaspoons active dry yeast
2 tablespoons honey
1/2 cup sponge, pulled into small pieces
4 1/2 cups bread flour
1/4 cup plus 2 tablespoons white, light, or medium rye flour
3/4 cup whole-wheat bread flour
1 cup rye meal
1/4 cup plus 2 tablespoons cracked wheat
1/2 cup millet
1/2 cup flax seeds
4 teaspoons salt
1/2 cup raw, hulled sunflower seeds
Coarse cornmeal, for dusting

Steps:

  • Bring a small saucepan of water to a boil. Add wheat berries and gently boil for 20 minutes. Drain and let cool. In an electric mixer, combine 1/4 cup water, yeast, and honey. Let stand until yeast is creamy, about 10 minutes. Add sponge and mix on low speed until combined, about 1 minute. Add flours, rye meal, cracked wheat, millet, flax, salt, and remaining water; mix, using the paddle, on low speed for 2 minutes. Change to dough hook and mix on medium-low speed for 6 minutes. Add sunflower seeds and cooked wheat berries; mix for 1 minute. Pull dough down from the hook and press the dough into the seeds at the bottom of bowl. Continue to mix until the seeds are completely incorporated and the dough is wet and tacky, 2 minutes. Alternatively, knead the dough by hand, 15 to 20 minutes.
  • Transfer to a lightly floured surface and knead by hand, 4 or 5 turns, into a bail. Place the dough, smooth side up, in a lightly oiled bowl and cover with plastic wrap. Let rise in a warm place until increased to 1 1/2 times the size, about 2 1/2 hours.
  • Punch down dough and fold it over onto itself 4 or 5 times. Turn folded side face down in the bowl. Cover and let rise in a warm place until doubled in bulk, 1 hour.
  • Liberally sprinkle 2 braided Brotformen, if using, with flour. Turn dough onto a lightly floured surface and cut in half. Cover one piece of dough loosely with oiled plastic wrap. On an unfloured surface, knead the other piece of dough into a ball. Cup your hands around it and move it on the work surface in small, circular motions, until top is rounded and bottom is smooth.
  • Place the shaped loaf, bottom up, in a Brotform. Cover loosely with lightly oiled plastic wrap and then with a towel. Repeat shaping process with the second piece of dough. (If you're not using Brotformen, shape dough in the same way and place on parchment dusted with coarse cornmeal; coat the bottom and 1 inch up the sides with corn meal. Cover loosely with oiled plastic wrap and then with a clean towel.) Let loaves rise in a warm place until doubled in bulk, about 1 hour. Thirty minutes before this final rise is completed, place a baking stone, if using, in lower third of oven and an empty baking pan on the lowest shelf. Heat oven to 450 degrees.
  • Transfer one loaf from a Brotform to a baker's peel or baking sheet sprinkled with coarse cornmeal. Using a razor blade or serrated knife, slash the top 1/4 to 1/2 inch deep. Slide onto the baking stone. Repeat with second loaf. If not using a stone, slash tops and bake on a cornmeal-dusted baking sheet. Quickly pour 2 cups of very hot water into the heated baking pan to create steam, and close the oven door. Bake until dark golden brown and hollow sounding when tapped on the bottom, about 25 to 30 minutes. If the bread darkens too quickly, lower temperature to 425 degrees after 15 minutes of the baking time. Let bread cool on a wire rack for at least 30 minutes before slicing.

SOAKED MULTIGRAIN SOURDOUGH BREAD

Soaked Multigrain Sourdough Bread image

Yet another different multigrain sourdough recipe that I've come up with! In this recipe, you soak the grains and seeds overnight in the proofed starter, then retard the dough for 8 hours to improve the sourdough flavour. It is dense, grainy, and delicious! Recipe #384672 is a mixture that is my mock up of the product by the same name on King Arthur's website. If you don't want to make the entire recipe, you may add 2 tbsp each of rye flakes, wheat flakes, whole oat groats, millet, seven-grain cereal, flax seeds, and sunflower seeds, plus 1 tbsp each of poppy and sesame seeds.

Provided by Katzen

Categories     Sourdough Breads

Time P1DT40m

Yield 1 Loaf, 12 serving(s)

Number Of Ingredients 10

2 cups proofed sourdough starter
3/4 cup harvest grain blend for bread (see above)
2 tablespoons butter or 2 tablespoons olive oil
1/2 cup milk
1 teaspoon salt
1/4 cup honey
2 cups multi-grain flour
1 cup whole wheat flour
1/2-1 cup all-purpose flour (as needed)
harvest grain blend for bread, for sprinkling on top of loaf, if desired

Steps:

  • Mix proofed sourdough starter and Harvest Grain Blend, cover, and let soak 2-8 hours.
  • Combine all ingredients, adding additional flour if necessary. (This can be done in a breadmaker, set to the dough setting.).
  • Allow dough to rest 30 mintues. Fold, like a letter, making three folds, turning the dough 90 degrees in between turns.
  • Place dough in a lightly oiled bowl, turning to coat; cover and place in fridge for 6-8 hours. **You may omit this step if time does not permit it.**.
  • Shape dough into a loaf, and place in greased (PAM'd) loaf pan, or on a cookie sheet sprinkled with cornmeal.
  • Allow to rise until doubled in bulk, approximately 3 hours. If using more of the grain blend for topping, spray loaf with water, and sprinkle topping on, adding a even but light layer. Slash 2-3 1/2" deep slashes on top of loaf.
  • Bake at 375 degrees F for 40 to 50 minutes. Remove from pan and cool on wire rack. The top can be brushed with butter for a soft crust, if desired.
  • NOTE: To proof your starter, feed it with equal parts of flour and lukewarm water, then let it sit overnight or up to 12 hours, covered. This is what develops the characteristic sour flavor and the longer the proof, the sourer it will be. If you start with 1 cup of starter and feed it 1 cup each of water and flour, you should have enough to make your bread and save the rest to start your next batch.

WHAT’S THE DIFFERENCE BETWEEN MULTIGRAIN AND WHOLE GRAIN?
Multigrain simply means that more than one grain was used in making the product at hand. So if you’re holding a cracker box that claims it’s “multigrain,” perhaps there is some whole wheat flour and a little barley flour.; Whole grain, on the other hand, means that the entire grain (the bran, germ and endosperm) is used in the product — although how much takes a bit of …
