DATE BALLS
This was one of my mother's recipes for Christmas cookies. These moist and crisp cookies are fun and easy to make. These cookies get better over time when the flavors blend together. Enjoy.

Steps:
- Melt butter and sugar carefully.
- Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.
- Add milk and salt into well beaten eggs and stir into hot date mixture.
- Boil mixture 2 minutes.
- Add vanilla and nuts.
- Let cool, then add Rice Crispies and stir.
- Butter hands, and shape into well rounded tablespoon size balls and roll in coconut.
- Store in air-tight container.

COCONUT DATE BALLS
Coconut date balls are little balls of nutrition made with dates and nuts and then coated in shredded coconut - an easy-to-make sweet & healthy vegan snack!

Steps:
- Pit the medjool dates and soak them in warm water for 10 minutes until they soften
- Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
- Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
- Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

RICE KRISPIES DATE BALLS (AKA ANGEL COOKIES)
Another recipe from my Aunt's recipe clippings. This one also came from the Sept 19, 1969 Chicago Tribune originally. The clipping is crinkled with old yellow tape holding it together to make sure the recipes stayed intact. :) These are not like the typical angel cookies at all - they are little balls of dates, coconut, and Rice Krispies rolled in powdered. Don't use the prechopped dates as they aren't sticky enough - buy the whole pitted dates and chop them yourself. Also be sure to use the canned coconut..the kind that comes in bags is too dry and you will have a hard time getting the cookies to roll up otherwise.

- Add cereal and coconut, stirring to combine.

- In heavy-bottomed,lg.
- saucepan or pot,melt butter.
- Stir in brown sugar and dates.
- Cook til sugar is melted.
- Remove from heat and QUICKLY stir in egg well.
- Return to med.
- heat, stirring constantly, til boiling.
- Boil and stir 1 minute.
- Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
- Roll into balls, about 1" or so, roll in powdered sugar to coat.
- Store airtight.
- (Can chill if desired, but serve room temp.).

DATE NUT BALLS
My granddaughter, Casey, will not let a Christmas go by without me making these for her. The whole family is crazy over these. When Casey was in elementry & middle school, she would always ask me to make an extra batch so she could take some to her teachers.

Steps:
- 1. In a large pot, melt butter on med-low heat. Add brown sugar & mix well. Add dates and mix well. Add coconut and mix well. Cook this mixture for 6 minutes, stirring constantly.
- 2. Remove from heat and add pecans and mix well. Add rice krispies, one cup at a time, mixing well after each addition.
- 3. Once this is combined well, put powdered sugar into a large bowl that has a tight fitting lid. Roll mixture into small balls (slightly larger than a large marble or a big grape...bite-size) then drop into *powdered sugar.
- 4. Put lid on bowl and gently shake & turn bowl to coat the date balls. Remove balls, shaking off excess sugar & store in air tight container.
- 5. *NOTE: Some people roll them in coconut instead of powdered sugar. It's your choice.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

MRS. KERN'S DATE BALLS
As a child, my parents traveled quite a bit and a retired couple (Mr. and Mrs. Kern) would stay with us kids. I'm sure keeping 4 kids busy wasn't easy, and Mrs. Kern would make these no-bake treats for us. It's a simple-to-prepare recipe, one that Mrs. Kern allowed us to help make - we were in charge of rolling the date balls in coconut.

- Melt butter in a a saucepan. Add sugar, dates, and egg. Cook 10 minutes over low-medium heat, stirring constantly.
- Remove from heat; add vanilla. Cool 5 minutes.
- Put rice krispies in a large bowl, and pour butter/sugar mixture over cereal. Cool slightly (enough so you don't burn your fingers shaping shaping cookies).
- Shape into 1" balls or small logs. Roll in coconut, powdered sugar, or nuts.
- Place on waxed paper lined cookie sheet. Refrigerate until firm.
