Tomato Mozzarella Egg White Omelet image

A quick and easy breakfast made with tomatoes, egg whites, mozzarella, and parmesan cheese. Lots of flavor, low in carbs and takes just minutes to make.

1/2 tsp olive oil
1/4 cup sliced grape tomatoes
salt and pepper (to taste)
1/3 cup egg whites
1/4 cup shredded part skim mozzarella
1 tsp grated Parmesan cheese
fresh chopped herbs for garnish (basil, chives or parsley)

Steps:

  • Heat a small non-stick skillet over medium heat.
  • When hot, add the oil and tomatoes, season with salt and pepper.
  • Cook about 1 minute, then add egg whites.
  • Top with shredded mozzarella and parmesan.
  • Cover and reduce heat to low.
  • Cook until the eggs are completely set.
  • Top with fresh herbs if desired.

I made this omelette for my Grandmother today and she loved it. I'm making her healthier breakfasts daily so she can steer clear of the sugar cereals. This doesn't take much longer than cereal, either!

Number Of Ingredients 6

2 egg whites
1/8 cup skim milk
1/4 cup part-skim mozzarella cheese
1 teaspoon olive oil
salt (optional)
pepper (optional)

Steps:

  • Whisk together egg whites and skim milk in a medium bowl. Add salt or pepper to mixture if desired.
  • Pour olive oil onto non-stick skillet and put on medium heat for a few seconds.
  • Pour egg mixture into skillet and allow approximately 4 minutes to cook. Once the egg mixture is off white and there is no liquid in the center, add cheese to the top and allow it to melt.
  • Once the cheese is melted, flip one side of the omelette to the other side, and voila!
  • Serve with toast, fruit, yogurt, or as-is.

2 slices mozzarella cheese
butter
salt and pepper
3 eggs
1 round roll

Steps:

  • First use the butter to grease the pan.
  • Crack three eggs into a bowl (no need to use yolk if you don't like it, but that's me).
  • Pour the eggs onto the pan and set the stove for about medium heat.
  • Add pieces of mozzarella cheese to the egg and some salt and pepper.
  • Fry the egg like a normal easy over egg.
  • After the egg is done butter a hard roll and place pieces of mozzarella on the roll then put the egg in the roll and you're done! Enjoy!

  • Combine salt, pepper, eggs and milk in a small bowl. Stir with a whisk until just blended (do not overbeat).
  • Heat oil in a large skillet over medium-high heat. Add mustard seeds and turmeric; cook 30 seconds or until seeds pop, stirring frequently. Add onions; cook 30 seconds or until soft, stirring frequently. Add tomato, bell pepper and spinach; cook 1 minute or until very soft, stirring frequently.
  • Lower heat to medium. Pour egg mixture into pan; spread evenly. Cook until edges begin to set (about 2 minutes). Slide front edge of spatula between edge of omelet and pan. Gently lift edge of omelet, tilting pan to allow some uncooked egg mixture to come in contact with pan. Repeat procedure on the opposite edge.
  • Continue cooking until center is just set (about 2 minutes). Loosen omelet with a spatula, and fold in half. Carefully slide omelet onto a plate. Enjoy!
