- Add the butter to a pot over medium heat and let it melt. Add the chicken and cook, stirring occasionally, until golden. Add the garlic and onions and cook, stirring, for a couple of minutes. Sprinkle the flour over the chicken and onion mixture and stir to combine. Stir in the curry powder and cook for 1 minute, stirring constantly. Pour in the chicken broth and stir to combine; cook for another minute to thicken. Add the half-and-half, brown sugar and some salt and pepper and cook for 5 more minutes.
- Meanwhile, peel and dice the apple. Add the apples to the pot and cook for another 5 minutes. Taste, adjust the seasonings and serve!

- Make mayonnaise: combine all mayonnaise ingredients in a small bowl; stir well to blend; cover and refrigerate until ready to use.
- Prepare a med-hot fire in a charcoal grill with a cover; or preheat a gas grill to med-high.
- Make the patties: place the almonds in a small fire-proof skillet on the grill; stir frequently until lightly golden brown, 5-10 minutes; set aside to cool.
- In a bowl, combine the chicken, egg whites, green onion, and apple; season with salt and pepper; mix well.
- Divide mixture into 6 equal portions; shape each portion into patties to fit the rolls.
- Finely chop the toasted almonds and combine with the bread crumbs and curry powder in a shallow bowl/pie plate, stirring well.
- Coat both sides of the patties with the almond mixture, pressing gently to adhere.
- Brush the grill rack with vegetable oil; place the patties on the grill rack, cover, and cook, turning once, just until the juices run clear when the patties are pierced in the center (about 4 minutes on each side).
- During the last few minutes of cooking, place the rolls, cut side down, on the outer edges of the rack to toast lightly.
- Assemble burgers: decoratively fan several spinach leaves on the bottom roll; top each with a patty and a generous dollop of the mayonnaise; add the roll tops and serve.

MULLIGATAWNY
Mulligatawny means "pepper water" in Tamil. It is a traditional soup from southern India, brought to Europe by the British. This vivid version includes chicken broth, coconut milk, lentils, and plenty of spices. This recipe has been adapted from "Curries & Bugles: A Memoir & Cookbook of the British Raj," by Jennifer Berman (HarperCollins; 1990).

- Process garlic, ginger, turmeric, coriander, cumin, cayenne, bay leaf, and oil in a food processor to form a paste.
- Melt ghee or butter in a saucepan over medium heat. Add onion, and cook until soft, 4 to 5 minutes. Add spice paste, and cook, stirring, 3 minutes.
- Add coconut milk, and simmer 5 minutes. Stir in stock, masoor dal or split peas, and cilantro, then cover and bring to a boil. Reduce heat, and simmer 15 minutes. Add rice, and cook 15 minutes.
- Pour through a fine sieve into a clean saucepan, pressing on solids to extract as much liquid as possible. Stir in tamarind concentrate, and bring to a simmer. Serve sprinkled with garam masala.
EASY TERIYAKI CHICKEN BURGERS
A super simple way to make a chicken burger that zings with flavor! Sometimes it's referred to as "hawaiian-style." This has been my husband's favorite for a long time, especially at Red Robin. That got too expensive after a while so I thought I'd try making it at home instead. He loves it! These burgers have been a big hit whenever we have friends over for a barbeque.

- Place chicken breasts in glass dish and smother with teriyaki sauce; turn breasts over to cover thoroughly.
- Marinate as long as possible, preferably in the fridge overnight.
- 15-30 minutes if you're in a hurry.
- On stovetop or grill, cook chicken about 12 to 14 minutes.
- (7-8 minutes in a George Foreman grill).
- Chicken breasts (bone-in and boneless) should be cooked to an internal temperature of 170 F.
- Exact grilling times will depend on the heat of your grill/pan as well as on the thickness of the chicken breast.
- Chicken is done if, when pierced, the juices run clear or the breast is no longer pink inside.
- Spread mayonnaise on each bun, top& bottom.
- Place each cooked chicken breast on a bun and top with a pineapple slice.
- Serve alongside a summer salad or veggies and don't forget a tall glass of iced tea!

- MIX chicken, panko, egg, onions, cilantro, garlic, chili sauce and salt in a large bowl.
- With oiled hands, form into 4 patties.
- Mix together teriyaki glaze and honey in a small bowl.
- In large nonstick fry pan over medium high heat, place 1 tablespoon oil.
- Add chicken and cook, turning and brushing with teriyaki glaze, about 10 minutes or until done.
- PLACE burgers on toasted buns and top with lettuce, cucumber and Ginger Mayonnaise (recipe follows).
- Garnish with additional cilantro and cucumber slices.
- Ginger Mayonnaise: MIX 1/2 cup mayonnaise, 2 teaspoons sweet pickle relish, 2 teaspoons minced fresh ginger, 2 teaspoons lime juice, 1 clove garlic, minced and 1/4 teaspoon salt in a small bowl.
